JUMBO SHRIMP STUFFED WITH CILANTRO AND CHILES



Jumbo Shrimp Stuffed with Cilantro and Chiles image

8 jumbo shrimp, in the shell (about 1 1/4 pounds)
3 sprigs fresh thyme, leaves stripped
Juice of 2 limes (about 1/4 cup)
2 tablespoons extra-virgin olive oil
1 teaspoon kosher salt, plus additional for seasoning
Freshly ground black pepper
1 clove garlic, chopped
1/2 large jalapeno, with seeds
2 scallions (white and green parts)
1 cup coarsely chopped fresh cilantro leaves

Steps:

  • Prepare an outdoor grill with a medium-high fire. Without removing the shells, slit about 3/4 of the way through the shrimp down the ridged back and remove the vein that runs down the center. Rinse and pat the shrimp dry. Whisk thyme leaves, lime juice, 1 tablespoon of the olive oil, 1/2 teaspoon of the salt and black pepper, to taste, in a shallow nonreactive bowl or dish. Lay the shrimp cut side down in the lime mixture and refrigerate for 30 minutes.
  • In a food processor, pulse the garlic, jalapeno, scallions, remaining 1 tablespoon olive oil and remaining 1/2 teaspoon salt to make a coarse paste. Add the cilantro and pulse just enough to incorporate into the mixture. Spoon the mixture into the opening in the shrimp and close the shrimp. Grill the shrimp shell side down (to keep filling from falling out) for 3 minutes. Turn to the other shell side, cover, and grill another 2 minutes or until the shrimp turn pink and are slightly firm to the touch. Sprinkle with salt and serve.
  • Jumbo shrimp in the shell can be a knife and fork sort of deal unless you're outside and it's summer and you are feeling very relaxed. Serve these with lots of napkins if your crowd is the peel-and-eat type.

STUFFED CHILES WITH WILD MUSHROOMS AND CILANTRO SAUCE



Stuffed Chiles with Wild Mushrooms and Cilantro Sauce image

4 poblano chiles
1 pound fresh wild mushrooms (shiitake or oyster)
1 small red bell pepper
1 small green bell pepper
1 small yellow bell pepper
1 tablespoon olive oil
Salt and freshly ground black pepper
Cilantro Sauce, recipe follows
2 shallots
1 cup dry white wine
1/2 cup white wine vinegar
1/2 lemon, juiced
1 pound unsalted butter, cut into about 1-inch cubes
Salt and freshly ground black pepper
2 tablespoons minced fresh cilantro leaves

Steps:

  • Roast the whole poblano chiles over a gas stove burner or under the oven broiler until their skins blister. Remove immediately to avoid burning. Put the chiles in a plastic bag for approximately 30 minutes, then carefully peel skins off. Set chiles aside. (Optional: You may wish to make a slit in 1 side of each chile and carefully remove the seeds, leaving the stem intact.)
  • Wash and dice the mushrooms. Stem, seed and dice the bell peppers. Saute the bell peppers in hot olive oil for approximately 5 minutes. Add the mushrooms and cook over low heat for approximately 15 more minutes. Season with salt and freshly ground black pepper to taste.
  • With a sharp knife make a small opening in the side of each poblano chile and stuff it with the wild mushroom mixture. Pour some heated sauce on each plate and place a stuffed chile in the center.
  • Finely chop the shallots. In a stainless steel or copper saucepan combine the shallots, wine, and vinegar and reduce over low heat until nearly dry, about 10 minutes. Whisk in lemon juice, then whisk in softened butter, 1 cube at a time. Season with salt and freshly ground black pepper and bring to a quick boil, whisking constantly. Stir in minced cilantro last.

Vegetable oil
12 whole yellow chiles (guero chiles), or Hungarian wax or large jalapeno
1 tablespoons olive oil
3/4 cup finely chopped white onion
1/2 cup finely chopped red bell pepper
1 pound medium shrimp, peeled, deveined and finely chopped
Salt and freshly ground black pepper
1/2 cucumber, peeled and thinly sliced
1/2 red onion, thinly sliced
3/4 cup low-sodium soy sauce
1/4 cup fresh lime juice, from about 2 large limes

Steps:

  • Pour enough vegetable oil in a large heavy skillet to come 1/2 inch up the sides of the pan and heat to 350 degrees F.
  • Add the chiles and fry, turning frequently, until golden brown on all sides, about 8 minutes. Transfer to paper towels to drain and set aside.
  • In a separate pan, heat the olive oil. Add the chopped onions and saute until golden brown, about 8 minutes. Add the bell peppers and saute until soft, about 5 minutes. Add the shrimp and cook until pink and cooked through, about 8 minutes. Season the filling with salt and pepper.
  • Cut a lengthwise slit in each chile and carefully scoop out the seeds, leaving the stem intact. (For milder heat, carefully cut out the ribs.) Divide the shrimp filling among the chiles, then close, overlapping the sides of each opening slightly.
  • On a shallow serving platter, toss the cucumber, sliced onions, soy sauce and lime juice and spread out on the platter. Arrange the chiles, seam-side up, on top of the salad and serve.

2 lemons
2 cups loosely packed cilantro leaves, finely chopped, plus more for garnish
1 clove garlic, minced
1 large shallot, minced
1/4 cup plus 4 teaspoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
16 jumbo shrimp (about 1 1/4 pounds), shells on
1/4 cup dry white wine

Steps:

  • Squeeze juice from 1 lemon into a small bowl. Add cilantro, garlic, shallot, 1/4 cup olive oil, salt, and pepper. Combine, and set aside.
  • Using a paring knife, split each shrimp down the back, cutting just enough to expose the vein. Remove veins, leaving shells and tails intact.
  • Fill the spaces between the shells and flesh with cilantro mixture.
  • Cut second lemon into 8 wedges. Heat 2 teaspoons olive oil in a large skillet over medium-high heat. Arrange 8 shrimp and 4 lemon wedges in skillet; saute until shrimp is pink and opaque, about 3 to 4 minutes per side. Remove from pan, and set aside. Repeat with remaining shrimp and lemon, adding remaining 2 teaspoons olive oil. Pour white wine into empty skillet. Using a wooden spoon, scrape up any cooked-on bits; cook over medium-high heat until reduced by half, about 1 minute. Pour sauce over shrimp, and garnish with cilantro.

  • For filling, in a large skillet heat oil and butter over medium-high heat. Add onion; cook and stir for 2 minutes. Add shrimp, sweet pepper, corn, wine, and chili powder; cook and stir for 3 minutes or until shrimp are opaque. Transfer mixture to a large bowl; set aside to cool for 10 minutes. Stir in cheeses, egg, salt, and black pepper; set aside.
  • Cut a slit lengthwise down one side of each chile pepper; open chile peppers and lay flat. If desired, remove stems and seeds from chile peppers. Spoon 1/2 cup of the filling onto each chile pepper (filling will be wet). Fold up peppers around filling and place, filling sides up, in prepared dish. Bake for 20 to 25 minutes or until lightly browned and filling is heated through (160°F). Let peppers stand for 10 minutes before serving.
