- Preheat oven to 375°. In a small bowl, combine sugars, flour and spices; set aside. In a large bowl, toss apples with lemon juice. Add sugar mixture; toss to coat. , On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim even with rim. Add filling; dot with butter. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top. Beat egg white until foamy; brush over crust. Sprinkle with sugar. Cover edge loosely with foil. , Bake 25 minutes. Remove foil; bake until crust is golden brown and filling is bubbly, 20-25 minutes longer. Cool on a wire rack.

Steps:
- Preheat your oven to 450F
- Peel and core the apples and cut them into thin slices. I cut each half into thirds and then thinly sliced the halves. Arranged the slices in a pie pan covered with pie dough. Combine the sugar, cinnamon, and lemon rind and sprinkle the mixture over the apples. Add the lemon juice and a light dredging of flour if desired. I lightly dusted less than a tablespoon of flour over the top. Dot the apples with butter and cover the pie with an upper crust. Crimp edges, cut in vents, and decorate the top with cutouts if desired. I just lay my cutout on top, but apparently you are supposed to secure them to the upper crust with an egg wash. Dually noted!
- Place pie dish on a baking sheet and place in middle rack of pre-heated oven. Bake in preheated oven for 30 minutes and then reduce temperature to 325F and continue to bake for 30 minutes or until the filling is bubbling out the vents.

- Preheat oven to 450°F. Prepare unbaked pie crust in 9-inch pie pan. Modify sugar amount based on tartness of apples, and modify cornstarch based on juiciness of apples. If dry, add some water or lemon juice. Stir apples gently until coated. Place in layers in pie shell. Dot with 1 1/2 tablespoon butter Cover pie with pricked upper crust. Bake 10 minutes at 450°F. Steps:
- Preheat the oven to 350 degrees.
- In a skillet, melt the butter and add the apples. Toss to coat.
- Add the sugar and cinnamon and toss well.
- Cook over medium high heat 6-7 minutes until the apples begin to soften, stirring occasionally.
- While the apples cook, grease a rimmed cookie sheet or line with parchment paper.
- Unroll pie crust in the center.
- Using a slotted spoon, transfer and pile the apples into the center of the crust, leaving a 3-inch border.
- Fold the edges of the crust up around the apples.
- Carefully pour about 1/4 cup of the cooking liquid from the apples into the center of the pie, over the apples.
- Bake 18-20 minutes until the crust is golden.
- Cool at least 10 minutes before serving. It's also really good at room temp or cold.
- Slice like a pizza to serve.

- Heat a large 12-inch skillet over medium to medium-high heat. Once the pan is hot, add in the butter-- it should sizzle.
- Add in the apple slices, stir to coat in the butter. Reduce heat to medium, cover and cook stirring occasionally until the apples are softened on the outside but still slightly crunchy on the inside. About 3 to 5 minutes.
- Stir in the lemon juice, 1/2 cup of sugar, apple pie spice (1 teaspoon of ground cinnamon can be substituted) and salt. Increase the heat under the pan to high, stir often until the juice release from the apples and thicken slightly. About 3 minutes.
- Spread apples onto a rimmed metal baking sheet to cool completely. Meanwhile, roll out pie crust to 12 inches and place into a deep pie dish. Trim off excess pie crust, leaving a 1-inch border. Roll out the top crust and refridgerate both crusts while apples cool.
