I got this out of a Mayberry book years ago and it never lasts long, one of the best broccoli cheese soups that I have found..

Number Of Ingredients 12

1 cup water
1 chicken bouillon cube
1 (10 ounce) package frozen chopped broccoli
1 medium carrot, grated
2 tablespoons butter
3 tablespoons all-purpose flour
2 cups milk
1 lb Velveeta cheese
1 (10 ounce) can cream of chicken soup
1 tablespoon minced onion flakes
1 tablespoon Worcestershire sauce
salt and pepper

Steps:

  • In a saucepan bring the water and bouillon cube to a boil. Add the broccoli and carrot. Cook according to the broccoli package directions and remove from heat.Do Not Drain.
  • In a separate saucepan, melt the butter and slowly stir in the flour. Continue stirring while gradually adding the milk. Stir in the cheese, soup, onion, Worcestershire sauce, salt, and pepper. Add the broccoli mixture to the white sauce mixture and cook over medium to low heat until the soup is the desired thickness. Enjoy!

2 (16 ounce) packages frozen chopped broccoli
2 (10 3/4 ounce) cans cheddar cheese soup, condensed
2 (12 ounce) cans evaporated milk
1/4 cup dried onion flakes
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Combine all ingredients in greased 4 to 6 quart slow cooker. Cover and cook on high hear 2-3 hours or on low heat 4-5 hours.
  • Spoon over baked potato or simply garnish with bacon.

I got this recipe from an online recipe exchange many years ago. I've modified it to my family's tastes. It is very rich and delicious!! You can easily make this lower calorie by adjusting the ingredients.

6 -8 crookneck yellow squash, washed and sliced
2 onions, chopped
1 teaspoon garlic powder
1/2 cup butter
16 ounces Velveeta cheese
1/2 quart half-and-half
1/4 teaspoon baking soda
salt

Steps:

  • Put squash and onions in a large saucepan.
  • Cover with water and cook until tender. Drain off most of the liquid.
  • Puree in food processor or blender, or with stick blender.
  • In a large saucepan, combine puree with remaining ingredients.
  • Heat through until hot.
  • Serve in small bowls.
