Steps:
- Combine confectioners' sugar, butter, coffee-flavored liqueur, and vanilla extract in the bowl of a stand mixer fitted with the paddle attachment. Beat until frosting is smooth and fluffy, 3 to 5 minutes.

KAHLUA BROWNIES WITH WHITE & DARK CHOCOLATE FROSTING
Delicious, sophisticated brownies that are great during the holidays as well as to finish a Mexican meal. While there are a lot of steps, it's actually a pretty easy dish to make and enjoy. Adapted from "Layers of Flavor" by Ray Overton.

Steps:
- Preheat oven to 350°F.
- Grease and flour a 13x9x2 baking dish and set aside (can use a mix of cocoa and flour to prevent white edges around finished brownies) In a big bowl (preferably by hand, NOT mixer), combine well the sugar, flour, cocoa, baking soda, salt and cinnamon.
- Add melted butter, eggs, vanilla, and Kahlua, and stir just until blended (do not overmix).
- Fold in chopped nuts, if you are using them.
- Put batter in prepared baking dish, evening out the batter with a spatula.
- Bake for 40- 45 minutes or until the edges of brownies begin to pull away from the sides of the dish.
- Remove from the oven and put dish on wire rack to cool.
- Immediately sprinkle dark chocolate chips over top of hot brownies.
- Lighly place a sheet of aluminum foil over dish to hold in and reflect heat.
- After about 5 minutes, when chips are melted, spread over the brownies with a spatula.
- Immediately sprinkle white chocolate over the frosting, and lightly cover dish with the foil again.
- After about 2 minutes, when chocolate is melted, gently swirl them into the dark chocolate to create a marbleized look.
- Let cool 2 hours before cutting.

Rich and chocolatey with a hint of coffee and kahlua ... topped with a rich creamy frosting and you have the perfect potluck dessert ... or serve it with some vanilla ice cream for a company dessert. Cook time does not include cooling time for the brownies before adding the frosting.

- To make the brownies:.
- Melt together the butter and baking chocolate in a double boiler or microwavable bowl, stirring frequently.
- Pour into mixing bowl and let cool while you are collecting all your other ingredients.
- To the chocolate mixture, add the eggs and beat well.
- Then add the vanilla, kahlua and coffee crystals and mix well.
- Beat in the sugar, flour, salt and baking powder until well mixed.
- Scrape into a buttered 9x13 baking dish.
- Bake in a preheated 350 degree oven for about 30 minutes; do not overbake or the brownies will be dry.
- Let cool completely on a wire rack before frosting.
- For frosting:.
- To melt the chocolate squares, I like to use a 1 cup glass measuring cup in the microwave; stirring often and using short time periods.
- To slightly cooled chocolate, stir in vanilla, kahlua, and coffee crystals.
- In a mixing bowl, beat butter until creamy.
- Alternately add sugar and chocolate mixture , beating until smooth.
- Add salt to taste (the saltiness should just bring out the sweetness, not overpower it).
- Spread over cooled brownies.

- Place the butter in a saucepan and heat until lightly browned. Remove from heat and add Kahlua and whipping cream. Whisk in the powdered sugar until you have the consistency that you desire (you should be looking for a thick, smooth icing that is still pourable). Pour on top of the cooled brownies and spread to the edges to cover completely. Refrigerate until set. - Preheat oven to 325° F. Fold a long piece of heavy foil into a 13" wide strip and fit it inside a 9"x13" metal baking pan, leaving foil overhang on the 2 long sides. Spray the foil with nonstick spray.
- Stir the butter and chocolate in a large heavy saucepan over very low heat until chocolate is melted. Remove from heat and whisk in the sugar, and then the eggs, 1 at a time. Whisk in espresso powder, vanilla, and salt. Then sift the flour over the chocolate mixture and stir to blend well. Transfer batter to prepared pan.
- Bake brownies until slightly puffed and dry-looking and tester inserted into center comes out with some moist batter attached, about 20 minutes. Let cool completely in pan on rack.
- Run a knife around the inside edge of the brownie pan. Use the overhanging foil as an aid and gently lift the brownies from the pan. The pan I used produces a brownie that is 1/2" thick. Be sure your round cutter is taller than 1/2". Press round cutter (mine is 1-3/8'' in diameter) firmly into the cooled brownie. Use a thin metal spatula to lift the cookie cutter filled with brownie from the foil. Gently press the brownie out of the cutter. Repeat the cutting process until your brownie looks like a big piece of swiss cheese.
