KAHLUA DREAM BARS
I always double this recipe so everyone gets a piece. For a glaze with deeper flavor, use 1 ounce unsweetened chocolate and 2 ounces semisweet.-Lorraine Caland, Shuniah, Ontario

Steps:
- In large heavy saucepan, melt butter over medium-low heat; stir in cocoa until blended. Whisk a small amount of hot mixture into egg yolk; return all to the pan, whisking constantly. Cook, stirring constantly, until mixture thickens and a thermometer reads 160°, 2-3 minutes. Remove from heat. Stir in cracker crumbs, confectioners' sugar and vanilla. Press into a greased 13x9-in. pan., For filling, in a large bowl, combine butter and Kahlua. Stir in confectioners' sugar. Spread over crust. Refrigerate until set., For glaze, in a microwave, melt butter and chocolate; stir until smooth. Spread over filling. Refrigerate until set. Cut into bars.

ICE CREAM SANDWICH DESSERT
This is how I make this Ice Cream dessert. Much like my Brownie Trifle. I add a tad of Kahlua to the chocolate fudge... Mmmmm Good!

Steps:
- Place half of your sandwiches in the bottom of a square serving dish . . . making sure sides of sandwiches are against the pan. I make it in a 9x13 glass dish.
- Cover with whipped topping.
- Top with half chopped walnuts.
- Microwave 1/2 jar Chocolate syrup for 1-2 minutes, mix in 2 Tbls Kahlua.
- Drizzle whipped topping with both chocolate and caramel.
- Repeat above steps for next layer. Ending with whipped topping. Add Toffee Pieces to top.
- Cover and freeze for 4 hours. Best overnight!

Steps:
- In a medium saucepan, combine the cream, milk, sugar, Kahlua and espresso powder.
- Bring to a gentle boil over medium heat. Remove from the heat.
- In a medium bowl, beat the egg yolks until thickened.
- Whisk 1 cup of the hot cream into the egg yolks.
- Gradually add the egg mixture in a slow, steady stream, to the hot cream.
- Cook over medium-low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon, about 5 minutes.
- Remove from the heat and strain through a fine mesh strainer into a clean container.
- Cover with plastic wrap, pressing down against the surface to keep a skin from forming.
- Refrigerate until well chilled, at least 2 hours.
- Remove from the refrigerator and pour into the bowl of an ice cream machine. Freeze according to the manufacturer's instructions. Transfer to an airtight container and freeze overnight until very firm.

KAHLUA ICE CREAM SANDWICH BARS
Steps:
- Cover the bottom of a 9x13 pan with ice cream sandwiches; cover the entire bottom of pan. Lightly pour Kahlua over the ice cream sandwiches. Mix crushed candy bar with Cool Whip and spread evenly over ice cream sandwiches. Sprinkle again with crushed candy bar and cover with plastic wrap and freeze. Cut into squares and serve. For a better presentation you can take melted caramel and sqeeze in a nice pattern on a plate and place ice cream square over caramel.
KAHLUA CHIP ICE CREAM
Steps:
- Place a large mixing bowl in the freezer.
- In another large bowl, whisk together the egg yolks and sugar until thick and pale yellow. In a saucepan bring the half-and-half to a boil. Gradually pour into the egg mixture, whisking until the sugar dissolves. Let stand 5 minutes and then chill.
- Stir the vanilla, cold espresso and Kahlua into the chilled custard. Pass through a fine strainer. Pour into an ice cream maker and process according to the manufacturer's instructions. When the ice cream is nearly done, melt the chocolate over simmering water.
- Transfer the frozen ice cream into the chilled bowl from the freezer. Pour in the melted chocolate, stirring and mixing vigorously with a wooden spoon. Transfer to a container and freeze until firm.

- Drizzle a few tablespoons of kahlua on the bottom of the pan. Place one layer of ice cream sandwiches on the bottom of a 9x13 pan, making sure to fit them snugly together. You may need to cut them in half (or vertically) to arrange them together.
