KABOCHA SQUASH MINI MUFFINS

Kabocha Squash Mini Muffins image

This is a simple yet comforting muffin. Tastes more like a spice cake that will stay moist for days. I make this all throughout the fall when kabocha squash is in season.

Time 1h10m

Yield 24

Number Of Ingredients 15

cooking spray
1 (2 pound) kabocha squash, seeded and cut into wedges
½ cup white sugar
¼ cup brown sugar
2 tablespoons canola oil
1 tablespoon olive oil
2 eggs
½ teaspoon vanilla extract
½ cup whole wheat flour
½ cup all-purpose flour
2 teaspoons ground cinnamon
1 ½ teaspoons baking powder
1 teaspoon baking soda
⅛ teaspoon salt
¼ cup apple cider

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil and grease lightly with cooking spray.
  • Place kabocha squash skin-side down on the baking sheet.
  • Roast in the preheated oven until fork-tender, 30 to 40 minutes. Cool until easily handled, about 10 minutes. Scoop squash flesh into a food processor; puree until smooth. Discard skin.
  • Reduce oven temperature to 350 degrees F (175 degrees C). Grease 2 mini muffin tins with cooking spray.
  • Stir white sugar, brown sugar, canola oil, and olive oil in a large bowl until smooth. Beat in eggs, 1 at a time. Stir in 3/4 cup pureed squash and vanilla extract.
  • Mix whole wheat flour, all-purpose flour, cinnamon, baking powder, baking soda, and salt together in a bowl. Stir gradually into the sugar mixture, alternating with apple cider, until smooth. Pour into muffin tins, filling each cup 3/4 full.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 10 minutes.

  • If you don't have your kabocha puree yet, take a kabocha half, seeds removed, and slice it into 1 inch thick slices. Place the slices on a microwave safe plate, cover with plastic wrap, and microwave for 3 minutes. Check with fork to test if it's fully soft. If it isn't easy to pierce it with a fork, microwave for another couple of minutes. Remove from microwave, use a spoon to get rid of the peel, and either mash it up until smooth, or push through a sieve.
  • Preheat oven to 350 degrees F. In a large mixing bowl, using a whisk, cream the butter. Add the oil, mix until thoroughly combined, and then stir in the sugar and vanilla until fully combined.
  • Stir in the eggs one at a time, mixing well after each addition. Add the flour and baking powder and, using a rubber spatula, stir until just combined (do not over stir!). Add the kabocha puree and fold in until combined, and dry spots are gone.
  • Line a cupcake tin with 12 cupcake liners, and divide the batter among them. Bake in the oven for about 18-20 minutes, or until a toothpick comes out clean.

WHAT IS A KABOCHA SQUASH? HERE'S HOW TO COOK IT | FN DISH ...

From foodnetwork.com
Estimated Reading Time 4 mins
  • The best kabocha squash is heavy for its size. A kabocha squash is about the same size as a sugar pumpkin, though flatter (and not orange!). Botanically, a kabocha squash is a fruit and, as is the case with most fruits, Jet says, you want one that is heavy for its size.
  • You can eat the skin! And that means less work for you. Kabocha squash is sweet; if you love sweet potatoes and yams, you will love kabocha squash. It stays sweet throughout cooking and keeps its creamy texture, unlike an acorn or delicata squash, which both tend to get wet during cooking.
  • A towel makes cutting a kabocha squash SO much easier. Pull off the stem and place your kabocha squash, flat-side down, on a firm surface — you don't want it to roll around!
  • You should always roast it with the skin facing out. Jet arranges his cut kabocha squash with the thicker sides facing out. In an oven, Jet says, air is circulating, which means the squash will cook from the outside (the skin side) in and be less likely to burn.
  • It's fitting for a weeknight but delicious enough to serve for Thanksgiving (or any holiday meal, really). Kabocha squash is a versatile ingredient that is great in everything from lasagna to pie.

  • Roasted Winter Vegetable Platter with Miso Aioli and Romesco Sauce. Don’t let the season stop you from serving crudités. Aran Goyoaga’s version is hearty and autumnal (and that squash-aioli combo is to die for).
  • Roasted Squash, Caramelized Fig and Feta Salad. Fall salads might be our favorite kind, thanks to all the hearty-yet-healthy toppings. With this easy recipe, everything roasts on one pan—a win-win.
  • Turmeric Ginger Kabocha Squash Soup. She’s creamy, dreamy and ready in 20 minutes (not to mention dairy- and gluten-free).
  • Stuffed Kabocha Squash. Squash bowls are infinitely superior to regular bowls, especially when they’re filled with this vegan and Paleo-friendly roasted vegetable medley.
  • Roasted Squash Salad with White Beans, Bread Crumbs and Preserved Lemon. With all that caramelized squash, you won’t miss the lettuce.
  • Kabocha and Kale Miso Sesame Soba Salad. Gena Hamshaw’s Asian-inspired noodle salad is satisfying but not too carb-laden, and it keeps really well in the fridge.
  • Skillet Roasted Moroccan Chicken and Olive Tagine. The briny olives and lemon are necessary to offset the sweetness of the squash. Serve it with couscous to soak up all those juices.
  • Kabocha Ravioli with a Toasted Hazelnut Cream Sauce. Cool weather calls for pasta, and lots of it. This dish feels fancy, but is surprisingly simple to make.
  • Kabocha Squash Buttermilk Pie with a Crème Fraîche Swirl. Considering how sweet and custardy this gluten-free stunner is, you might never go back to pumpkin.
  • Kabocha Squash Lentil Curry. It might not be the prettiest, but it sure is the tastiest. And even though this curry tastes decadently creamy, it comes in at under 400 calories per serving.
