ONION QUICHE OR GRATIN (ADAPTED FROM JULIA CHILD)
I usually simplify Julia's recipes and omit some of the details, including using less fat, and they come out fabulous! I don't remember if I ever made this, but am posting it for safekeeping. For the quiche, use a pastry shell crust. For the gratin, omit the pastry crust. The cook time does not include time for baking the pastry shell.

Steps:
- Place oven rack in upper third of oven. Preheat oven to 375 degrees F.
- Cook onions in butter over very low heat til tender and golden, stirring occasionally (about 1 hour). Remove from heat and let cool somewhat.
- Add flour; cook over low heat for 2 or 3 minutes.
- In a bowl, combine eggs, milk or cream, salt, pepper and nutmeg. Beat til well blended.
- Gradually add onions and half cheese. Check seasoning.
- Pour into pastry shell or baking dish. Sprinkle remaining cheese on top. Place on baking sheet.
- Bake 25-30 minutes or until puffed and browned.
- NOTE: To partly bake the pastry shell: Bake in middle of oven at 400 degrees F. for 8-9 minutes.

JULIA CHILD'S QUICHE LORRAINE - ADAPTED
This is the original quiche, which was more of a custard, without cheese. It is so rich it will wow your guests! In the original recipe the bacon is boiled for 5 minutes (to remove the smoke flavor) then drained and cooked crisp about 3 minutes --no need to do this if you don't have the time!

Steps:
- Preheat oven to 375°F Bake pie crust for 5 minutes, so that it is partially cooked.
- Brown bacon in a skillet. Drain on paper towels. Press pieces into bottom of pastry shell.
- In a mixing bowl, beat the eggs, cream, and seasonings until blended. Check seasonings. Pour into pastry shell; dot top with butter.
- Set in upper third of preheated oven and bake for 25 to 30 minutes, or until the quiche has puffed and browned.

- Make the dough In a medium bowl, whisk the 2 cups of flour with the salt and pepper. Using your fingertips, blend in the butter until it resembles small peas. Sprinkle the water on top and mix until the dough begins to come together. Turn the dough out onto a work surface and gently knead 2 or 3 times, just until it comes together. Pat the dough into a 1-inch-thick disk, wrap in plastic and refrigerate until firm, about 1 hour.
- On a lightly floured work surface and using a lightly floured rolling pin, roll out the dough to a 14-inch round, about 1/8 inch thick. Ease the dough into an 11-inch fluted tart pan with a removable bottom. Trim the overhang so it is flush with the rim of the tart pan. Refrigerate the tart shell for 30 minutes.
- Preheat the oven to 375°. Line the tart shell with aluminum foil and fill to the top with pie weights or dried beans. Bake for about 40 minutes, until the crust is set and lightly golden. Remove the foil and weights and bake the shell for about 12 minutes longer, until deep golden and crisp. Transfer to a rack to cool slightly, about 10 minutes. Reduce the oven temperature to 325°.
- Meanwhile, make the filling In a large skillet, cook the bacon over moderate heat, stirring occasionally, until browned and crisp, about 10 minutes. Transfer the bacon to a paper towel–lined plate to drain.
