1/2 cup barbecue sauce
1/4 cup lemon juice
1/4 cup pineapple preserves
4 teaspoons soy sauce
1/2 teaspoon ground ginger
30 uncooked large shrimp, peeled and deveined (about 2 pounds)
1 to 2 large green peppers, cut into 1-inch pieces
1/2 pound fresh mushrooms, halved

Steps:

  • In a small saucepan, combine the first five ingredients; bring to a boil over medium heat, stirring frequently. Remove from the heat; cool. Set aside 1/2 cup for basting. Place remaining sauce in a large resealable plastic bag; add shrimp. Seal bag; refrigerate for 30 minutes. , Drain and discard marinade. Thread the shrimp, green peppers and mushrooms alternately on six metal or soaked wooden skewers. Grill, uncovered, over medium-hot heat for 2 minutes on each side. Turn and brush with reserved sauce. Continue grilling for 4-8 minutes or until shrimp turn pink, turning and basting several times.

12 jumbo shrimp, peeled, deveined and butterflied
1 cup coconut flakes
1 cup panko breadcrumbs
3 eggs, Beaten
1 cup flour
3 cups frying oil
1 cup guava, concentrate
1/2 cup rice vinegar or 1/2 cup white vinegar
1/2 cup pineapple juice
1/2 cup sugar
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Pre-heat oil to 350 degrees in medium frying pan.
  • In a medium, mixing bowl, combine coconut and panko.
  • Dredge shrimp in flour, then in the egg mixture, then in the panko and coconut mix, pressing down firmly to ensure proper breading.
  • Fry shrimp until golden brown being sure not to burn. (The coconut contains a high sugar content, which may burn quickly.)
  • In a separate saucepan, combine sugar, vinegar, and pineapple juice. Bring to a boil and allow sugar to incorporate into the sauce.
  • Add guava concentrate and allow to boil.
  • Mix the cornstarch and water to make a slurry. (You may use cornstarch slurry to thicken the sauce to the correct consistency. The sauce should be able to coat a spoon.)
  • You may use the sauce as a dip or simply pour the sauce over the shrimp when ready to serve.

1 lb shrimp (peeled, de-veined and patted dry with paper towel)
salt & pepper (to taste)
2 tbsp vegetable oil (divided)
1 red bell pepper (diced)
2 cloves garlic (minced)
1 tsp ginger (minced)
1 cup pineapple chunks
1/3 cup honey
1/3 cup rice vinegar
1 tbsp soy sauce or tamari
3 tbsp tomato paste
3 tbsp pineapple juice
1 tbsp cornstarch
2 tbsp water
chopped green onions and toasted sesame seeds for garnish

Steps:

  • Whisk together honey, rice vinegar, soy sauce, tomato paste, and pineapple juice and a medium bowl. Set aside.
  • Whisk together cornstarch and water in a small bowl. Set aside.
  • In a mixing bowl, add shrimp with salt and pepper and mix to coat evenly.
  • Heat 1 tbsp of oil in a wok or large pan over medium-high heat then add shrimp and cook for a couple minutes until fully cooked. Transfer shrimp to a plate and set aside.
  • In same wok/pan, add 1 tablespoon of vegetable oil to the pan and add the bell pepper. Stir-fry for 2 minutes.
  • Add in the garlic and ginger, stir-fry for 30 seconds.
  • Add in the pineapple and stir-fry for 30 seconds.
  • Next, pour in the sweet and sour sauce mixture, stir and cook at a simmer for 2 minutes.
  • Whisk in the water & cornstarch mixture, stirring constantly until the sauce is thickened (approximately 30 seconds).
  • Add the cooked shrimp, stir to combine and cook until shrimp are warmed through (approximately 1-2 minutes).
  • Serve with chopped green onions and toasted sesame seeds.

Steps:

  • To make the sauce, in a bowl, combine 1/4 cup of stock, the ketchup, sugar, juice, vinegar, soy, and 1/2 teaspoon of the pepper flakes. Set aside.
  • In a small bowl, combine the cornstarch with the remaining 2 tablespoons of stock and stir to dissolve. Set aside.
  • In a bowl, toss the shrimp with the ginger, garlic, and remaining 1/4 teaspoon pepper flakes. Set aside for 10 to 20 minutes.
  • Heat a large wok over high heat. Add the oil, swirling to coat the sides and bottom of the pan. Add the shrimp, garlic, and ginger and stir-fry until pink, about 2 minutes. Remove from the pan. Add the onions and peppers and stir-fry until crisp-tender, about 2 minutes. Add the sauce and cook, stirring, until the sugar dissolves. Add the cornstarch mixture and bring to a boil. 1/4 cup rice flour or cornstarch
vegetable oil for frying
1/2 cup cider vinegar
1/2 cup packed brown sugar
3/8 cup ketchup
3/8 cup unsweetend pineapple juice (take this right from the can)
2 tablespoons cornstarch
4 teaspoons reduced-sodium soy sauce
2 teaspoons chili garlic sauce (found in the Oriental section of the supermarket)
1/2 to 1 teaspoon crushed red pepper flakes
1 - 2 tablespoons vegetable oil (I use grapeseed oil or avocado oil)
1/2 cup coarsely diced onion
1 cup diced bell pepper (I used orange and red, but you can use any color you like; cut into about 1/2 inch dice)
3/4 cup pineapple chunks (I cut the big ones in half)

Steps:

  • Sprinkle the salt and pepper over the shrimp. Put the rice flour in a zip-top bag, add the shrimp and shake until coated. Heat some oil in a wok or large saute pan; when hot, add the shrimp, in batches if necessary, turning them once until just cooked and the coating is just getting a little crisp, about 1 - 2 minutes (do not overcook the shrimp or it will be tough and not tender). Remove each batch to paper towels when done, and repeat until all the shrimp has been sauteed, adding oil as needed. Pour off excess oil and wipe the wok (or skillet) clean.
  • In a bowl, combine the vinegar, brown sugar, ketchup, pineapple juice, cornstarch, soy sauce, garlic chili sauce, and red pepper flakes. Mix well and set aside.
  • Heat the skillet or wok over medium-high heat; add the oil. When the oil is hot, add the onion and bell peppers, saute for 2 - 3 minutes, give the sauce a good stir then add to the wok along with the pineapple and shrimp. Stir until bubbly and thickened.

2 teaspoons minced garlic
1/2 teaspoon minced ginger
1/4 cup orange marmalade
2 tablespoons rice vinegar
1 teaspoon Dijon mustard
1 teaspoon light soy sauce
1 tablespoon peanut oil
2 lbs large shrimp, peeled and deveined (16-20)
3 tablespoons extra virgin olive oil
1 teaspoon kosher salt
1/2 teaspoon pure chile powder
1/2 teaspoon paprika

  • For the Sauce:.
  • In a small saucepan warm the peanut oil over medium heat.
  • Add the ginger and garlic.
  • Cook until golden brown, about 60 to 90 second, stirring often.

  • Remove from heat and set aside at room temperature.

  • Heat grill to 500 to 550 degrees (high heat).
  • With the grill lid closed, grill shrimp over Direct high heat until just opaque in the center and firm to touch, 3-5 minutes, turning once.
  • Serve warm with as much sauce as you like drizzled over the top or use as a dipping suace.
