1/2 cup water
1/2 cup Thai chili soy paste
1/2 cup sweet chili paste
1/2 tablespoon chopped ginger
1/2 tablespoon garlic
1/2 cup chopped Chinese parsley leaves
16 shrimp
Sugar cane stalk, cut into skewers

Steps:

  • Place chili pastes in bowl and add water. Mix the remaining ingredients together to make a thin mixture. Put shrimp in marinade and refrigerate overnight. Place shrimp on skewers, 4 pieces on each skewer, and grill.

Knockout Coconut Shrimp with Spicy Mango Sauce image

1 cup mango puree or nectar
1 tablespoon chili paste
1 tablespoon chopped fresh cilantro
Pinch of kosher salt
Juice of 2 limes (about 1/4 cup)
Canola oil, for deep-frying
1 cup all-purpose flour
1 cup packed sweetened coconut flakes
2 teaspoons sugar
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1/2 cup sweetened cream of coconut, warm
1 teaspoon hot sauce, such as Calypso
2 eggs
1 pound extra-jumbo shrimp (16/20 count), cleaned, deveined and butterflied

Steps:

  • For the spicy mango sauce: Combine the mango, chili paste, cilantro, salt and lime juice in a bowl. Set aside.
  • For the coconut shrimp: Add about 4 inches canola oil to a medium Dutch oven or large high-sided skillet. Heat over medium heat until a deep-frying thermometer inserted in the oil registers 325 degrees F.
  • Set up a breading station using 2 shallow bowls or pie pans. In one bowl, whisk together the flour, coconut flakes, sugar and some salt and pepper. In the second bowl, whisk together the cream of coconut, hot sauce, eggs and 3 tablespoons warm water.
  • One at a time, dip the shrimp into the egg mixture, then dredge in the dry mixture, making sure the shrimp are thoroughly coated. Transfer to a baking sheet.
  • Fry the shrimp in batches until golden brown, about 5 minutes, making sure to turn them occasionally. Remove to a plate or baking sheet lined with paper towels to drain. Serve immediately or hold for up to 10 minutes in the oven at 200 degrees F.
  • Serve the shrimp with the spicy mango sauce on the side.

These are so good! The sauce that accompanies them is a must (Vietnamese Dipping Sauce (Nuoc Cham)). Sugar cane is usually in the produce section of my grocery store and it is also sold in the Asian section in cans. Wonderful served on a bed of rice and drenched in the Dipping Sauce! 4 garlic cloves, chopped
3 tablespoons sugar
3 shallots, chopped
1/4 cup asian fish sauce
3 tablespoons fresh lime juice
1 teaspoon fresh ground pepper
3 stalks fresh lemongrass, tender inner white bulbs only, thinly sliced crosswise
1/4 cup vegetable oil, plus more for brushing
24 large shrimp, shelled and deveined
12 sugar cane swizzle sticks
5 tablespoons chopped peanuts
3 tablespoons coarsely chopped cilantro

Steps:

  • Using a food processor, puree garlic, sugar, shallots, fish sauce, lime juice and pepper. Add lemongrass and the 1/4 cup of oil; process to a puree. Place shrimp in a large shallow container with lid and pour marinade over shrimp to cover. Cover and refrigerate for at least 2 1/2 hours.
  • Light a grill.
  • Cut each sugarcane stick in half on a sharp diagonal so each piece has a sharp point. Scrape off marinade. Make a slit near the shrimp's tail and one near the head with a sharp knife. Thread a sugarcane stick through the slits; the shrimp should lie flat.
  • Grill the shrimp over a hot fire, brushing them once or twice with oil, until lightly charred and just cooked through, about 3 minutes per side.
  • Place shrimp on a serving platter and sprinkle with peanuts and cilantro.
  • Serve the shrimp with the Vietnamese Dipping Sauce.

6 medium shrimp, peeled and deveined
1 teaspoon extra virgin olive oil
Kosher salt
Freshly ground black pepper
7 ounces prepared pizza dough
Semolina flour, for dusting
1/2 cup pizza sauce
1 cup grated mozzarella
1/2 ripe mango, thinly sliced
1/2 red onion, thinly sliced
1/2 red bell pepper, thinly sliced
1/2 yellow bell pepper, thinly sliced
2 pinches red pepper flakes, plus more for garnish

Steps:

  • Preheat oven to 500 degrees F.
  • Slice the shrimp in half, lengthwise. Heat the oil in a small nonstick skillet over medium heat and add the shrimp. Cook until the shrimp turn pink, about 3 minutes, and season them with salt and pepper.
  • Roll out the dough on a lightly floured surface into a 10-inch round. Place the crust onto a parchment line baking sheet. Spread the sauce onto the pizza, leaving the edges clean for a crust to form. Put half of the cheese on top and spread the shrimp evenly over the pizza. Then add the mango slices, red onion, red bell pepper, and yellow bell pepper evenly on the top. Sprinkle the pizza with the red pepper flakes and top with the remaining cheese. Bake the pizza for 15 minutes or until the cheese is melted and slightly brown. Serve immediately with more red pepper flakes sprinkled on top.

6 sea scallops, U-10's (10 sea scallops per pound)
10 ounces sea bass fillet
1 yellow bell pepper, julienned
1 red bell pepper, julienned
3 cups shiitake mushrooms, julienned
1 cup green onion, diced
1 cup cilantro, chopped
2 ounces garlic, minced
2 ounces ginger, minced
4 tablespoons oyster sauce
4 tablespoons sesame oil
2 boxes kataifi (finely shredded filo dough)
1 cup orange juice
1/2 cup lemon juice
1 fresh mango, chopped
1/4 cup Lingham's chili sauce
1 cup sugar
1/2 cup distilled white vinegar
2 ounces ginger, chopped
1 stalk lemon grass, white part only, minced
1/2 cup cornstarch mixed with cold water to make a slurry
1/2 pound crabmeat, picked
4 stalks minced lemon grass, white part only
4 eggs
1/2 cup heavy cream
1 tablespoon sliced green scallions
Salt and white pepper to taste
1 package frozen puff pastry

Steps:

  • For the kataifi: Heat oil to 350 degrees for deep-frying. Roughly chop the raw shrimp, scallops and sea bass. In a saute pan over medium heat, saute the shiitake mushrooms, cilantro, green onion, red and yellow peppers, garlic, ginger and oyster sauce. Mix sauteed ingredients with seafood. Fold seafood mixture into kataifi to create a loose nest. Deep fry until golden brown and cooked all the way through.
  • For the sauce: Bring all ingredients except cornstarch to a boil. Add a little cornstarch slurry, then strain. If the sauce seems thin once it's been strained you can add a little more cornstarch slurry, but do it in a saucepan over low heat.
  • Ladle sauce into a small bowl; place it on the plate alongside the kataifi crisps.
  • Mix crabmeat, lemon grass, eggs, cream, scallions and season well with salt and pepper. Using a muffin tin cut small circles of puff pastry that has already been docked (pricked with a fork to allow steam to escape, thus preventing too much bubbling on the surface of the pastry during the blind baking stage). Spray the tins with cooking spray and line each one with the cut pastry. Line each tartlet shell with foil and fill with rice to help keep the shape. Bake blind (without the filling) at 350-degrees until golden, about 10 minutes. Pull out foil and bake 5 more minutes to ensure the bottom is nearly cooked through. Fill cups with crab mixture. Bake another 15 to 20 minutes until mixture solidifies and the pastry is completely cooked. Serve warm or at room temperature. PLATING Line a plate with iceberg lettuce and place tartlets on top.
  • Mix crabmeat, lemon grass, eggs, cream, scallions.
