After trying many recipes for homemade-style Korean BBQ, I finally found a great recipe from a friend who learned it from his mom. It's sweet, salty, spicy, and very tender (Thanks to the Coke®). I use this same recipe to make Bulgogi and Dae Ji Bool Gogi (Spicy Pork) and simply change the onions to sliced bulbs for the bulgogi.

¾ cup cola-flavored carbonated beverage (such as Coca-Cola®)
¼ cup white sugar
¼ cup soy sauce
¼ cup water
2 green onions, chopped
3 tablespoons sesame oil
1 tablespoon minced garlic
1 ½ teaspoons sesame seeds
1 teaspoon ground black pepper
2 pounds short ribs

Steps:

  • Combine cola beverage, white sugar, soy sauce, water, green onions, sesame oil, garlic, sesame seeds, and black pepper in a bowl until marinade is well-mixed.
  • Place short ribs in a resealable plastic bag and pour in marinade. Squeeze out excess air and seal the bag. Marinate in the refrigerator for at least 2 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Remove short ribs from marinade, discarding marinade.
  • Cook short ribs until browned and cooked to desired doneness, 3 to 4 minutes per side. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

5 cloves garlic
1 onion, coarsely chopped
1 Asian pear, cored and cubed
1 cup soy sauce (such as Kikkoman®)

Steps:

  • Place the ribs in a large stockpot and cover with cold water. Soak ribs, refrigerated, for 1 hour to pull out any blood. Drain.
  • Combine garlic, onion, and Asian pear in a blender and puree. Pour into a large bowl and stir in the soy sauce, brown sugar, honey, sesame oil, and black pepper. Marinate ribs in the soy mixture, covered, overnight.
  • Preheat an outdoor grill for high heat, and lightly oil the grate.
  • Grill ribs until the meat is tender and the outside is crusty, 5 to 10 minutes per side.

Steps:

  • In a bowl, stir together the soy sauce, brown sugar, water, garlic, green onions, and sesame oil until the sugar has dissolved.
  • Place the ribs in a large plastic zipper bag. Pour the marinade over the ribs, squeeze out all the air, and refrigerate the bag for 3 hours to overnight.

3 lbs. (1.3 kg) Flanken-style short ribs, about 12 pieces
Water
1 Asian pear
1/2 white or yellow onion
1 cup soy sauce (I use Aloha shoyu)
1 cup citrus soda, like Sierra Mist
1 tablespoon freshly grated ginger
1/4 cup sesame oil
3 cloves garlic minced or pressed
2 tablespoons sesame seeds
1/4 teaspoon red pepper flakes
1/4 cup minced green onion

Steps:

  • Place ribs in a large casserole dish and fill it with water until the ribs are covered. Let sit in the fridge at least 30 minutes, then pour off water and rinse the ribs and dish.
  • Return ribs to the casserole dish. Grate the flesh of an Asian pear and half of an onion over the ribs. Add all remaining ingredients to the ribs and use tongs stir marinade and make sure ribs are all soaking. Cover the dish and refrigerate at least 30 minutes (overnight is better).
  • Heat a grill to medium high heat. Use tongs to place ribs on the grill and cook for 3-4 minutes each side. Garnish with additional green onion and sesame seeds if desired. Serve with kimchee and rice.

Steps:

  • Place short ribs in a resealable plastic bag; pour Korean BBQ Marinade over. Seal bag; turn to coat and chill 3 hours. Let come to room temperature before grilling. Drain and pat dry with paper towels.
  • Build a medium fire in a charcoal grill, or heat a gas grill to medium-high. Grill 2-3 minutes per side, or until just cooked through.

5 lb Korean Short Ribs - LA Cut
1 medium onion ((about 4 oz / 120 g))
1/2 cup water
1 cup soy sauce
1/2 cup red wine
1 cup sugar
6-8 large garlic cloves ((40 g))
3 green onions
4 Tbsp sesame oil
1 Tbsp sesame seeds
1 tsp black pepper
2 Tbsp green plum syrup ((optional))

Steps:

  • Rinse ribs under water to remove any bits of bone. Drain. Trim any chunks of fat but most of the fat will melt away during grilling time. These ribs were good quality ones with minimal fat. Drain washed ribs.
  • While ribs are draining, cut onion into chunks or just half, if onion is small. Cut green onions into shorter lengths to fit into the blender. Here's all the ingredients for the marinade to go into the blender.
  • In a blender or chopper, add onion and 1/2 cup water. Blend until smooth.
  • Add remaining 1 cup soy sauce, 1/2 c red wine, 1 c sugar, garlic cloves, green onions, 4 T sesame oil, 1 T sesame seeds, 1 tsp pepper and optionally 2 T green plum syrup (if you want to).
  • Blend until smooth.
  • In a container, add Kalbi pieces and the marinade. Mix everything so each piece is evenly coated.
  • Let ribs marinate in the fridge for at least 1 hr to overnight. If you are in a hurry, even 30 minutes will work.
  • Take ribs out of the fridge and heat your oven broiler for 5 minutes. Lay out your Kalbi on a metal grill pan and broil it on the top rack for 4 minutes for the first side. Then turn it over and grill another 3 minutes on the other side.
  • Serve immediately with rice and other Korean side dishes.

This dish, known as galbi, is a fine thing to eat in a restaurant, but it also makes for a wonderful and easy meal at home. If you buy English-style short ribs, which are cut along the bone, you must butterfly the meat into a thin, long strip. If the ribs you buy are flanken-style, in which a band saw is used to cut across the ribs, creating half-inch slices of beef dotted with three little bones, rinse them under cold water before seasoning to remove any bone fragments. It's a good idea to let the ribs marinate for at least two hours to allow the seasoning to penetrate; marinating overnight is even better.

  • Rinse short ribs in cold water, pat dry and place in a wide shallow bowl. In another bowl, mix together soy sauce, brown sugar, rice wine, sesame oil, black pepper and cayenne.
  • Put onion, garlic, pear and ginger in the work bowl of a food processor. Grind ingredients to a smooth purée, then add to soy sauce mixture. Add sesame seeds. Thin with ¼ cup water. Pour marinade over short ribs and mix well. Cover and refrigerate for at least 2 hours, or overnight. Bring to room temperature, drain and discard marinade.
  • Cook short ribs on a hot grill or under the broiler for 2 to 3 minutes per side, until nicely browned but juicy. Pile grilled meat on a platter and serve immediately with lettuce leaves on the side. Accompany with sliced hot peppers, ssamjang and steamed rice, if desired.

Steps:

  • Rinse the ribs and drain water. Trim excess fat. Butterfly the short ribs so the meat is 1/4 to 1/2-inch thick. (See below for the instructions.)
  • Mix all marinade ingredients well. Marinate the meat for at least 6 hours (overnight for best results). The thicker the meat the longer you'll want to marinate.
  • It's best to grill over charcoal or wood charcoal (sootbul), but a gas grill works well too. Grill over medium high to high heat, turning only once, 2 - 3 minutes on each side. Make sure to preheat the grill for nice grill marks.

3 pounds flaken cut short ribs
¼ cup green onions (sliced as a garnish)
1 teaspoon sesame seeds (as a garnish)
1 cup water
1 cup soy sauce
1 Asian pear (peeled and seeded)
1 Fuji apple (peeled and seeded)
1 kiwi (peeled)
½ yellow onion (peeled)
5 large garlic cloves
1 1-inch knob fresh ginger (trimmed)
⅔ cup light brown sugar
¼ cup rice wine vinegar
¼ cup honey
3 Tablespoons sesame oil
1 teaspoon coarse kosher salt

Steps:

  • Blend the marinade. Combine all ingredients, except for the beef ribs, green onions, and sesame seeds in a blender jar with a tight fitting lid. Blend on high until the marinade is totally smooth.
  • Marinate the ribs. Place the sliced beef ribs, one at a time in a gallon zip top bag, pouring some of the marinade in between each rib as you place it in the bag. This will ensure that the ribs are evenly marinated. Place the bag in the fridge and marinate for at least 8 hours, or up to 24 hours, turning and massaging the bag halfway through the marinade time.
  • Preheat the grill. Preheat your grill to high heat (around 450-500 degrees F). Charcoal is my favorite grill to use for this recipe, but it also works on a gas grill or a grill pan.
  • Grill the short ribs. Slowly remove each short rib from the marinade, allowing excess marinade to drip away. Set each rib directly on the grill grates, without letting them overlap. Grill for 3-4 minutes per side, developing nice char marks on each side of the ribs. Use an internal thermometer to check for doneness and pull the ribs off of the grill when they reach 130 degrees F.
  • Garnish and serve. Arrange the grilled ribs on your serving platter and sprinkle with the sesame seeds and sliced green onions. Serve immediately and enjoy!

1/2 onion
3 - 4 thin ginger slices (about 1-inch rounds)
5 garlic cloves
2 white parts of scallions
1/2 cup soy sauce
2 tablespoons sugar (3 tablespoons for sweeter ribs)
2 tablespoons honey
1/4 cup rice wine (or mirin)
1/2 medium Asian pear (grated (about 1/2 cup))
1/2 small onion grated
1 tablespoon minced garlic
1 teaspoon grated (or juiced ginger)
1/2 teaspoon black pepper
2 tablespoons sesame oil
10 ounces Korean radish (cut into large chunks (about 1-1/2-inch cubes))
3 - 4 dried shiitake mushrooms (soaked and quartered)
1 large carrot (cut into large chunks (about 1 inch long))
2 green parts of scallion
6 - 8 peeled fresh chestnuts
6 dried Korean dates/jujube
10 - 12 gingko nuts (or 1 tablespoon pine nuts)

Steps:

  • Trim off any excess fat. Rinse the ribs and let them sit in cold water for about 30 minutes to draw out excess blood. Drain.
  • In a large pot, bring 5 cups of water to a boil over high heat along with the onion, ginger, garlic and scallion white parts. Add the short ribs, and bring it to a boil, uncovered, skimming off the foam. Reduce the heat to medium high and cook for about 10 minutes. Remove the ribs to a plate, reserving the stock.
  • Strain the stock, and skim off the fat. (Refrigerating the stock will help the fat solidify for easier removal. If you have room in the freezer, the process will go faster.)
  • Mix together all the braising liquid ingredients, except the sesame oil. Return the ribs to the pot. Pour the braising liquid over the meat and stir. (You can prepare the ribs up to this point the day before, and finish braising when you need to serve.)
  • Meanwhile, prepare the vegetables and optional garnish.
  • Add 2-1/2 cups of the reserved stock to the ribs. Cover and bring it to a boil over medium heat. Continue to boil for 20 to 30 minutes, depending on the thickness of the ribs. Stir in the radish, mushrooms, and carrots. Continue to boil, covered, for about 20 minutes.
  • Stir in the optional garnish ingredients. Return to boil, uncovered this time, for an additional 10 minutes, or until the sauce is thicker and the meat is tender but not falling apart. Add the green parts of scallions and the sesame oil and stir gently before turning the heat off.

1 cup soy sauce
1/2 cup water

  • Preparation: Sprinkle brown sugar over beef and mix well to evenly coat. Let sit at room temperature for 10 minutes while preparing marinade. In a bowl, whisk together remaining ingredients. Transfer beef into a large sealable freezer bag (you may need 2). Add marinade, press out excess air from bags, and seal. Turn bag over several times to ensure beef is evenly coated. Refrigerate for at least 4 hours but preferably overnight.
  • Heat gas or charcoal grill to medium-hot. Drain excess marinade off beef. Grill short ribs, turning once, to desired doneness, about 3 to 4 minutes per side. Garnish with thinly sliced green onions, if desired. Serve whole pieces as a main course or cut into smaller pieces, using kitchen shears, for a starter or party nibble.

  • Prepare the marinade. Combine kiwi, ginger, garlic and sliced scallions in a food processor. Pulse to roughly chop and blend together. Add soy sauce, mirin, sesame oil, maple syrup, rice vinegar and sugar. Blend until smooth.
  • Marinate the chicken. Place chicken thighs in a zipper-topped plastic bag and pour in marinade. Seal bag and squoosh it around to coat chicken. Let chicken marinate at least 3 hours in the fridge, turning the bag a time or two. Preferably let it marinate longer, but not overnight (that's just too long). I got up a little early on a workday morning and prepared the marinade. That evening, I cooked the chicken.
  • Cook the chicken. Preheat the oven to 375ºF. Heat a little oil in a large, oven-safe skillet over a medium-high flame. remove the chicken from the marinade, shaking off any excess, and place it in the skillet sin side down. Discard marinade. Brown chicken skin side down for 5 to 7 minutes, then turn. Brown the flesh side for 2 minutes and transfer pan to oven.
  • Cook for 15 to 20 minutes, until an instant-read thermometer registers at least 165ºF (check about 12 minutes in, so you don't overcook it).

  • In a large bowl, whisk to combine the grated Asian pear, grated kiwi, soy sauce, brown sugar, garlic, sesame oil, and a few cracks of black pepper. Combine in a marinade bag with the beef, and let marinate for at least 4 hours, and as long as overnight.
  • Remove the beef from the marinade, and discard the marinade. Either grill the beef for 3-4 minutes on each side, or broil them on top of a wire rack set over a sheet pan, also for 3-4 minutes on each side. If those two cooking options aren't available, you can also pan fry them in a skillet. Cook them until they are caramelized and deeply brown on the edges. Enjoy!

  • In a mixing bowl, combine all ingredients except meat. Whisk until sugar has dissolved. This marinade can be store in a refrigerator for 10 days when you are ready to use and you can marinade unto 3 pounds of meat of your choice.
  • Add your choice of meat into marinade sauce and marinate at least 2 hours to overnight. (Overnight will be the best for perfectly tenderized meat and flavors) You can use either mixing bowl or ziplock bags. Do not marinate meat over 2 days, otherwise kiwi/pineapple breakdown protein of meat too much, it will be a mush texture and you don’t want that.
  • When you are ready to cook Galbi, remove meat from marinade first and pour marinade into a sauce pan and bring it to boil. When it starts boiling, reduce heat to medium and cook sauce about 10 minutes. Skim as you needed.* This will be a delicious dipping sauce for Galbi!
  • You can grill galbi over medium high heat until meat is cooked to your desire doneness. If you want to cook indoor, just use a nonstick skillet (it’s easier to clean later) and pan fry them.
