20 uncooked jumbo pasta shells
1 pound ground beef
1 large onion, chopped
1 carton (15 ounces) ricotta cheese
2 cups shredded Italian cheese blend, divided
1/2 cup grated Parmesan cheese
1/4 cup prepared pesto
1 large egg
1 jar (26 ounces) spaghetti sauce, divided

Steps:

  • Cook pasta shells according to package directions to al dente; drain and rinse in cold water. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. In a large bowl, combine the ricotta cheese, 1-1/2 cups Italian cheese blend, Parmesan cheese, pesto, egg and half of the beef mixture., Spread 3/4 cup spaghetti sauce into a greased 13x9-in. baking dish. Spoon cheese mixture into pasta shells; place in baking dish. Combine remaining beef mixture and spaghetti sauce; pour over shells. Sprinkle with remaining cheese. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Preheat oven to 350°. Cover and bake for 40 minutes. Uncover; bake until cheese is melted, 5-10 minutes longer.

These are quite possible the best you can make! I came up with this recipe to satisfy my carnivorous family and incorporate my love for Italian food. These have a ton of meat, but still a nice amount of the traditional ricotta cheese and spinach. These can also be great appetizer, due to the large amount the recipe yields.

2 1/2 lbs ground beef
2 (12 ounce) boxes jumbo pasta shells
1 (26 ounce) jar Prego spaghetti sauce, any variety
1 (8 ounce) box frozen spinach, thawed and squeezed of excess juice
2 cups ricotta cheese
1 lb of shredded mozzarella cheese
1/2 cup grated parmesan cheese
2 garlic cloves, minced
1 small yellow onion, finely chopped
5 tablespoons italian seasoning
1 tablespoon garlic pepper seasoning
4 eggs, slightly beaten
1/3 cup milk

Steps:

  • Brown ground beef and drain. Return to pan.Saute onions and garlic in pan with cooked meat for approximately 3 minutes. Set aside.
  • Boil salted water to cook the pasta shells according to package al dente style. Strain and set aside.
  • In a large bowl, mix ricotta, parmasan, and 2/3 package of shredded mozzarella. Add italian seasoning, garlic pepper, eggs and milk and mix thoroughly. Mix in meat and spinach.
  • In a large baking dish, pour enough sauce to cover the bottom of the pan lightly. Fill each shell with large rounded tablespoons of meat and cheese mixture, and place in pan. Be sure to closely place the shells together so they don't get hard while baking.
  • *If there are too many shells for one pan, make a secong and store tightly covered in freezer until later use.
  • Pour remaining sauce evenly over all of the shells. Sprinkle with remaining mozzarella cheese. Cover tightly with aluminum foil, and bake at 375 for 35-45 minutes. Take foil off pan, and bake additional 10 minutes.

2 cups ricotta cheese
2 (10 ounce) packages frozen chopped spinach, thawed and drained
1 cup grated Parmesan cheese
2 tablespoons fennel seed
2 teaspoons dried basil
4 cloves garlic, minced
salt and pepper to taste
3 ½ cups spaghetti sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring a large pot of salted water to boil, gently place pasta shells in boiling water; bring water back to boil. Cook until noodles are just tender; drain well.
  • Squeeze spinach dry. Combine spinach, ricotta, 1/3 cup Parmesan cheese, fennel, basil and garlic in a large mixing bowl. Season with salt and pepper; mix well.
  • Spread 1/2 cup marinara sauce evenly over the bottom of a 9x13 inch baking dish.
  • Fill each pasta shell with the spinach cheese mixture. Arrange the shells, filling side up in the baking dish. Spoon remaining marinara sauce over the shells. Sprinkle remaining Parmesan cheese on top of the shells.
  • Cover the pan loosely with aluminum foil and bake in preheated oven until heated through; about 30 minutes.

1 tablespoon extra virgin olive oil
1 medium onion (diced)
2 cloves garlic (minced)
4 cups fresh spinach
1 cup ricotta cheese
1 cup mozzarella cheese (shredded)
1/2 cup Parmesan cheese (grated)
1 large egg
1/2 teaspoon pepper
1/2 teaspoon salt
1 1/2 cups marinara sauce
basil for serving (if desired)

Steps:

  • Preheat the oven to 375 degrees. Cook pasta until al dente according to package directions.
  • Heat oil in a large skillet. Add onion and cook until tender about 3-4 minutes. Add in garlic and cook for an additional minute.
  • Add the spinach and cook until wilted, about 2 minutes.
  • Transfer the spinach mixture to a large bowl and add in ricotta, mozzarella, Parmesan, egg, salt and pepper. Stir to combine.

1 tbsp olive oil
1 lbs ground beef
1/2 onion (diced)

Steps:

  • Boil the large pasta shells. Heat a large pot of water on the stove to medium high and boil water with large pasta shells as directed until cooked al dente. This is a good time to start cooking the ground beef filling. Do not overcook the pasta, though, since the stuffed pasta will finish cooking in the oven. Once finished, drain pasta, then toss it in olive oil to prevent pasta from sticking while finishing the stuffing for the shells.
  • Brown the Italian seasoned ground beef. Heat a large skillet on the stove to medium-high. Add olive oil and let it heat until the oil is hot and shiny. Add the ground beef, onion, red pepper, garlic, salt, pepper, parsley, and oregano. Brown beef and vegetable mixture for about 10 minutes, breaking down beef as it cooks and stirring regularly until beef is thoroughly cooked and onions are translucent. Once done, remove from heat and strain on a plate lined with paper towel to remove excess grease.
  • Set out a medium sized baking dish and set the oven to 350 degrees F. Cover the bottom of the dish with 1 cup pasta sauce.
  • Mix together the stuffed pasta filling. In a large bowl, gently combine the cooked beef mixture, ricotta cheese, Parmesan cheese, and 1 cup of pasta sauce. Add a little extra salt and pepper to the cheese mixture if desired. Stuff every cooked shell with filling mixture and add them to a medium sized baking dish. Top with remaining pasta sauce and mozzarella cheese.
  • Bake stuffed shells with ground beef filling for about 20 minutes until the cheese is melted. Let cool for at least 10 minutes before serving. Cover with tin foil if waiting to serve longer to keep it warm.

18 jumbo shells
2 cups cooked cubed chicken breasts (see recipe), or use 2 cups cooked pork or stewed beef
1/2 pound spinach, picked over to remove any tough stems, rinsed and drained
8 tablespoons freshly grated Parmesan cheese
1/2 teaspoon freshly grated nutmeg
Salt to taste, if desired
Freshly ground pepper to taste
1 teaspoon finely minced garlic
2 eggs, lightly beaten
6 tablespoons heavy cream
4 cups Bolognese sauce or cooked meat and tomato sauce (see recipe)

Steps:

  • Preheat the oven to 400 degrees.
  • Drop the jumbo shells into boiling water and cook about 10 minutes or until tender but not overcooked. Drain.
  • Grind the chicken and set it aside.
  • Drop the spinach into a little boiling water and cook, stirring, until wilted. Drain well. Let cool. Chop the spinach. There should be about half a cup. Add the spinach to the ground chicken. Add six tablespoons of the grated cheese, the nutmeg, salt, pepper, garlic, eggs and cream. Blend well.
  • Spoon a layer of sauce over the bottom of a casserole large enough to hold the stuffed shells in one layer.
  • Fill each shell with an equal portion of the chicken mixture. Arrange the shells stuffed side up in a casserole. Spoon the remaining sauce over the shells. Sprinkle with the remaining two tablepsoons of grated cheese. Bake 25 minutes.

½ pound mild Italian sausage
½ cup yellow onion (finely chopped )
1 teaspoon minced garlic
3 tablespoons tomato paste
28 ounces crushed tomatoes (San Marzano recommended)
½ teaspoon oregano (dried)
¾ teaspoon kosher salt
¼ teaspoon black pepper
16 jumbo pasta shells (cook a couple extra in case some break)
1 tablespoon olive oil
2 teaspoons minced garlic
4 cups spinach leaves (packed, roughly chopped)
15 ounces ricotta cheese (whole milk)
1 cup mozzarella cheese (shredded )
½ cup Parmesan cheese (finely shredded, plus more for garnish)
1 large egg
1 tablespoon chopped parsley
1 tablespoon chopped basil
1 teaspoon kosher salt
⅛ teaspoon ground nutmeg
½ teaspoon black pepper

Steps:

  • Heat a large saucepan over medium heat. Add 1 tablespoon olive oil, once hot add sausage. Break the meat up into smaller pieces as it cooks and is no longer pink, about 5 minutes.
  • Add onion and garlic to a pan, stir and cook for 2 minutes. Add tomato paste and cook for 1 minute. Add crushed tomatoes, oregano, ¾ teaspoon salt, and ¼ teaspoon black pepper, stir well to combine.
  • Increase heat to medium-high and bring sauce to a simmer. Cover the pan, leaving a small opening for steam to escape, and lower the heat to low so that the sauce simmers.
  • Cook for 15 minutes, stirring occasionally. Add some water if the sauce starts to look dry. Taste and season with salt and pepper.
  • Add meat sauce to a 9x13-inch baking dish, spread evenly in the pan.
  • Set the oven rack to the center position. Preheat to 400°F (204ºC) degrees.
  • Bring 3 quarts of water to a boil in a large pot. Cook pasta according to package directions. Drain and place shells on a sheet pan then set aside.
  • Heat a large saute pan over medium heat. Add 1 tablespoon of olive oil, once hot add 2 teaspoons garlic and saute until fragrant but not browned, 30 seconds.
  • Add spinach and cook, occasionally stirring until the leaves begin to wilt but are still bright green, 3 minutes. Remove from heat and let cool.
  • Stir together cooled spinach, ricotta (1 ½ cups), mozzarella, Parmesan, egg, parsley, basil, 1 teaspoon salt, ½ teaspoon pepper, and nutmeg until thoroughly combined.
  • Transfer cheese filling into a large resealable plastic bag or piping bag. Cut off one edge of the bag and pipe each pasta shell with ricotta mixture, and place it in the baking dish.
  • Cover the shells with aluminum foil and bake for 30 minutes.
  • Remove the foil and continue cooking until the sauce begins to bubble about 5 minutes.
  • Serve warm with a sprinkling of Parmesan cheese.

¼ teaspoon ground black pepper
3 (8 ounce) cans diced tomatoes with basil
1 (3 ounce) can tomato paste
½ cup warm water
1 pinch dried cilantro

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta shells in the boiling water, stirring occasionally, until tender yet firm to the bite, about 9 minutes.
  • Meanwhile, heat grapeseed oil in a deep skillet over medium heat. Add spinach, corn, chicken bouillon, salt, and pepper. Cook until spinach and corn are tender, about 5 minutes.

1 lb ground beef
1 lb italian sausage
4 eggs
1/2 c garlic and herb dry bread crumbs
1/2 c onion, finely chopped
1 Tbsp dried parsely flakes
2 c mozzarella cheese shredded
2 tsp italian seasoning
1/2 tsp adobo seasoning
1/2 c parmesan cheese
3 c hunts zesty and spicy spaghetti sauce

Steps:

  • 1. Heat oven to 375 degrees. Cook pasta according to package directions; drain.
  • 2. Meanwhile in a large skillet, cook meat and onion until meat is thoroughly cooked and onion is tender; drain. In a large bowl, stir together meat mixture, mozzarella cheese, 1/4 cup parmesan cheese, eggs, bread crumbs, parsely, italian seasoning and adobo seasoning.
  • 3. In a 13x9x2 inch baking dish, spread 1/2 cup spaghetti sauce. Fill each cooked shell with 1-1/2 level tablespoons meat filling; layer one half filled shells in prepared dish. Spread 1 1/4 cup spaghetti sauce evenly over shells; layer remaining filled shells over sauce. Spread remaining spagehtti sauce over shells; sprinkle with remaining parmesan cheese. Cover with foil; bake 40 minutes or until hot and bubbly.
  • 4. Serve with cesar salad and garlic bread.

I love comfort food far too much to try and reinvent the wheel. To me, trying to change comfort food is like making a Beatles song into a techno mix. Some things are called classics for a reason! Here is a stuffed shell recipe that tastes like love and that takes two seconds to make (yes, I've been told I exaggerate). All you need is a baking sheet, a mixing bowl, a pot (for the pasta) and about 40 minutes of patience for cooking. I always make a few extra shells in case any break during cooking. Bon appétit!

32 jumbo shells
2 cups cooked chicken, diced
2 1/2 cups store-bought or homemade basil tomato sauce
1 small red onion, chopped
2 small cloves garlic, minced
1 cup spinach, chopped
1 cup ricotta cheese
Zest of 1/2 lemon
1/4 cup mayonnaise
2 cups mozzarella cheese, grated
1 egg, lightly beaten
Salt and pepper, to taste

Steps:

  • Preheat the oven to 350˚F.
  • Cook the pasta according to the package directions. Drain and add oil. Set aside.
  • In a bowl, combine the ricotta, lemon zest, mayonnaise, egg, and 1 cup of mozzarella cheese. Season.
  • Add the chicken, red onion, garlic, and spinach. Mix well and set aside.
