Auntie Vila's Samoan Curry Chicken Stew Recipe - (3.8/5) image

Provided by á-39535

Number Of Ingredients 15

1 large onion, chopped
4 garlic cloves, minced
1 piece ginger, 1-inch in size, minced and pounded
1/4 cup oil
2 tablespoons curry powder
1 1/2 pounds chicken pieces
2 cups water
2 cups coconut milk
4 medium potatoes, chopped into large pieces
1 carrot, large, chopped into large pieces
1 stick celery, chopped into large pieces
6 tablespoons flour
6 tablespoons water
Salt, to taste
Pepper, to taste

Steps:

  • Heat your oil in a large pot, then fry the onion until partly translucent. Add the garlic, ginger and curry powder and fry for about a minute for the spices and aromatics to release their flavor. Add chicken, 2 cups of water, and 2 cups of coconut milk. Bring to a boil then lower to a simmer and cover. Simmer for 20 minutes or until very soft. Add vegetables and bring to a boil again. Turn down heat and cover again. Simmer for 20 minutes or until soft. Mix the 6 tablespoons of flour with the 6 tablespoons of water until it's smooth (and an extra tablespoon or so of curry if you like). Then add this slurry straight into the pot. Turn the heat up to medium and stir until thickened. Season well with salt and pepper to taste.

KALE MOA (SAMOAN CHICKEN CURRY)

Kale Moa (Samoan Chicken Curry) image

Kale Moa (Pronounced KAH-lay MOH-ah) is absolutely wonderful. It's full of flavor, and has the best balance of sweet, savory, and spicy. One of my favorite Samoan dishes. Just a note: I personally prefer to use yellow curry as it's mild but still has the curry flavor I love. You are more than welcome to adjust the heat of your...

Time 1h10m

Number Of Ingredients 12

1 large onion, chopped
4 clove garlic, minced
1 inch piece of ginger, pounded and minced (if you don't have fresh ginger, about 1 tsp of ginger paste will work just fine)
1/4 c vegetable oil
2 Tbsp curry powder
1 1/2 lb bone-in chicken pieces (wings and thighs, preferably)
2 c plus 6 tbsp water
2 c coconut milk
4 medium potatoes, peeled and chopped into larger pieces
1-2 large carrots, peeled and chopped into large pieces
1-2 stalk(s) celery, chopped into large pieces
6 Tbsp flour

Steps:

  • 1. In a large pot, preferably a stock pot, over medium heat, add your oil and onion. Saute the onion until it is almost translucent.
  • 2. Add in the garlic, ginger, and curry powder. Saute everything in the pot until these become aromatic.
  • 3. Add in chicken pieces, 2 cups of water, and 2 cups of coconut milk. (If you're using canned coconut milk, be sure to also use the thick cream on top for a nice, rich, and thick sauce for your kale.) Bring the pot to a boil, then turn heat down to low simmer, and cover. Simmer about 20 minutes.
  • 4. Add in vegetables, stir. Bring the kale up to a boil once more, then back down to a low simmer, covered. Simmer for about another 20 or so minutes until carrots or potatoes are fork-tender but not falling apart.
  • 5. Mix together the remaining 6 Tbsp of water with 6 Tbsp of flour to make a quick slurry. (At the point, if you think it could use more heat, feel free to add more curry powder.) Add this to the pot, turning the heat back up to medium, and stirring until thickened. Season well with salt and pepper. Serve with rice.

  • Palusami (Main Dish with Corned Beef and Coconut Milk) If you’re looking for a filling, “stick to your ribs” main dish, consider palusami. It’s a baked dish that combines the rich, savory flavors of corned beef, sauteed onions, minced garlic, and soy sauce with the sweetness of coconut milk and the earthiness of spinach.
  • Fa’alifu Fa’i (Green Banana in Savory Coconut Sauce) This island favorite isn’t too difficult to make. Start by boiling green bananas for about 10 minutes and making a sauce with coconut cream, water, crushed onions, and salt.
  • Coconut Rice. Coconut rice is a Samoan staple that’s served with most meals. It’s super easy to make, requiring only three ingredients and about 30 minutes to cook.
  • Samoan Chicken and Coconut Rice. Samoan chicken is best when cooked in a Dutch oven. It has a thick, bold taste thanks to the dark soy sauce, garlic, onions, and ginger.
  • Pani Popo (Samoan Coconut Rolls) These delicious dinner rolls are another staple of Samoan fare, and they definitely find that perfect sweet/savory balance.
  • Sapa Sui (Samoan Chop Suey) Recipe. This dish puts a Samoan twist on the traditional chop suey recipe. The recipe calls for chicken, but you can add a different protein if you want, or you can leave out the meat altogether and make it vegetarian-friendly.
  • Panikeke (Samoan Pancakes) This recipe is straightforward and easy to follow. Once you’re comfortable with it, you may want to add other ingredients – cinnamon, nuts, fruit, etc.
  • Kale Moa (Samoan Chicken Curry) Once finished, the consistency of this dish is almost like a thick, hearty stew. For that reason, I like to serve it over rice when it’s time to eat.
  • Boiled Taro With Coconut Milk. Boiled taro is a bit like boiled sweet potatoes. You’ll make it with coconut milk, which makes it sweet, and add in enough salt to give it that sweet and salty combo that never fails to delight the taste buds.
  • Samoan Watermelon Drink. This fruity drink requires less than10 ingredients and less than 10 minutes to fix. It combines all the tasty tropical flavors of coconut, watermelon, and pineapple with the tang of lemon juice.

SAMOAN CHICKEN (MOA FA'ASAINA) - INTERNATIONAL CUISINE
2019-05-23 Samoan chicken is called Moa Fa’Asaina. This easy to make dish will become one of your favorites. In Samoa they cook in an uma, an earth oven. It can be easily replicated in a dutch oven which is how I made this Samoan chicken. It was served over a simple coconut rice which I also highly recommend. The deep flavor comes from a dark soy sauce, onion and garlic with a hint of vinegar. …
