Steps:

  • Combine all the ingredients in a bowl and mix well.
  • Store any unused rub in a sealed container in the freezer.

1-1/3 cups packed brown sugar
2 teaspoons each garlic powder, onion powder and smoked paprika
1-1/4 teaspoons each ground cumin, coarsely ground pepper and cayenne pepper
12 bone-in country-style pork ribs (about 7 pounds)
SAUCE:
2 tablespoons canola oil
1 medium onion, finely chopped
1 cup tomato sauce
1/3 cup dark brown sugar
1/4 cup ketchup
1/4 cup molasses
1 tablespoon apple cider vinegar
2 teaspoons Worcestershire sauce
1 teaspoon salt
1 teaspoon ground mustard
1/4 teaspoon smoked paprika
1/4 teaspoon cayenne pepper

Steps:

  • In a small bowl, mix brown sugar and seasonings; sprinkle over ribs. Refrigerate, covered, at least 1 hour., For sauce, in a large saucepan, heat oil over medium heat. Add onion; cook and stir until tender, 5-6 minutes. Stir in remaining ingredients; bring to a boil, stirring occasionally. Remove from heat., Wrap ribs in a large piece of heavy-duty foil; seal edges of foil. Grill, covered, over indirect medium heat until ribs are tender, 1-1/4 to 1-3/4 hours., Carefully remove ribs from foil. Place ribs over direct medium heat; baste with some of the sauce. Grill, covered, until browned, 8-10 minutes, turning and basting occasionally with remaining sauce.

These are the best tasting beef ribs I have ever had in my entire life. This recipe was given to me by a dear friend, which was passed on to her in her family. I usually double this recipe when I make it. It's great in the oven or in the crockpot! I like to use the boneless beef spare ribs.

2 lbs boneless ribs
1 cup dark brown sugar
1/3 cup ketchup
3/4 cup chili sauce
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1/4 cup whiskey
2 tablespoons ground mustard
1 tablespoon instant minced onion
pepper

Steps:

  • Combine all ingredients in a large pot and bring to a slow boil. Simmer for 45 minutes.
  • Double wrap ribs in aluminum foil, place in a 9x13-inch baking dish and bake for 1 1/2 hours in a 350°F oven.
  • Remove ribs from the aluminum foil.
  • Place ribs and sauce in a roaster and bake uncovered for 45 minutes in a 350°F oven.

1 tablespoon mustard seeds
3 tablespoons paprika
2 tablespoons light brown sugar
2 tablespoons kosher salt
1 tablespoon granulated garlic
1 teaspoon cayenne
1 (10 -12 lb) boneless beef rib roast
1/4 cup Worcestershire sauce

Steps:

  • Make the rub: using a spice grinder or mortar/pestle, crush the black peppercorns and mustard seeds.
  • Transfer to a small bowl with the remaining rub ingredients.
  • Trim excess fat from roast; brush the meat with Worcestershire sauce and coat evenly with the rub.
  • Cover with plastic wrap and refrigerate 8-12 hours.
  • Let roast stand at room temperature for 30-40 minutes before grilling.
  • Grill the roast over indirect medium heat, keeping the grill's temerpature between 350° and 375°, until the internal temperature reaches 135° for medium rare, about 2 hours.
  • Remove roast from the grill, loosely cover with foil, and let rest for 20-30 minutes.
  • The internal temperature will rise 5-10° during this time.
  • Cut into ½-inch slices; serve warm.
