CHEESE-STUFFED TATER TOTS RECIPE
Combine baked potatoes and cheese to make baked, not fried, stuffed tater tots adults will love as much as the kids.

Steps:
- Preheat oven to 350 degrees.
- Peel skin from baked and cooled potatoes and coarsely grate into a mixing bowl. Sprinkle salt, chives, garlic powder and potato starch over potatoes then toss gently to coat. Add shredded cheddar cheese then toss gently to incorporate.
- Press small amount of potato mixture together in your hand (if it falls apart, add more starch in 1 tsp increments until mixture holds its form). Cut string cheese in half lengthwise, then cut into ½"- ¾" long pieces.
- Place 1 heaping Tbsp of potato mixture into palm of hand and indent with thumb then place 1 piece of string cheese in center of potato mixture. Cover string cheese completely with potatoes (form a tot with the cheese in the center of the potato mixture). Continue to form tater tots, pressing firmly so they hold together. Repeat with all remaining filling and cheese.
- Line baking sheet with foil or parchment paper then coat with cooking spray. Evenly space tots on baking sheet then brush with oil and bake 12−15 minutes, turning once halfway through baking.
- Remove from oven, cool slightly then serve.

EGG STUFFED TATERS

- Preheat oven to 450 degrees F (230 degrees C).
- Cook bacon in large non-stick skillet until crisp. Remove bacon from skillet and all but 1 tablespoon (15 mL) drippings and any extra brown bits. Coarsely chop bacon.
- Meanwhile, cut potatoes in half lengthwise. Scoop out flesh, leaving 1/4-inch (6 mm) thick walls. Coarsely chop flesh. Arrange potato shells cut side up on baking sheet and brush inside with olive oil. Bake until lightly browned, about 10-12 minutes.
- In same skillet, cook chopped potato, salt and 1/4 teaspoon (1 mL) pepper in bacon drippings, turning often, until browned. Place in bowl.
- In small bowl, beat eggs with remaining pepper. Heat butter in medium skillet. Cook eggs, stirring, until set but still soft, about 2 minutes.
- Add to browned potatoes and toss with chopped bacon, half of cheese and green onions. Fill potato shells with egg mixture and sprinkle with remaining cheese. Bake until cheese melts, about 2 minutes. Serve warm.

This recipe found me about a year ago and I have absolutely loved it ever since! Given its ingredients I was surprised to find it seems to be a hit no matter where it's served.

- Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper.
- Lay each slice of bacon onto a work surface and place a potato nugget in the center of each bacon slice. Cut a slit down the center of each potato nugget and place a Cheddar cheese piece into the slit. Top each nugget with a dash of hot sauce. Wrap bacon around each filled potato nugget and secure the bacon to the nugget with a toothpick. Transfer the wrapped nuggets to the prepared baking sheet.
- Bake in the preheated oven until nuggets are cooked through and bacon is crispy, 15 to 20 minutes.

- Cook the cauliflower until soft, about 8-10 minutes; drain very well and break up the florets a bit with a spoon. It's also very good if you leave the cauliflower a little chunky. Put in a greased 8 x 8" baking pan or a 2-quart casserole. Mix in the cream cheese, cheddar, green onion, salt, pepper and bacon. Dust the top with paprika, if desired. Bake at 350º for 20-40 minutes, until browned and bubbly. Or, microwave, loosely covered, for about 40 minutes on 50% power, turning the dish after 20 minutes. Makes 6 servings Can be frozen
