STOLEN GARLIC CHICKEN LIVERS
This is the ultimate Garlic Chicken Liver recipe. Simple, quick, minimal ingredients. Stolen from my local Italian restaurant after two weeks working there as a dish washer just to get the recipe. They've retired now so I don't think they'll mind me divulging their secret!

Steps:
- Wash, trim and dry the Chicken Livers.
- DRY fry them, NO OIL, in a frying pan, for three or four minutes until cooked through.
- Whilst still on the cooker add the oil, lemon juice and salt to taste.
- Stir once gently to mix.
- Serve immediately into a single portion dish and sprinkle liberally with chopped garlic, the more the better.
- The dry fry technique prevents the liver from browning and keeps it tender enough to melt in your mouth.
- Don't use Virgin Olive oil, the Greeks and Italians only use that for salads and dressings, very rarely for cooking.

- Heat a skillet over medium heat. Cook and stir livers in the hot skillet until cooked through, 3 to 5 minutes. Add olive oil, lemon juice, and salt to livers; gently stir until mixed. Remove skillet from heat and sprinkle garlic over livers.

BAKED CHICKEN LIVERS
The smokiness of the bacon really gives wonderful flavor! Just try it...you will love it!

- 1. Heat oven to 350*. Spray sheet pan with non-stick cooking spray or cover with parchment paper
- 2. Drain and rinse chicken livers. Cut larger pieces into smaller pieces
- 3. Place livers in a bowl, add spices, mix lightly to coat with spices
- 4. Cut bacon in half
- 5. Wrap one half of bacon around each liver, place on prepared pan. Lightly dust with garlic powder and black pepper. You do not need much salt for this dish!
- 6. Cook for 15min and check them. Livers will be done when they are browned and bacon is browned and crispy. Takes about 45min altogether.
- 7. Serve with a smokey BBQ or a rustic dijon style mustard.
AIR FRYER CHICKEN LIVERS
This ten minute meal is so simple and delicious. It is so much easier than pan frying or baking in the oven, and uses a lot less oil. {WW 6 Purple, 7 Green, 6 Blue}

- Remove chicken livers from container, rinse and dry on paper towel.
- Combine the flour, cornstarch and seasonings in a small bowl. Combine the egg and milk in a separate bowl.
- Dip the livers in the milk mixture and then in the flour mixture. Lay on the air fryer tray or basket. Continue until all are complete. Don't crowd the pan when cooking.
- Using the Spray Olive Oil, spray the livers and the flour mixture will start to get moist but not wet and goopy.
- Cook at 390 for 10 minutes. Turn them over at the half way point and see if they need a bit more spray oil. Continue cooking until the internal temperature reaches 165 degrees. They will be a deep golden brown.

CHICKEN LIVERS WITH ONION
Chicken liver and onions sautéed in butter. A simple dish from my Polish grandma's recipe book.

- Melt one third of the butter in a skillet over medium heat. Chop the onion and add it to the pan. Sautée the onion until soft, about 3 minutes. Lower the heat to medium-low, add the water and cover the pan. Let the onion swell.
- In the meantime, prepare the chicken livers. Trim off any spleens if present. Cut the larger chunks to make all the pieces about the same size. Coat in flour all the livers.
- Add the remaining butter to the pan, return the heat to medium-high and add the floured liver. Turn the livers often to ensure they get cooked through. Liver will release a reddish liquid while cooking, make sure to cook it all off. When it has stopped "bleeding" it should have cooked through - check one of the thickest pieces by cutting it in half.
- When completely cooked through, remove from the heat and serve with a sprinkle of salt flakes on top.

- Part 1. In one frying pan, sauté the onions two tablespoons of olive oil and a pinch of salt for 4-5 minutes, until golden and softened. Then add the garlic and stir for a minute. Follow by honey, tamari (or coconut aminos) and fish sauce. Stir through and take off the heat.
- Part 2. In another skillet, heat coconut oil or olive oil over medium-high heat. Once hot, add the chicken livers and sprinkle with salt and pepper. Cook over medium-high heat for 2 minutes on each side. Then transfer to the pan with the onions and place back on the heat. Stir for about 20-30 seconds to coat the liver pieces in the onion and the sauce. Garnish with some chopped spring onions/scallions, sesame seeds and chilli.

- Prepare all ingredients before starting to cook. Clean livers by separating into lobes, then trim off all fat and connective tissue. Rinse, then pat dry.
- Heat the oil and butter together in a large wide frying pan over medium heat. Add a few livers to the flour mixture and turn to evenly coat. Place in the hot pan.
- Add pepper and sliced onion to the pan along with water. Turn heat to medium high and stir often until water is evaporated, about 5 minutes.
- Return livers to the pan. Pour in the sauce. Reduce the heat to medium. Stir gently and often until as thick as you like, about 2 minutes. Spoon over rice or a bed of spinach and scatter with green onions.

- Preheat the oven to 350°. Set the chicken in a roasting pan just large enough to hold it. Sprinkle the thyme in the cavity and season the bird inside and out with salt. Tie the legs together. Pour the olive oil over the chicken and scatter the garlic cloves and peppercorns in the pan.
- Roast the chicken for about 20 minutes, or until the garlic is soft and golden. Transfer the garlic to a coarse sieve set over a small saucepan. Roast the chicken for about 1 hour longer, or until the juices in the cavity run clear. Tip the chicken in the pan to drain the juices, then transfer the bird to a carving board and cover loosely with foil. Skim the fat from the pan juices and reserve 1 tablespoon. Press the garlic through the sieve into the saucepan and pour in the pan juices with the peppercorns.
- In a medium skillet, heat the 1 tablespoon of reserved fat just until smoking. Add the chicken livers, season with salt and freshly ground pepper and cook over high heat until browned on both sides and pink in the center, about 1 minute. Add the livers to the pan sauce and bring the sauce to a simmer. Season with salt and remove from the heat.
- Carve the chicken and arrange on plates. Spoon the sauce on top, garnish with the olives and parsley and serve.
