FALL KALE AND SAUSAGE PASTA BAKE



Fall Kale and Sausage Pasta Bake image

Nonstick cooking spray, for the baking dish
1 pound rigatoni
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
1 yellow onion, diced
4 cloves garlic, minced
Pinch crushed red pepper flakes, or more as desired
1 pound turkey or pork Italian sausage, casings removed
2 cups heavy cream
2 bunches Tuscan kale, stemmed and roughly chopped
Pinch freshly grated nutmeg
1 pound fresh whole-milk ricotta
1/2 cup grated fontina
1/2 cup grated part-skim mozzarella
1/4 cup grated Parmesan

Steps:

  • Preheat the broiler. Spray a 9-by-13-inch ceramic or metal baking dish with nonstick cooking spray.
  • Cook the pasta in a large pot of salted, boiling water until about 2 minutes less than package instructions. Reserve 1 1/2 cups pasta cooking water. Drain and set aside.
  • Meanwhile, heat a large Dutch oven or heavy saucepan over medium-high heat. Heat the olive oil in the pan, then add the onion and cook, stirring occasionally, until softened and starting to brown at the edges, 4 to 5 minutes. Add the garlic and red pepper flakes and cook until the garlic is very aromatic, another minute. Add the sausage and cook, crumbling into small chunks with the back of a wooden spoon, until browned all over, 4 to 5 minutes. Add 1 cup pasta water to the pan and scrape up any of the browned bits from the bottom of the pan. Pour in the heavy cream and cook, stirring frequently, until it comes to a simmer. Stir in the kale, then cover the pan and cook, stirring occasionally, until the kale is wilted and tender and the heavy cream has thickened, another 4 to 5 minutes. Sprinkle the nutmeg and about 1 teaspoon each of salt and pepper on the kale (taste here, as your sausage might have different seasonings). Remove from the heat and stir in the ricotta until just combined, followed by 1/4 cup each of the fontina and mozzarella. Add the pasta and stir until it is coated in sauce and the cheese starts to melt, adding pasta water if the mixture seems too thick. Taste and season with a little more salt, pepper and red pepper flakes if desired.
  • Transfer the mixture to the prepared baking dish and top it with the remaining 1/4 cup fontina, 1/4 cup mozzarella and the Parmesan. Broil the pasta until the cheese is brown and bubbling, about 5 minutes. Serve immediately.

A north German specialty, Gruenkohl (kale) and sausage was something with which my mother-in-law warmed our hearts and tummies in the winter. The north Germans serve this with boiled potatoes.

1 pound kale, stemmed and chopped
3 slices bacon, chopped
½ onion, chopped
2 cups water, or as needed to cover
2 teaspoons beef bouillon granules
¼ teaspoon ground nutmeg
1 tablespoon prepared mustard
½ pound thickly sliced cooked ham, or to taste
4 links kielbasa sausage
salt and ground black pepper to taste

Steps:

  • Bring a pot of water to a boil, and stir in the kale; boil for 1 minute, and remove from the water with a slotted spoon. Set the blanched kale aside.
  • Place bacon into a large skillet over medium heat, and cook until browned, stirring frequently, about 8 minutes. Stir in the onion, and cook until translucent, about 5 minutes. Stir in the blanched kale, and cook until kale is bright green and starting to turn tender, about 4 minutes. Pour in enough water to cover, and bring the mixture to a boil. Reduce heat to a simmer, and stir in the beef bouillon granules and nutmeg. Simmer the kale until tender, about 30 minutes.
  • Stir the mustard into the kale, and lay the ham slices and sausage links on top. Simmer the kale, ham, and sausages until the sausages are cooked through, about 35 more minutes. Season to taste with salt and black pepper before serving.

KALE WITH SWEET SAUSAGE

In this comforting winter side dish, kale is topped with spicy-sweet Italian sausage.

1 sweet Italian sausage (about 3 ounces), removed from casing and crumbled
2 bunches kale (about 1 1/2 pounds total), tough stems and center ribs discarded, leaves torn into pieces and washed
2 to 3 teaspoons red-wine vinegar
Coarse salt and ground pepper

Steps:

  • In a large heavy-bottomed pan with a tight-fitting lid, cook sausage over medium-high heat, stirring occasionally, until browned, 4 to 6 minutes; using a slotted spoon, transfer to a paper-towel-lined plate to drain. Set aside.
  • Add kale to pan in two or three batches, waiting for one batch to wilt before adding the next. Cook over medium until bright green, about 1 minute. Add 1/2 cup water. Reduce heat to medium-low; cover, and simmer until tender, 15 to 20 minutes, stirring once or twice. Uncover; cook until most of the liquid has evaporated. Stir in vinegar; season with salt and pepper. Serve topped with sausage.

KALE AND SAUSAGE SAUTE

I always wanted to find a great way to prepare kale and found a great salad in the deli of a local grocery store. At first this was an attempt to re-create this salad but has since morphed into a lovely but very different dish. I hate overly cooked greens - the texture grosses me out, but with the kale it stays nice and crisp. You can serve it hot as an entree or side dish, but it also saves nicely in the refridgerator as a cool salad for lunch the next day.

1 bunch kale
1 tablespoon olive oil
2 garlic cloves, finely chopped
1 large sweet onion
1 large orange bell peppers or 1 large yellow bell pepper
1/3 cup sliced carrot
1/2 turkey kielbasa, fully cooked
salt
pepper

Steps:

  • Stem the kale and chop into smaller pieces.
  • Slice the onion and chop up the bell pepper and carrots. Cut the turkey keilbasa sausage into 1/4 inch rounds.
  • Heat oil in a large saucepan, or a large fry pan with high sides.
  • Add the garlic to the pan and let saute for about 30 seconds.
  • Add the onion, carrots, and bell pepper and cook until the onion becomes somewhat translucent and the other vegetables tender, about 5-7 minutes. Stir frequently so nothing burns.
  • Add the turkey keilbasa sausage and saute a minute more.
  • Add the kale and gently toss so that the other cooked vegetables become incorporated. Cook about 2-3 more minutes, just until the kale starts to become tender and slightly wilted.
  • Warning. Don't cook the kale too long or it will become tough and chewy. YUCK!
  • Sprinkle it with salt and pepper to taste.
  • Enjoy!
  • You may need more olive oil, and you can add more or less of any ingredient you like.

1 tbsp olive oil
6 pork sausages
1 tsp chilli flakes
1 tsp fennel seeds (optional)
500g fresh gnocchi
500ml chicken stock (fresh if you can get it)
100g chopped kale
40g parmesan, finely grated

Steps:

  • Heat the oil in a large high-sided frying pan over a medium heat. Squeeze the sausages straight from their skins into the pan, then use the back of a wooden spoon to break the meat up. Sprinkle in the chilli flakes and fennel seeds, if using, then fry until the sausagemeat is crisp around the edges. Remove from the pan with a slotted spoon.
  • Tip the gnocchi into the pan, fry for a minute or so, then pour in the chicken stock. Once bubbling, cover the pan with a lid and cook for 3 mins, then stir in the kale. Cook for 2 mins more or until the gnocchi is tender and the kale has wilted. Stir in the parmesan, then season with black pepper and scatter the crisp sausagemeat over the top.

1 pound bulk hot Italian sausage
6 cups chopped fresh kale
2 cans (15-1/2 ounces each) great northern beans, rinsed and drained
1 can (28 ounces) crushed tomatoes
4 large carrots, finely chopped (about 3 cups)
1 medium onion, chopped
3 garlic cloves, minced
1 teaspoon dried oregano
1/4 teaspoon salt
1/8 teaspoon pepper
5 cups chicken stock
Grated Parmesan cheese

Steps:

  • In a large skillet, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. Transfer to a 5-qt. slow cooker., Add kale, beans, tomatoes, carrots, onion, garlic, seasonings and stock to slow cooker. Cook, covered, on low 8-10 hours or until vegetables are tender. Top each serving with cheese.

1 lb spicy bulk sausage
1 lb kale, cleaned and ready to use
1 cup onion, diced
3 garlic cloves, minced
1 Thai red chili pepper, minced
8 cups chicken stock, preferably homemade
1 baking potato, diced
2 (15 ounce) cans navy beans, drained and rinsed
1 (15 ounce) can Rotel tomatoes & chilies
3 bay leaves
1 teaspoon dried thyme
1/2 teaspoon saffron (adds great flavor) (optional)

Steps:

  • Crumble sausage in a large soup pot or dutch oven, cast iron if you have it, and cook over medium heat until no longer pink. Stir in onion, garlic and chili pepper and cook until translucent taking care not to let them brown. Depending on your sausage, you may need to add a bit of extra virgin olive oil.
  • Add the kale and chicken stock- it will cook down rapidly so don't panic if it overwhelms your pot at first. Just give it a few minutes.
  • When the kale has cooked down a bit, add the tomatoes, potato, bay leaves, thyme and saffron. Let the soup simmer for about 30 minutes or until the potato is tender and the kale is cooked to the consistency you like.
  • Ladle into soup bowls and enjoy with crusty bread.
