This recipe is a summertime favorite. We fix it often on our portable grill when we go boating. My husband thinks it's great. It's the sauce that makes it!

Steps:
- In a small saucepan, combine the first five ingredients; bring to a boil over medium heat, stirring frequently. Remove from the heat; cool. Set aside 1/2 cup for basting. Place remaining sauce in a large resealable plastic bag; add shrimp. Seal bag; refrigerate for 30 minutes. , Drain and discard marinade. Thread the shrimp, green peppers and mushrooms alternately on six metal or soaked wooden skewers. Grill, uncovered, over medium-hot heat for 2 minutes on each side. Turn and brush with reserved sauce. Continue grilling for 4-8 minutes or until shrimp turn pink, turning and basting several times.

- Pre-heat oil to 350 degrees in medium frying pan.
- In a medium, mixing bowl, combine coconut and panko.
- Dredge shrimp in flour, then in the egg mixture, then in the panko and coconut mix, pressing down firmly to ensure proper breading.
- Fry shrimp until golden brown being sure not to burn. (The coconut contains a high sugar content, which may burn quickly.)
- In a separate saucepan, combine sugar, vinegar, and pineapple juice. Bring to a boil and allow sugar to incorporate into the sauce.
- Add guava concentrate and allow to boil.
- Mix the cornstarch and water to make a slurry. (You may use cornstarch slurry to thicken the sauce to the correct consistency. The sauce should be able to coat a spoon.)
- You may use the sauce as a dip or simply pour the sauce over the shrimp when ready to serve.

- Whisk together honey, rice vinegar, soy sauce, tomato paste, and pineapple juice and a medium bowl. Set aside.
- Whisk together cornstarch and water in a small bowl. Set aside.
- In a mixing bowl, add shrimp with salt and pepper and mix to coat evenly.
- Heat 1 tbsp of oil in a wok or large pan over medium-high heat then add shrimp and cook for a couple minutes until fully cooked. Transfer shrimp to a plate and set aside.
- In same wok/pan, add 1 tablespoon of vegetable oil to the pan and add the bell pepper. Stir-fry for 2 minutes.
- Add in the garlic and ginger, stir-fry for 30 seconds.
- Add in the pineapple and stir-fry for 30 seconds.
- Next, pour in the sweet and sour sauce mixture, stir and cook at a simmer for 2 minutes.
- Whisk in the water & cornstarch mixture, stirring constantly until the sauce is thickened (approximately 30 seconds).
- Add the cooked shrimp, stir to combine and cook until shrimp are warmed through (approximately 1-2 minutes).
- Serve with chopped green onions and toasted sesame seeds.

- Sprinkle salt and pepper on the shrimp. Let it stand for 15 minutes.
- Heat the oil in a deep pan.

- To make the sauce, in a bowl, combine 1/4 cup of stock, the ketchup, sugar, juice, vinegar, soy, and 1/2 teaspoon of the pepper flakes. Set aside.
- In a small bowl, combine the cornstarch with the remaining 2 tablespoons of stock and stir to dissolve. Set aside.
- In a bowl, toss the shrimp with the ginger, garlic, and remaining 1/4 teaspoon pepper flakes. Set aside for 10 to 20 minutes.

- Sprinkle the salt and pepper over the shrimp. Put the rice flour in a zip-top bag, add the shrimp and shake until coated. Heat some oil in a wok or large saute pan; when hot, add the shrimp, in batches if necessary, turning them once until just cooked and the coating is just getting a little crisp, about 1 - 2 minutes (do not overcook the shrimp or it will be tough and not tender). - Whisk together honey, rice vinegar, soy sauce, tomato paste, and pineapple juice and a medium bowl.
- Whisk together cornstarch and water in a small bowl.
- Dry shrimp with paper towels. Combine shrimp with salt and pepper in a medium bowl.
- Heat a wok or large saute pan over medium-high heat. Add 1 tablespoon vegetable oil and sesame oil.
- Once the oil is hot add the shrimp in a single layer, do not move for 1 minute. Stir and cook another 30 seconds. Transfer cooked shrimp to a clean plate.

- In a small saucepan warm the peanut oil over medium heat.
- Add the ginger and garlic.
