FRENCH ONION DIP RECIPE
French onion dip is an easy appetizer with caramelized onions and fresh ingredients. This party appetizer tastes even better if made ahead!

Steps:
- Chop the onions into large dice, about 1/2" pieces. Smaller pieces of onion are easier to scoop in the dip!
- Melt butter, in a large pan over medium-high heat. Add the onions, salt, pepper, onion powder, and garlic powder. Cook for 5 minutes, stirring.
- Reduce heat to low and cook for 25-40 minutes until golden brown and caramelized. The onions will shrink alot as they cook. Stir every 5-10 minutes, and once caramelized remove from stove and allow to cool. The secret to perfectly caramelized onions for this dip is to cook them on a low heat for a long time. They need time to brown, and high heat will burn them.
- In a large bowl, mix the caramelized onion mixture, Worcestershire sauce, and 2 cups sour cream. Mix well in a bowl, cover in plastic wrap, and chill in the fridge. Can be made a couple of days ahead.
- Serve with potato chips, fresh vegetables, or crackers. Garnish with fresh chives or green onions.
- Store leftovers in an airtight container, use within a week.

EVERYTHING ONION DIP
This onion dip is made with everything onions and is everything you'd ever want in an onion dip. Yellow, red, and green onions join savory shallots, flavorful chives, and the key ingredient, dried onion, which makes it taste like the French onion dip of your childhood. You can serve this dip with anything and everything, but if you have to pick, serve it with some sturdy, top-shelf potato chips for any big game or party. And if you're lucky enough to have leftovers, it makes the best baked potato topping!

- Cut both ends off the yellow onion and cut evenly into 2 halves. Remove and discard skin. Place onion halves on a cutting board with cut-sides down. Make vertical slices against the grain, then turn and slice across the cuts to chop. Chop again if you'd like smaller pieces. You should have about 2 cups chopped onion.
- Heat olive oil in a large skillet over high heat. Transfer onion and salt into the hot oil. Cook until onions are deep brown in color, 7 to 8 minutes. Add shallots and red onions; stir and saute until they start to soften and sweeten, 3 to 4 minutes. Turn off the heat and stir in garlic and dried onion. Set aside to cool completely, about 20 minutes.
- Combine mayonnaise, sour cream, pepper, cayenne, and cooled onion mixture; mix until thoroughly combined. Cover and chill in the refrigerator for 4 to 12 hours, or overnight.
- Remove dip from the refrigerator and stir in green onions and chives. Taste and adjust seasoning. Transfer dip into a serving bowl and garnish with more green onions and chives to serve.

CARAMELIZED FRENCH ONION DIP
My family loves French onion dip but I find most recipes made from fresh onions tend to be very sweet. By adding the beef bouillon and Worcestershire sauce, it deepens the flavors and slows the caramelization of the onions. The result is a savory dip that goes great with veggies, crackers, and chips. Enjoy!

- Heat oil in a large saute pan over medium heat until shimmering, about 2 minutes. Add onions and cook, stirring occasionally, for 5 minutes. Add garlic and cook until fragrant, about 30 seconds. Add 1/2 cup water, Worcestershire, beef base, onion powder, and thyme. Increase heat and bring to a boil, stirring constantly until beef base is dissolved.
- Reduce heat to a simmer and cook, stirring occasionally, 30 to 45 minutes. Liquid will slowly evaporate and onions will caramelize. If onions start to stick to the pan, throw in a splash of water and scrape up the delicious bits. Taste before adding sugar, salt, and pepper. Once seasoned to your liking, remove from the heat and let cool to room temperature, 15 to 20 minutes.
- Mix cooled onions with sour cream until well combined. Chill for 1 hour before serving.

Okay new year time to be healthy right? Following the south beach or any low carb diet and they all recomend cottage cheese. Well I can't seem to get it past my mouth (the look tastes fine I am sure). So while packing my lunch and wishing I had dip for all those vegetables I had to choke down I thought I would try altering my favorite dip recipe and wow tastes just great!

- In a fry pan over medium-high heat, melt the butter.
- Add the onion and salt and cook, stirring often, until soft and caramelized, about 20 minutes.
- Add the garlic and cook for 1 minute.
- Remove the pan from the heat.
- Add the Worcestershire sauce and stir to scrape up the browned bits from the pan bottom.
- Transfer the onion to a small bowl and let cool to room temperature.
- In a bowl, stir together the sour cream, mayonnaise, cayenne pepper and black pepper.
- Stir in the onion.
- Cover with plastic wrap and refrigerate for at least 30 minutes or up to 1 week.
- Serve with potato chips and crudites for dipping.
- Makes about 2 cups.
