Yield Makes 6 servings

Brown sugar cream:
1 tablespoon water
1/2 teaspoon unflavored gelatin
2 cups heavy whipping cream
1/3 cup (packed) golden brown sugar
3 large egg whites
Cakes:
2 cups 3/4-inch cubes peeled seeded kabocha squash (from one 3-pound squash)
1 cup whole milk
1 vanilla bean, split lengthwise
Nonstick vegetable oil spray
2/3 cup (packed) golden brown sugar
6 tablespoons olive oil
1/4 cup lager (mild-flavored beer)
1 large egg
3/4 cup all purpose flour
1/2 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon salt

Steps:

  • For brown sugar cream:
  • Place 1 tablespoon water in cup. Sprinkle gelatin over. Let stand 10 minutes to soften.
  • Stir cream and sugar in medium saucepan over medium heat until sugar dissolves. Add egg whites and whisk until mixture thickens, about 12 minutes (do not boil). Add gelatin mixture; whisk until dissolved. Strain into large clean bowl. Chill until cold. Cover and chill overnight.
  • For cakes:
  • Combine squash and milk in heavy small saucepan. Scrape in seeds from vanilla bean; add bean. Bring to simmer over medium heat. Partially cover, reduce heat to medium-low, and simmer until squash is very tender, about 20 minutes. Remove vanilla bean. Drain squash. Place in processor and blend until smooth. DO AHEAD: Can be made 1 day ahead. Cover and chill.
  • Preheat oven to 375°F. Spray six 3/4cup ramekins with nonstick spray. Place 1/2 cup squash puree in large bowl (reserve remaining puree for another use). Add sugar, oil, beer, and egg to puree and beat to blend. Sift flour, cinnamon, baking soda, and salt over; beat to blend. Divide batter among prepared ramekins.
  • Bake cakes until tester inserted into center comes out clean, about 18 minutes. Cool cakes in ramekins. Turn out onto plates. Beat brown sugar cream to firm peaks; spoon alongside cakes.

KABOCHA SQUASH MASCARPONE CHEESECAKE

Kabocha Squash Mascarpone Cheesecake image

It wasn't until a few years ago that I discovered the kabocha squash. I don't know how I missed it! It's the Japanese version of a pumpkin and I adore it. It's super flavor dense with a lovely texture, and it doesn't have as much water as a butternut squash or a pumpkin, so it's excellent for baking. It's also a pretty deep green on the outside and a happy shade of yellow-orange on the inside-just one more reason to love it. I've even heard that in some cultures the kabocha is considered an aphrodisiac. I'll let you decide if that's true or not!

Time 4h

Yield 10 to 12 servings

Number Of Ingredients 17

1/2 medium kabocha squash
Extra virgin olive oil
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1/2 teaspoon ground ginger
2 cups mascarpone cheese
1/2 cup packed light brown sugar
1 teaspoon vanilla
3/4 cup sweetened condensed milk
4 large eggs
2 tablespoons bourbon
2 cups gingersnap cookie crumbs
1/4 cup packed light brown sugar
1/2 teaspoon cinnamon
Pinch kosher salt
6 tablespoons unsalted butter, melted

Steps:

  • For the squash filling: Preheat the oven to 350 degrees F.
  • Scoop out the seeds and guts from the squash. Cut the squash into thirds and rub each section with olive oil. Place the oiled sections on a baking sheet and transfer to the oven.
  • Bake the squash for 1 hour, rotating the tray and turning over the squash about halfway
  • through the cooking time. When done, the squash should be fork tender-a fork should slide in and out easily. Let the squash cool.
  • While the squash is roasting, prepare the crust: In a large bowl combine the gingersnap crumbs, brown sugar, cinnamon, salt, and melted butter. Stir well to combine. Press the crust onto the bottom and sides of a 9-inch springform pan. Reserve in the fridge.
  • When the squash is cool enough to handle, remove and discard the skin and puree the flesh in the food processor until smooth. Add the cinnamon, allspice, nutmeg, and ginger and pulse to combine.
  • In a large mixing bowl combine the mascarpone, brown sugar, and vanilla and beat with a hand mixer until combined. Beat in the squash mixture along with the condensed milk. Beat in the eggs 1 at a time until combined and whisk in the bourbon.
  • Pour the batter into the prepared crust and bake for 55 to 60 minutes or until set in the middle, rotating the pan halfway during the baking time. If the top of the cheesecake starts to brown, tent it with aluminum foil. Remove the cheesecake from the oven and let cool completely before serving. This will be good today-and even better tomorrow.

KABOCHA SQUASH PIE WITH SPICED CRUST

Kabocha Squash Pie with Spiced Crust image

Time 4h35m

Yield 8 to 10 servings

Number Of Ingredients 20

1 small to medium kabocha squash, cut into sixths, seeds removed
Olive oil
1 1/2 cups all-purpose flour, plus more for bench flour
1/4 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon allspice
1/2 teaspoon ground ginger
2 grates fresh nutmeg
Pinch kosher salt
1 1/2 sticks cold butter, cut into pea-size pieces
1 egg yolk
2 to 3 teaspoons ice cold water
4 large eggs
3/4 cup heavy cream
3/4 cup sweetened condensed milk
1/2 cup light brown sugar
1/4 cup bourbon, optional
1 teaspoon vanilla extract
Heavy cream, for garnish
Pinch cinnamon, for garning

Steps:

  • For the squash: Preheat the oven to 375 degrees F.
  • Put the squash on a sheet tray, toss lightly with olive oil and toss in the oven. Roast the squash until a fork slides in and out easily, about 45 minutes. Remove the squash from the oven and let cool. Remove the skin and puree until smooth. Place 3 cups squash puree in a large mixing bowl, reserve the rest for another purpose.
  • For the crust: In the bowl of a food processor combine all the flour, sugar, cinnamon, allspice, ginger, nutmeg and salt. Toss in the butter and pulse until the mixture looks like grated parmigiano. Add in the egg yolk and a few drops of the ice water. Pulse until the mixture starts to come together into a ball. Add a few more drops of water if the mixture still seems dry.
  • Turn the dough out onto a lightly floured work board. Using the heels of your hand, schmear the dough straight forward and roll it back with your fingertips. Repeat this process two more times. Form the dough into a disk, wrap in plastic and refrigerate for at least 1 hour.
  • Remove the dough from the fridge and let warm up for 5 minutes. Roll the dough out into a large circle and lay in a deep pie dish. Trim the dough all the way around so there is only 1/2-inch overhang. Fold the dough under and crimp the edges decoratively. Make sure the edges don't extend beyond the pie plate rim. Prick the dough all over with a fork. Lay aluminum foil over the dough to cover and fill the pie plate with baking beans.
  • Place the pie plate on a sheet tray and bake in the oven for 15 minutes. Remove the foil and baking beans and bake for 5 more minutes. Remove from the oven and let cool.
  • Reduce the heat in the oven to 350 degrees F.
  • For the filling: In a small bowl, beat the eggs until they are smooth. Beat in the cream. Add the cream/egg mixture to the squash puree and beat to combine. Beat in the condensed milk, brown sugar, bourbon if using and vanilla. Beat until the mixture is well combined, 1 to 2 minutes.
  • Pour the squash mixture into the prepared pie shell. Place on the sheet tray and place back into the oven for 25 minutes. Rotate the pie and bake until the mixture barely jiggles when shaken, another 20 to 25 minutes. If the crust starts to get too dark, place a pie shield ring on the pie to protect the edges from burning.
  • Remove the pie from the oven and let it cool for at least 1 hour before cutting.
  • Whip heavy cream with a pinch of cinnamon until stiff peaks, and top the pie as a garnish.
