Salt and freshly ground black pepper
One 3- to 5-pound chuck roast
2 or 3 tablespoons olive oil
2 whole onions, peeled and halved
6 to 8 whole carrots, unpeeled, cut into 2-inch pieces
1 cup red wine, optional
3 cups beef broth
2 or 3 sprigs fresh rosemary
2 or 3 sprigs fresh thyme

Steps:

  • Preheat the oven to 275 degrees F.
  • Generously salt and pepper the chuck roast.
  • Heat the olive oil in large pot or Dutch oven over medium-high heat. Add the halved onions to the pot, browning them on both sides. Remove the onions to a plate.
  • Throw the carrots into the same very hot pot and toss them around a bit until slightly browned, about a minute or so. Reserve the carrots with the onions.
  • If needed, add a bit more olive oil to the very hot pot. Place the meat in the pot and sear it for about a minute on all sides until it is nice and brown all over. Remove the roast to a plate.
  • With the burner still on high, use either red wine or beef broth (about 1 cup) to deglaze the pot, scraping the bottom with a whisk. Place the roast back into the pot and add enough beef stock to cover the meat halfway.
  • Add in the onions and the carrots, along with the fresh herbs.
  • Put the lid on, then roast for 3 hours for a 3-pound roast. For a 4 to 5-pound roast, plan on 4 hours. The roast is ready when it's fall-apart tender.

one piece top round, or rump roast, tied if needed, 4 pounds
kosher salt and freshly ground black pepper
1/4 cup flour for dredging
2 tablespoons canola oil
eight cipollini onions or one chopped onion
1 cup beef stock
one large clove garlic
12 baby carrots
12 baby new potatoes
1/2 cup ketchup

Steps:

  • 1. season meat with salt and pepper and dredge in flour. Heat the oil over medium-high heat in a Dutch oven or other heavy pot that can later be covered. Brown meat on all sides. Add onions, garlic, beef stock, and ketchup. Cover and simmer for two hours on stove, turning once or twice.
  • 2. Preheat oven to 325°.
  • 3. Add potatoes and carrots, replace cover, and place pot in the oven for another hour. Remove when potatoes and carrots are tender.
  • 4. Remove meat from pot and cover with foil to keep warm. Skim the fat from the surface of the remaining juice. Heat the pot and reduce the liquid by half. To serve, slice the meat and serve it with the pan juice. Serves 6 to 8.

1 tablespoon olive oil
4 pounds (2 kg) chuck roast or blade roast, (boneless and trimmed of excess fat)
2 yellow onions (chopped)
8 cloves garlic (smashed with the back of a spoon (or 2 tablespoons minced garlic))
1 pound (500 grams) baby potatoes, white or Yukon gold, ((you may need to halve them if they are too large))
4 large carrots, (cut into 2-inch pieces)
2 stalks celery, (cut into 1-inch pieces)
1/4 cup balsamic vinegar
2 tablespoons Dijon mustard
1 tablespoon brown sugar
2 teaspoons dried thyme
2 teaspoons crushed bouillon
1 teaspoon salt, (or to taste)
1/2 teaspoon freshly ground black pepper, (or to taste)
1 cup reduced-sodium beef broth
2 tablespoons plain flour ((optional -- for a thick gravy))
2 tablespoons fresh chopped parsley, (to serve)

Steps:

  • Heat oil in a large skillet or pan over high heat. Season roast with a good amount of salt and pepper. Sear on all sides until browned (about 5-6 minutes each side). Transfer roast to the bowl of a 6-quart slow cooker.
  • Add the onions, garlic, potatoes, carrots, celery, balsamic, mustard, brown sugar, thyme and bouillon. Season with salt and pepper to taste. Mix the stock together with the flour and pour into the slow cooker bowl (don't worry about any lumps, they will cook out).
  • Cook on low setting for 8 hours, or until meat is tender and falling apart and the vegetables are soft.
  • Taste test and add any extra balsamic vinegar, brown sugar, salt or pepper, if needed.
  • Slice meat, garnish with parsley and drizzle with gravy.
  • Season roast with a good amount of salt and pepper. Heat oil in the Instant Pot and set to 'Saute'. When oil is hot, sear on all sides until browned (about 4-5 minutes each side).
  • Add the onions, garlic, potatoes, carrots, celery, balsamic, mustard, brown sugar, thyme and bouillon. Season with salt and pepper to taste. Mix the stock together with the flour and pour into the slow cooker bowl (don't worry about any lumps, they will cook out). Place lid on Instant pot with steam valve closed.
  • Change Instant Pot setting to 'manual' mode for 60 minutes on 'high' pressure.
  • When time is up and cooker beeps, turn off and allow pressure to release naturally for 15 minutes. After 15 minutes, use the quick pressure lever to release any remaining pressure. Carefully remove lid and transfer roast and veggies to a warm plate.
  • Preheat oven to 350°F (175°C). Heat oil in a dutch oven or heavy based oven-proof pot over medium-high heat. Season roast all over with a good amount of salt and pepper. Sear until brown on all sides (about 4-5 minutes each side).
  • Transfer roast to a plate. Sauté onions until transparent, then add garlic and cook for 30 seconds until fragrant. Add the stock and balsamic vinegar to deglaze your pan, scraping up any browned bits. Whisk in the flour and let cook for about 4 minutes (don't worry about any lumps, they will cook out).
  • Transfer roast back into the pot. Add the potatoes, carrots, celery, mustard, brown sugar, thyme and bouillon. Season with salt and pepper to taste.
  • Bring to a simmer, cover with lid (or foil) and transfer to the oven. Roast for 3-4 hours until the meat is tender and falling apart. (Check roast after 1 1/2 hours. If the liquid has mostly been absorbed, stir in 1 cup of extra broth and continue cooking.)
  • Transfer the roast, carrots, and potatoes to a warm plate. With a spoon, skim the fat off the surface of the cooking liquid. Cut the roast into thick slices, and serve with the vegetables. Pass the pan juices separately.

  • Choose the Right Roast. It might surprise you, but the best pot roasts starts with the toughest cuts of meat. Chuck roast: Look for boneless chuck roast, chuck shoulder, blade roast, shoulder steak, chuck eye, or seven-bone roast.
  • Pat-Dry the Meat. Use paper towels to remove surface moisture before you move on to seasoning and searing the meat. Drying the meat results in a better sear.
  • Season Before Searing. Even if your recipe doesn't call for it, rubbing the roast with salt and pepper (and other optional dried herbs and spices) before searing it adds extra flavor to the meat as well as to the finished dish.
  • Give It a Serious Sear. You might be tempted to simply dump the roast in the pot and walk away, but searing the meat first will caramelize the natural sugars in the meat and brown the protein, resulting in the depth of flavor you want in a mouthwatering pot roast.
  • Sauté the Vegetables. Pot roast recipes often include chopped or diced onions, carrots, and celery that cook along with the roast to make a flavorful sauce.
  • No Dutch Oven? No Problem. Here's what worked for homecook MOLLE88: "I don't have a Dutch oven, so I just seared this on all sides in a frying pan, then put the roast in an 8x8 glass baking dish, covering very tightly.
  • Add Liquid... or Not. Some recipes deglaze the pot with liquid such as broth, wine, beer, tomato sauce, etc., and then add more liquid around the roast to create a braise.
  • Low and Slow is the Way to Go. Whether you cook your pot roast using a stovetop, oven, slow cooker, or pressure cooker method, you'll always get the most tender and flavorful results if you use low temperatures over a long period of time.
  • Add Extra Herbs at the End. If you're adding a delicate leafy herb like parsley to your pot roast, stir it in when the pot roast has finished cooking, or simply top each serving with a sprinkle of freshly minced parsley.
