½ cup butter
¾ cup brown sugar
1 teaspoon cinnamon
1 teaspoon vanilla extract
5 bananas, sliced
8 eggs
¾ cup brown sugar
1 teaspoon cinnamon
¼ teaspoon nutmeg
2 teaspoons vanilla extract
1 cup heavy cream
1 cup milk
1 loaf french bread, cut into 1 inch (2 1/2 cm) cubes
powdered sugar, to taste

Steps:

  • Preheat oven to 350˚F (180˚C).
  • Over medium-high heat, melt butter and stir together brown sugar, cinnamon, and vanilla. Bring to a simmer and add the sliced bananas.
  • In a large bowl, whisk 8 eggs, brown sugar, cinnamon, nutmeg, vanilla, heavy cream, and milk.
  • Add the cubes of French bread, and gently stir until the bread has soaked up all the liquid.
  • Pour the bread into a greased 9x13 inch (23x33 cm) baking dish. Top with the banana and sugar glaze.
  • Bake for 45-50 minutes until golden brown and slightly crispy around the edges and top. (Times and temperatures may vary based on oven).
  • Serve with powdered sugar on top.

4 tablespoons butter
1/4 cup light brown sugar
Pinch ground cinnamon
3 ripe bananas, peeled, cut into 1/2-inch-thick rounds
4 ounces cream cheese, room temperature
1 large unsliced loaf French bread, bread cut into 8 slices
4 large eggs
1/2 cup heavy cream
1 1/2 cups whole milk
2 teaspoons ground cinnamon
1 teaspoon rum extract
Nonstick cooking spray
Confectioners' sugar, for garnish
Maple syrup, for garnish

Steps:

  • Preheat oven to 350 degrees F.
  • Melt butter in a heavy bottomed skillet over medium heat. Once butter is melted add the brown sugar and pinch of cinnamon. Stir with a wooden spoon until the sugar melts into the butter and becomes a sauce. Add bananas and toss together. Let cook until the bananas are soft and incorporated into the sauce. Remove to a bowl and let cool completely. Once cool, add cream cheese and mash with a wooden spoon.
  • Using a paring knife, cut a 2-inch-long slits in 1 side of each bread slice, cutting 3/4 of way through bread and creating pocket that leaves 3 sides of bread intact. Divide banana mixture equally among the bread pockets.
  • In a large bowl, add eggs, heavy cream, milk, cinnamon and rum and whisk to combine. Pour mixture into a 13 by 9-inch casserole dish. Put the bread into the egg mixture and let soak for 3 minutes, turning occasionally. Remove the bread from egg mixture, using a spatula, letting the excess drain off.
  • Spray a wire rack with nonstick spray and put the rack on a baking sheet. Put the bread on the rack and transfer to the oven.
  • Bake the French toast until it is golden brown and filling is hot, about 25 minutes. Transfer the toast on a serving platter and garnish with confectioners' sugar and maple syrup.

1 medium ripe banana, sliced
1/4 cup low-fat milk
1 large egg

2 tablespoons maple syrup, warmed
6 fresh strawberries, sliced

Steps:

  • Spread the cream cheese on all 4 slices of bread. Place the banana slices over the 2 slices of bread, and top each with the remaining bread.
  • Combine the milk, eggs and vanilla in a small shallow bowl; beat lightly with a fork.
  • Melt the butter in a large non-stick skillet over medium heat.
  • Briefly dip the sandwiches, one at a time, into the egg mixture.
  • Place both sandwiches in the skillet. Cook until golden brown, 3-4 minutes on each side.

I tried something like this in a restaurant on my honeymoon and this is my attempt at duplication. I love it. You can vary the filling if you like, but I love bananas. This is a great "impress the company" dish or Christmas morning dish.

2 large bananas, thinly sliced
1 loaf cinnamon bread or 1 loaf other sweet bread, unsliced
4 eggs
1 cup whole milk
2 tablespoons Grand Marnier or 2 tablespoons Cointreau liqueur
2 tablespoons light brown sugar
1/2 teaspoon cinnamon
1 pinch salt
2 tablespoons unsalted butter

Steps:

  • Cut the bread into (12) 2-inch thick slices.
  • Cut a pocket in each bread slice, being careful not to cut through the other 3 sides.
  • Put as many banana slices as the pocket can hold into each slice.
  • Mix the remaining ingredients except for the butter in a shallow bowl.
  • Dip the bread pockets into the egg and let soak for 2 minutes per side.
  • Heat a griddle over high heat.
  • Melt a bit of the butter on the griddle, then add the french toast, working in batches.
  • Cook until golden brown on one side, then turn and brown the other.
  • Keep warm in the oven until the rest of the toast is cooked, adding more butter to the griddle if needed.
  • Serve 2 pieces per person.
  • Serve with warmed maple syrup and fresh butter.

2 ripe bananas
8 tablespoons creamy peanut butter
honey, for drizzling
4 large eggs
1/4 cup heavy cream
1 tablespoon pure vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon ground nutmeg
1 dash salt

Steps:

  • Lay bread on counter and spread 1 tbl peanut butter on each slice.
  • Peel and slice enough bananas to cover 4 slices of bread.
  • Drizzle small amount of honey on remaining 4 slices of bread.
  • Place honey drizzled slices (honey side down) on top of banana slices, making 4 sandwiches.
  • Beat eggs, cream, vanilla, cinnamon, nutmeg and salt with a whisk in a medium bowl.
