If you are like me you forget to take out the chicken the night before you want to cook it, this is a great and easy way to cook frozen chicken breast. I have used left over pasta sauce topped with cheese and BBQ sauce with honey and brown sugar added in. Use any sauce you have. The measurements are up to you, I had to put something. You need enough sauce to cover the chicken.

2 -6 frozen chicken breasts, 1 per person
1 1/2 cups barbecue sauce or 1 1/2 cups pasta sauce
2 tablespoons brown sugar
1 tablespoon honey
1/2 cup carrots (any veggies) or 1/2 cup potato (any veggies)
2 -6 slices cheese, 1 per chicken breast

Steps:

  • Preheat oven to 375.
  • Spray baking dish with non-stick spray.
  • Place frozen chicken breast in dish.
  • Top with sauce.
  • Bake for 45 minutes.
  • Options: Add veggies for a one dish meal.
  • If using cheese, put it on the last 2 minutes of cook time. This gives it time to melt and brown if you like it that way.

This Baked Chicken Breast comes out juicy and flavorful every time! With a simple spice rub and quick cook time, it's perfect for any night of the week!

4 boneless skinless chicken breasts ((breast halves))
1 tablespoon canola oil
1 teaspoon dried parsley
¾ teaspoon salt
¾ teaspoon garlic powder
½ teaspoon paprika
¼ teaspoon black pepper
¼ teaspoon onion powder

Steps:

  • Preheat oven to 425 degrees F.
  • In a small bowl, stir together parsley, salt, garlic powder, paprika, pepper and onion powder.
  • Place chicken breasts on a cutting board and cover with a layer of plastic wrap. Pound the thick ends of the chicken breasts with a rolling pin, smooth meat mallet, or small frying pan until the chicken breasts are roughly the same thickness throughout.
  • Place chicken breasts in a 9x13" baking dish (or one that is large enough that they're not shoved together). Drizzle with oil and divide seasoning between front and back of all chicken breasts.
  • Bake at 425 degrees F for 15-22 minutes, until a meat thermometer inserted in the thickest part of the chicken reads 165 degrees F.
  • Remove from the oven, cover and let rest for 10 minutes before slicing and serving.

2 (5 ounce) boneless, skinless chicken breasts
1 tablespoon olive oil
2 teaspoons sazonador total (from Goya)
½ teaspoon granulated garlic
salt and freshly ground pepper to taste

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Line a rimmed baking sheet with foil.
  • Drizzle olive oil over chicken breasts coating all sides. Combine sazonador total, garlic, salt, and pepper in a small bowl and sprinkle on all sides of the chicken breasts. Place chicken breasts onto the baking sheet.
  • Bake, uncovered, in the preheated oven until chicken breast is no longer pink in the center and the juices run clear, about 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Do not overbake. Allow to rest for 10 minutes before serving.

  • Preheat the oven to 375F and line a large baking sheet with parchment paper.
  • In a medium bowl, whisk together the olive oil, seasonings, salt and black pepper.
  • Add the chicken to the baking sheet in a single layer and drizzle the marinade over the tops of the chicken, making sure to coat each piece.

Sure, you could double-bag the chicken and soak it in a hot water bath until thawed, but that still takes time and can get messy. Instead, follow this recipe to bake them straight from the freezer. You'll end up with juicy chicken coated in a crisp layer of breadcrumbs. Just make sure you freeze your chicken breasts in a flat layer so they don't stick together -- the recipe won't work with a big clump!

2 tablespoons mayonnaise
2 tablespoons Dijon mustard
1 tablespoon chopped fresh parsley leaves and tender stems
1 clove garlic, finely chopped
1 cup panko breadcrumbs
1/4 cup olive oil
Kosher salt and freshly ground black pepper
4 individually frozen boneless, skinless chicken breast halves (about 8 ounces each)

Steps:

  • Preheat the oven to 425 degrees F and line a baking sheet with aluminum foil.
  • Add the mayonnaise, Dijon, parsley and garlic to a small bowl and stir to combine. Add the breadcrumbs, olive oil and 1/2 teaspoon each salt and pepper to another bowl and stir until combined.
  • Place the chicken on the prepared baking sheet. Dividing evenly, brush the mayonnaise mixture all over the top and sides of each piece. Top the mayo-covered areas with the panko mixture and press to adhere.
  • Bake until the coating is golden brown and an instant-read thermometer inserted into the thickest part of each breast registers 165 degrees F, 30 to 35 minutes.
