STRAWBERRY GRANITA

Number Of Ingredients 4

6 cups very ripe strawberries, washed, trimmed and sliced very thin
2/3 cup sugar, plus more to taste
Pinch of salt
Aged balsamic vinegar

Steps:

  • Place the strawberries in a bowl with the sugar and stir to coat the berries. Line another bowl with a double layer of cheesecloth and add the berries.
  • Gather opposite corners of the cheesecloth and tie tightly. Repeat with the other two corners, leaving the knot open to slip in a wooden spoon handle. Propping the spoon across the top of a large bowl, suspend the berries. Refrigerate overnight.
  • Squeeze as much juice as possible from the berries. Correct for sugar and stir in the salt. Reserve the pulp for jam.
  • Pour the strawberry juice into a nonstick baking dish. Freeze for several hours. Use a spatula to cut and scrape the frozen juice into an ice the consistency of snow. Refreeze before serving. Place a few scoops of granita in a bowl and drizzle a few drops of the vinegar over it. Serve.

2 teaspoons coriander seeds
1/2 cup sugar
1/8 teaspoon almond extract
4 teaspoons fresh coriander, minced, plus a few sprigs left whole for garnish
4 cups Juan Canary melon chunks

Steps:

  • Crack the coriander seeds by pressing on them with the bottom of a cast-iron skillet. In a small bowl, combine the sugar, almond extract, the fresh coriander and the seeds. Add the melon and stir thoroughly. Macerate for 1 hour, refrigerated.
  • Pass the melon and juice through a food mill, or puree in a food processor and then pass through a mesh sieve. Discard the solids.
  • Add the remaining teaspoon of minced coriander to the liquid and stir. Pour the liquid into 2 pie dishes and place in the freezer for 4 hours. Using a fork, scrape the ice out of the pan, mashing large chunks as necessary. Mound a spoonful on each of 4 plates, garnish with a leaf or two of coriander and serve.

2 1/4 cups sugar
2 cups water
1 tablespoon fresh lemon juice
1 tablespoon rose water
5 eggs, lightly beaten
1 1/4 cups walnuts, chopped
3/4 cup ground almonds
1 cup sugar
Juice and grated zest of one orange
2 teaspoons ground cinnamon
Walnut oil, almond oil or butter for the pan

Steps:

  • To make the syrup, boil the sugar and the water with the lemon juice for 15 minutes. Stir in the rose water. Cool and refrigerate.
  • To make the cake, preheat the oven to 350 degrees. Mix all the ingredients thoroughly. Line the bottom of a cake pan with foil or greaseproof paper. Brush the foil with oil or melted butter, pour in the cake mixture and bake for 1 hour, until browned.
  • Immediately turn the cake out into a deep dish. Peel off the foil or paper, cut the cake into serving pieces and put them on plates. Drizzle syrup over each piece, allowing them to absorb the syrup for 15 minutes, and serve.

In the excitement of the new, sometimes the appeal of the old-fashioned sole meunière is forgotten. And yet, the second you allow your fork to tug the buttery, crisp pan-fried fillet, you're powerless to resist. Like a lot of haute cuisine, sole meunière is forever.

Number Of Ingredients 8

4 sole fillets (gray, Dover or lemon), 6 to 8 ounces each
Kosher salt and freshly ground black pepper
1/2 cup flour
6 tablespoons unsalted butter
2 tablespoons olive oil
2 tablespoons fresh lemon juice
2 tablespoons chopped parsley
Lemon wedges for garnish

Steps:

  • Season fillets generously with salt and pepper and dredge them in flour. Place 2 large skillets over medium-high heat and add 2 tablespoons of butter and 1 tablespoon of olive oil to each one. When hot, add 2 fillets to each pan and cook, turning once, until the fish is golden and just cooked through, about 5 minutes.
  • Transfer fish to dinner plates and keep warm. Return the pans to low heat and whisk 1 tablespoon of the remaining butter into each one. Add 1 tablespoon of lemon juice and 1 tablespoon of parsley to each pan and cook for 30 seconds. Spoon the sauce over the fillets and serve immediately with lemon wedges.
