KAMISH BREAD (TRIPLE BATCH)
aka Jewish Biscotti or Mandelbroit. This is my great grandmother's recipe. I've never actually made it, only eaten it, so I'm totally guessing on the cook and prep times.

Steps:
- Mix together oil and sugar until combined, then add eggs one at a time. After the eggs are combined, add vanilla.
- Sift together all the dry ingredients and add them slowly to the sugar/egg mixture.Once the dough is smooth and sticky, pour the chocolate chips in and mix.
- Cover the dough with plastic wrap and place it in the refrigerator for a few hours (at least 2) or overnight.
- Lightly oil your hands and form 4 long rows with the dough onto an ungreased cookie sheet (I line the cookie sheet with parchment paper for easy cleanup). Each strip of dough should be 3-4 inches wide. They will spread out a lot during cooking, so make sure you leave enough space between the rows.
- Bake at 350 for 25 minutes. While mandel bread is baking, in a flat shallow dish, combine ¾ cup of sugar with enough cinnamon to turn the mixture light brown. It's best to eyeball this - it shouldn't be too brown or too white.
- Take the mandel bread out and turn the oven down to 250 degrees F. Slice the mandel bread into biscotti sized pieces.
- Roll each cookie into the cinnamon sugar mixture. Put the pieces back on the cookie sheet on their sides.
- Bake for another 15 minutes until they've achieved the texture you desire. The longer they stay in the oven, the crisper they will be. If the slices are big or wide, you might need longer than 15 minutes. Keep an eye on it and don't over-bake, as this cookie tends to dry out quickly. Store in an airtight container.

- To mix the dough by hand: Combine water, milk, and the fat of your choice in a saucepan and heat until lukewarm. Pour the warm liquids into the mixing bowl, and add honey or sugar, salt, yeast, and 2 cups of the flour.
- To knead the dough: Fold the far edge of the dough back over on itself toward you. Press into the dough, pushing away with the heels of your hands. Repeat in a continuous rhythm.
- To make the dough in a mixer: Dissolve the yeast and sugar or honey in lukewarm liquid in the bowl of your mixer, then add 7 cups of the flour, the fat, and the salt.
- To make the dough in a food processor: Check the capacity of your food processor, and divide the recipe if necessary. Using the plastic dough blade, dissolve the yeast and sugar or honey in lukewarm liquid in the bowl of your processor.
- Once the dough is fully kneaded, place it in a lightly greased bowl, turning it over to grease the entire surface. Cover the bowl and set it in a warm place.
- Turn the dough out and divide it into six pieces. Round each piece into a ball, and place two in each bread pan, side by side. Cover lightly and let rise until puffy, about 45 minutes.
- Uncover the bread, place it in the oven, and bake for about 35 minutes, or until the loaves are golden, smell fragrant, and have an internal temperature of 190°F.
