MOM'S CHEESY MASHED POTATO AND CORN CASSEROLE

When I was little I loved nothing more than my Mom's mashed potatoes and corn. One day she decided to combine both of my favorites into a casserole. It turned out fabulous and it became a regular family favorite. It was usually served with a great meat loaf and a salad.

Number Of Ingredients 7

6 medium potatoes (Idaho or Russet)
3/4 cup milk
4 tablespoons butter
1 teaspoon salt (for the water to cook the potatoes)
2 (15 1/4 ounce) cans corn, drained well
2 cups cheddar cheese, shredded (mild)
salt and pepper (to taste)

Steps:

  • Preheat oven to 350 degrees.
  • Peel the potatoes and cut them into quarters.
  • Put the potatoes in a pan and just cover them with cold water. Add salt.
  • Bring to a boil and boil gently for 15-20 minutes or until tender when pierced with a fork.
  • Mash potatoes with a potato masher or use an electric mixer on low. Don't try and get the potatoes to be lump free, as that is part of what makes them good.
  • Season potatoes with salt and pepper to taste.
  • Grease the bottom of a 9x13 pan.
  • Pour well drained corn into the pan (make sure the corn is REALLY well drained there will be too much liquid. I press on the corn with a clean kitchen towel or paper towels to sop up the extra liquid).
  • Cover the corn with the mashed potatoes.
  • Sprinkle the top of the mashed potatoes with cheese.
  • Bake for 20 minutes and serve with a serving spoon.

4 medium red potatoes
1 tablespoon butter
1/4 cup milk
Salt and freshly ground black pepper

Steps:

  • Place potatoes in saucepan. Cover with cold water. Add pinch of salt. Bring to a boil and simmer for about 20 to 25 minutes or until tender. Drain potatoes and transfer back to saucepan. Smash with potato masher. Add butter and milk. Season with salt and pepper.

CRISPY SMOOSHED POTATOES

4 pounds mixed new potatoes (about golf-ball size)
Sea salt and fresh ground black pepper
Olive oil
1 tablespoon butter, melted, optional
Serving suggestions: Roasted Garlic Aioli (recipe follows) or sour cream and fresh herbs
4 egg yolks
3 cloves roasted garlic
1 tablespoon lemon juice
1 tablespoon Dijon mustard
2 teaspoons paprika
2 teaspoons sea salt
1 1/2 cups light olive oil

Steps:

  • Preheat the oven to 400 degrees F.
  • Add the potatoes to a large pot of heavily salted water (about 1/4 cup salt) and bring to a boil. Reduce to a simmer and cook until a fork slides easily into a potato, about 15 minutes. Drain.
  • Generously oil a baking sheet with about 1/4 cup oil, making sure to cover the whole sheet. Arrange the potatoes on the baking sheet and gently smoosh them with a potato masher or cup -- not so much that it breaks the bottom skin or crumbles the potatoes, just enough to break open the top.
  • Drizzle each potato with olive oil or a tablespoon of melted butter, if you prefer. Season generously with salt and pepper.
  • Bake until golden brown, about 30 minutes.
  • Serve with roasted garlic aioli or a bit of sour cream and fresh herbs.
  • Combine the egg yolks, roasted garlic, lemon juice, mustard, paprika and salt in a blender. Blend on high to emulsify. With the motor running, slowly drizzle in the olive oil; the mixture will lighten and become thick and smooth. Taste and adjust the seasoning as needed.
  • Serve right away, or refrigerate for up to 1 day.

1/4 cup vegetable oil
6 medium Yukon Gold potatoes, peeled
Salt
Freshly ground black pepper
1/2 cup Crema (recipe follows), creme fraiche or sour cream
2 cups heavy cream
1/4 cup buttermilk

Steps:

  • Preheat oven to 350 degrees. In a cast iron skillet heat the oil over high heat. Cook the potatoes whole, turning frequently until evenly browned, about 10 to 15 minutes. Transfer to paper towels to drain. When cool enough to handle, wrap each potato in aluminum foil and place in the oven. Bake until cooked through, about 40 minutes. Remove the foil and transfer the potatoes to a serving platter. Place a kitchen towel over the potatoes and crush with the palm of your hands. Sprinkle with salt and pepper and garnish with the crema, creme fraiche or sour cream. Serve immediately.
  • Whisk the cream and buttermilk together. Cover and set in a warm place (a gas oven with just the heat from the pilot light is fine) for 8 hours. Crema may be kept in the refrigerator as long as a week.

1 ½ pounds small yellow-fleshed potatoes
¼ cup olive oil
1 teaspoon butter at room temperature
2 tablespoons balsamic vinegar
3 cloves garlic, minced
1 teaspoon dried rosemary
½ teaspoon dried sage
½ teaspoon ground thyme
½ teaspoon dried savory
½ teaspoon sea salt
½ teaspoon ground black pepper

Steps:

  • Place potatoes in a saucepan, fill with water to cover the potatoes, and bring to a boil. Reduce heat to a simmer, and cook the potatoes until tender but not mushy, about 20 minutes. Drain and allow potatoes to cool.
  • While potatoes are cooking, combine olive oil, butter, balsamic vinegar, garlic, rosemary, sage, thyme, savory, sea salt and pepper in a bowl. Stir with a fork to combine well.
  • Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper.
  • Place the potatoes in a single layer on the prepared baking sheet, and lightly press down on the potatoes to partially crush them. Spoon the oil-herb mixture over each potato.
  • Bake in the preheated oven until the edges of the potatoes are beginning to crisp, about 25 minutes. Cool for about 5 minutes before serving.
