I got this recipe from a cookbook by Frank Davis a Chef from New Orleans. I have doctored it up over the years to suit my tastes. I hope you enjoy.

Number Of Ingredients 16

1 1/2 lbs andouille sausages or 1 1/2 lbs smoked sausage, diced large
1 1/2 lbs boneless skinless chicken, cubed (I like dark meat best)
1 1/2 cups rice
2 cups chicken stock
3 cups onions, chopped
1 cup celery, chopped with leaves
1 cup green bell pepper
1 1/2 cups red bell peppers
1/2 teaspoon cayenne pepper
1 teaspoon thyme
1/2 teaspoon oregano
1/2 teaspoon paprika
3 cups tomatoes, chopped or 1 (15 ounce) can chopped tomatoes
1/4 cup flat-leaf Italian parsley (reserve)
1/2 cup scallion, green end only (reserve)
1 lb shrimp, peeled and deveined raw (Optional, reserve)

Steps:

  • 1.) Brown the sausage till crisp, remove and set aside.
  • 2.) Brown the chicken in sausage oil, remove and set aside.
  • 3.) Saute your Holy Trinity (peppers, celery and onion) 5minutes.
  • 4.) Add dry spices and cook 5 minutes more.
  • 5.) Add meat, tomatoes, rice and stock and bring to a simmer.
  • 6.) Now you can cover and cook on stove top for 1 hour or transfer to a 10 X15 glass pan cover with foil and cook 1 hour.
  • 7.) If you want to add shrimp do it at minute 45 and cook for 15 more minutes.
  • 8.) Now add Fresh Parsley and scallions and fold into rice mixture and serve with ice cold beer!

Whether it's sitting next to some smoky ribs or just a humble hot dog, this deli-style macaroni salad will always be a crowd favorite, as long as you pay attention to a few key details.

1 cup mayonnaise
¼ cup white vinegar
2 tablespoons Dijon mustard
2 teaspoons kosher salt, or more to taste
½ teaspoon ground black pepper
⅛ teaspoon cayenne pepper
1 tablespoon white sugar, or more to taste
1 cup finely diced celery
¾ cup diced red bell pepper
½ cup grated carrot
½ cup chopped green onions, white and light parts
¼ cup diced jalapeno pepper
¼ cup diced poblano pepper
1 (16 ounce) package uncooked elbow macaroni
1 tablespoon mayonnaise
1 tablespoon water

Steps:

  • Whisk 1 cup mayonnaise, vinegar, Dijon mustard, salt, black pepper, and cayenne pepper together in a bowl until well blended; whisk in sugar. Stir in celery, red bell pepper, carrot, onions, and jalapeno and poblano peppers. Refrigerate until macaroni is ready to dress.
  • Bring a large pot of well salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through, 8 to 10 minutes. Drain but do not rinse. Allow macaroni to drain in a colander about 5 minutes, shaking out moisture from time to time. Pour macaroni into large bowl; toss to separate and cool to room temperature. Macaroni should be sticky.
  • Pour dressing over macaroni and stir until dressing is evenly distributed. Cover with plastic wrap. Refrigerate at least 4 hours or, ideally, overnight to allow dressing to absorb into the macaroni.
  • Stir salad before serving. Mix 1 tablespoon mayonnaise and 1 tablespoon water into salad for fresher look.

Pasta salad is almost always the most disappointing side dish at the picnic or cookout, but this recipe shows you how to transform what is normally an "afterthought" to a dish that's good enough to enjoy on its own, or as the perfect complement to grilled meat. Top this with extra fresh chopped herbs if you like.

3 tablespoons Dijon mustard
¼ cup cider vinegar
¼ cup rice vinegar
1 teaspoon kosher salt
2 teaspoons white sugar
1 pinch cayenne pepper
1 cup olive oil
2 teaspoons chopped fresh tarragon
2 teaspoons chopped fresh dill
2 teaspoons chopped fresh Italian parsley
1 teaspoon chopped fresh chives
1 teaspoon chopped fresh thyme
1 pound rotini (corkscrew) pasta
1 cup sliced snow peas
1 cup thinly sliced carrots
½ cup shelled English peas
1 cup broccoli florets
½ cup diced bell peppers
1 cup sliced cherry tomatoes
¼ cup finely diced red onion
2 tablespoons sliced green onions
1 teaspoon kosher salt, or to taste

Steps:

  • Whisk Dijon mustard, cider vinegar, rice vinegar, salt, sugar, and cayenne together in a large bowl for about 30 seconds. Whisk in olive oil in 1-teaspoon increments until emulsified. Whisk in tarragon, dill, parsley, chives, and thyme. Remove and reserve 1/2 of the dressing in a separate small bowl.
  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Add snow peas, carrots, peas, and broccoli about 2 minutes before the pasta is done. Drain pasta and veggies well, but do not rinse.
  • Transfer hot pasta mixture to the vinaigrette in the large mixing bowl and toss well to combine. Let rest for 5 minutes and toss again. Toss occasionally until the mixture is almost room temperature, 15 to 20 minutes.
  • Add bell peppers, cherry tomatoes, red onion, green onions, salt, and the reserved dressing and toss well.
  • Wrap and chill in the refrigerator for 3 to 4 hours before serving. Toss and adjust seasoning before serving.

16 ounces rotelle pasta
16 cups water
5 tablespoons chicken soup base, paste
2 teaspoons turmeric (optional for color)
16 ounces bacon, cooked and chopped (reserve 2 tablespoons bacon fat)
2 cups mayonnaise
1/2 cup lemon juice
4 teaspoons sugar
2 cups grape tomatoes, cut in 1/2 (1/4 cup diced fine)
1 cup green onion, chopped (end to end)
2 teaspoons pepper (fresh ground)
4 cups iceberg lettuce, sliced thin and diced

Steps:

  • 1.) Combine mayo, lemon juice, sugar, pepper, green onion, bacon fat, diced tomatoes chopped fine and 3 strips bacon(chopped fine) for the dressing. Let set overnight for best flavor!
  • 2.) Bring water to boil, and add chicken soup base paste and turmeric and cook pasta as directed. (my pasta is bright yellow and presentation is very colorful).
  • 3.) Combine all remaining ingredients except lettuce. Season with salt if needed. Reserve some bacon and tomato for garnish on top of lettuce. Layer lettuce first then garnish on top when serving.

2 cups whole milk
2 cups mayonnaise
2 tablespoons brown sugar
1/2 teaspoon salt
2 teaspoons pepper (or to taste)
1 lb elbow macaroni
1/2 cup cider vinegar
6 green onions, sliced thin end to end
3/4 cup carrot, peeled and grated
1 cup celery, chopped fine

Steps:

  • Whisk 1 1/2 cups milk, 1 cup mayo, sugar, 1/2 teaspoon salt, and 2 teaspoons pepper in bowl set aside.
  • Bring 4 quarts of salted water to boil in large pot. Add pasta and cook until very soft, about 15 minutes. Drain pasta and return to pot. Add vinegar and toss until absorbed. Transfer to bowl. Cool pasta 10 minutes, then stir in dressing until pasta is well coated. Cool completely.
  • Add scallions, carrot, celery, 1/2 cup milk,1 cup mayo stir to combine.Now add to pasta. Season with salt and pepper. Transfer to large serving bowl and refrigerate, covered, for at least one hour or up to two days.
  • Add peas, broccoli diced ham ect. to make your own signature dish :).
