Turkish Coffee....kah'wah image

Turkish coffee is not just limited to turkey, but is a traditional drink all over the middle east. You can buy freshly roasted and prepared coffee beans while you wait Turkish coffee from most middle eastern grocers in the united states. They usually use a combo blend of light and dark coffee beans and grind cardamom up in it at the same time.You can even purchase Turkish coffee pots that Turkish coffee is made in at most grocers. If you don't have a Turkish coffee pot, don't worry, you can use any pot. This recipe is the next best thing.*Measurements are approximate, so you may add or decrease according to taste buds*

Number Of Ingredients 4

1 1/2-2 cups water
2 tablespoons coffee (finely grounded)
1/4 teaspoon ground cardamom
1 -2 tablespoon sugar (to taste)

Steps:

  • Place water and sugar in a large enough pot to boil the water.
  • Make sure you allow room, because boiling coffee tends to want to boil up and over.
  • Once boil is achieved, add coffee, very slowly, and decrease heat.
  • Stir coffee very frequently.
  • When making it, I let it comes to a boil and when it starts to boil up the pot I take it off the burner for 2 seconds, then repeat the steps 3-4 times.
  • Serve in demitasse cups.
  • *Do not leave coffee boiling on stove unattended, it WILL boil over*.
  • *If serving for a large group, just double or triple the recipe accordingly*.

Kahwah Saa'dah.........middle Eastern Special Occasion Coffee image

The term Kahwah Saadah means "black coffee", which means no sugar added. This coffee is "only" made from light roast coffee beans and has to be coarsely grounded and is not the same as Turkish coffee, this is has a stronger cardamom flavor, but lighter texture.I believe this coffee originated from Saudi Arabia. This coffee is usually made for special occasions such as Eid or funerals. This is usually placed in carafes to keep hot all day and served in specific cups with no handles.Even though this coffee is lighter in texture it is considered to be even stronger than Turkish coffee so it is served in small portions. I usually add sugar to my cup, just because I dont like black coffee.

1 cup light roast ground coffee (coarsely ground)
3/4 cup green cardamom pods
13 1/2 water cup water
1 tablespoon ground cardamom (optional)

Steps:

  • Place the cardamom pods in a mortar and pestle and hit several times to open pods.
  • Place pods in a medium pot over a medium heat and let the pods "roast" for approximately 1 minute. This will release the flavor and aroma.
  • Then add water and coffee to the pot and let boil for about 7-10 minutes.
  • Strain the coffee and place in a carafe to keep hot.
  • Enjoy!

Nescafe is a nice "cafe latte", that is served in the middle east. Its my favorite. This is the same recipe for Cafe Con Leche that I have posted.I just wanted to post it under both names. What a small world, there are so many commonalities in such diverse cultures. You can always add more of less of the ingredients to suit your taste.

Steps:

  • Combine all ingredients in a small saucepan.
  • Bring to a boil.
