KAHLUA® HOMEMADE
This recipe I love to make around Thanksgiving to drink or give as presents at Christmastime. The longer you wait the better it is, try and wait 4 weeks. I got this recipe from one of my own concoctions from trying several different recipes.

- Combine water and instant coffee in a pot; bring to a boil. Stir light brown sugar and dark brown sugar into coffee, reduce heat, and simmer, stirring every 15 minutes, for 3 hours. Remove from heat and cool completely.
- Pour coffee mixture into a clean, large glass jar. Add grain alcohol, vanilla extract, and vanilla bean; cover with a tight-fitting lid. Let sit in a dark place, shaking occasionally, for 1 month. Divide into bottles, leaving a piece of vanilla bean in each.

KALUA PORK
Savory pork butt with a smokey flavor. Any coarse salt can be used in place of the Hawaiian sea salt.

- Preheat oven to 400 degrees F (200 degrees C).
- Place pork fat-side up in a roasting pan or deep casserole dish. Combine water and liquid smoke; pour over meat. Sprinkle with salt. Cover and roast in a preheated oven for three hours. Remove from pan and shred.

KAHLUA ZESTY BBQ SAUCE
I'm posting this in response to a request. It got this out of a cookbook of all kahlua recipes back in the 70s or 80s. Any coffee flavored liqour should work if you don't have kahlua.

Steps:
- Place butter in a small saucepan over medium-high heat.
- Once melted, add onions and saute until soft.
- Add remaining ingredients, mixing well.
- Bring to a boil, then reduce heat.
- Simmer for 5 minutes stirring frequently.
- Use on chicken or ribs- be sure to wait till the meat is almost done to baste with sauce so that the sugar in it doesn't burn.

- 1. Set your grill for indirect cooking on medium heat.
- 2. To make the sauce: stir in all ingredients to combine. Simmer for 10 minutes, Remove from heat to cool. will keep in refridgerator for about a week.
- 3. For the all-purpose rub: 2 pkts of McCormick chili seasoning, 3 Tbsp granulated garlic, 1 Tbsp salt, 1 Tbsp all purpose seasoning, 2 Tbsp sugar. Combine all ingredients.
- 4. In a saucepan, combine barbecue sauce and Kahlua. Bring to a boil and remove from heat. Set aside 3/4 cup for basting.
- 5. Place ribs, meat side down on a roasting pan and cover with the remaining sauce. Cover pan with aluminum foil and place on grill away from heat. Cover grill and cook for 1 1/2 to 2 hours. ( I use gas, but i fyou are using charcoal, you may need to add more briquettes to the pile after an hour or so.
- 6. Carefully remove ribs from pan and place meat sides up on grill. Baste with reserved sauce (I keep a little for dipping as some like extra sauce); grill 15 minutes. Turn and baste; grill for additional 15 minutes.

- 1. Make your sauce in a pan on stove top. Add butter and shallots to saucepan and heat on med-high until opaque. Add garlic by grating and cook for another minute.
- 2. Add the rest of your sauce ingredients, bring to boil. Turn heat to simmer and cook down for another 20-30 min.
- 3. Slice ham.
- 4. Put on a grill until nice grill marks form. Just a few minutes on each side. Brushing with sauce while grilling.
- 5. Add steaks back in sauce or serve extra sauce on the side. Serve on a bun.
- 6. To make it perfect, I'm grilling some pineapple next time and brushing the sauce on. A nice change from your basic hamburger.

- In a saucepan over medium high heat, cook the sugar until it starts to melt on the bottom. During this step, you need to stir it pretty continuously so it doesn't burn. While stirring, the sugar will stick together and form hard clumps/shards.
- At this point, you don't have to stir AS much because you want the sugar to get hot enough to melt and turn a golden brown color. So stir the sugar, give it a moment, and then stir again. And when I say "moment," I don't mean walk away and come back. Just stand there and give it a second. Then stir again, repeating this process until all the clumps are melted and the sugar has turned golden brown. Reduce heat to medium.
- Stirring continuously with one hand, add the butter with the other. Because the butter is colder than the caramel, the mixture will bubble and sizzle quite a bit. But just keep stirring!
- Once all the butter has completely melted, still continuously stirring, slowly pour in the Kahlua. The mixture will sizzle even more than before. I kind of added a little Kahlua, stirred until it stopped sizzling, added some more, and so on until all the Kahlua was added.
