1 and 3/4 Cups Milk
4 Egg Yolks
1/3 Cup Raw Sugar
1 Tablespoon Vanilla Extract

Steps:

  • 1. Heat the milk in a saucepan over a low heat until just simmering then remove from the heat. 2. In a large bowl, using an electric whisk, beat the egg yolks until smooth and then beat in the sugar. Beat until thick and pale. 3. Continue to beat the egg yolk mixture while carefully and very slowly pouring the boiling milk in. Do it in a slow stream to prevent the eggs from scrambling. 4. Beat the mixture until all of the milk has been poured in and the mixture is smooth. 5. Pour the custard back into the saucepan and place it back onto a low heat. 6. Stir continuously until the custard coats the back of your spoon, taking it off the heat before it reaching simmering point. 7. Once the custard coats the back of your spoon, remove from the heat and continue to whisk for a couple more minutes to help the custard cool down. 8. Pour the custard through a sieve and briefly stir through the vanilla extract.

A very low fat, really healthy, deliciously sharp lemon cheesecake which is good to your tastebuds, your waistline and your heart.

Number Of Ingredients 8

250g tub of virtually fat free cottage cheese (eg Langley Farm from Asda)
28g Cornflour
2 level tsp Canderel
1 sachet Hartley's lemon & lime sugar free jelly
3 lemons - peeled with pith and segment lining removed - can be a bit fiddly but worth it
2 McVities Digestive Lights biscuits (from their 'new lowest ever saturated fat' range)
4 McVities Rich Tea Lights biscuits (from their 'new lowest ever saturated fat' range)
28g Bran Flakes

Steps:

  • blend the cottage cheese until smooth and put aside. Blend the lemons until smooth and put aside.
  • To make the cheese part, mix together the cottage cheese, the Total, the cornflour, the liquifide lemon and the Canderel in a mixer or by hand.
  • dissolve the jelly in up to 150ml of just boiled water. Using less boiled water and then topping up to the 150ml will help the cheesecake cool quicker.
  • pour the jelly mixture into the cheese mixture and mix well with mixer or by hand - it can be a bit splashy!
  • For the base - grind the biscuits and bran flakes into crumbs and then line your serving dish with these. Press them down gently.
  • Spoon the mixture carefully onto the crumbs and chill in the fridge for a minimum of 2 hours. Serve with 2% Total to contract the sharpness of the lemon and add canderel to the 2% if you want a sweeter taste.

1 1/4 cups milk
2/3 cup sugar, divided
3 eggs
1 tablespoon vanilla
1/8 teaspoon salt
1/2 cup flour
3 cups cherries, pitted
powdered sugar, for garnish

Steps:

  • Preheat oven to 350 degrees F.
  • Using a blender, combine the milk, 1/3 cup sugar, eggs, vanilla, salt and flour, and blend.
  • Lightly butter an 8-cup baking dish, and pour a 1/4-inch layer of the blended mixture over the bottom. Set remaining batter aside.
  • Place dish into the oven for about 7-10 minutes, until a film of batter sets in the pan but the mixture is not baked through. Remove from oven (but don't turn the oven off, yet).
  • Distribute the pitted cherries over the set batter in the pan, then sprinkle with the remaining sugar. Pour the remaining batter over the cherries and sugar.
  • Bake in the preheated oven for 45 to 60 minutes, until the clafouti is puffed and brown and a knife inserted into the center comes out clean.
  • Sprinkle with powdered sugar and serve warm.
  • Servings: 6-8 for dessert, 4 for breakfast.

  • Put one package of the cream cheese, 1/3 cup of the sugar, and the cornstarch in a large bowl and beat with an electric mixer on low until creamy, about 3 minutes, scraping down the bowl several times. Blend in the remaining cream cheese, one package at a time, scraping down the bowl after each one.
  • Increase the mixer speed to medium and beat in the remaining 1 1/3 cups sugar, then the vanilla. Blend in the eggs, one at a time, beating well after adding each one. Beat in the cream just until completely blended. Be careful not to overmix! Gently spoon the batter over the crust.
  • Place the cake in a large shallow pan containing hot water that comes about 1 inch up the sides of the springform. Bake until the edges are light golden brown and the top is slightly golden tan, about 1¼ hours. Remove the cheesecake from the water bath, transfer to a wire rack, and let cool for 2 hours (just walk away-don’t move it). Then, leave the cake in the pan, cover loosely with plastic wrap, and refrigerate until completely cold, preferably overnight or for at least 4 hours.
