2 ½ cups bread flour
1 ½ teaspoons active dry yeast

Steps:

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select white bread cycle; press Start.

Serving rosemary bread with rosemary-flecked olive oil rather than butter is a nod to the Mediterranean diet, in which olive oil is the primary fat.

Number Of Ingredients 8

1 1/2 teaspoons active dry yeast
1/4 cup warm water (110 degrees)
5 tablespoons extra-virgin olive oil, plus more for bowl
1 teaspoon sugar
1 teaspoon salt
2 tablespoons finely chopped rosemary, plus 1 tablespoon whole leaves
1 1/2 cups plus 1 teaspoon all-purpose flour, plus more for dusting
1 cup whole wheat flour

Steps:

  • Stir together yeast and the warm water in the bowl of an electric mixer. Let stand until foamy, about 7 minutes.
  • Add 3/4 cup water, the olive oil, sugar, salt, chopped rosemary, 1 1/2 cups all-purpose flour, and the whole-wheat flour to bowl. Fit mixer with the dough hook; mix on low speed until dough comes together, about 1 minute. Raise speed to medium-high; mix until dough is smooth and elastic, 8 to 10 minutes.
  • Lightly oil a large bowl. Shape dough into a ball, and transfer to oiled bowl. Loosely cover with plastic wrap. Let dough rise in a warm, draft-free spot until doubled in bulk, about 1 hour.
  • Punch down the dough; let rest, covered, 15 minutes. Turn out dough onto a lightly floured surface, and divide in half.
  • Roll one piece into an 11-inch-long loaf. Gently twist dough to create contours, then tuck ends underneath. Transfer to a baking sheet. Press half the rosemary leaves into loaf. Repeat with remaining piece of dough.
  • Loosely cover baking sheet with plastic wrap, and let loaves rise slightly in a warm, draft-free spot 30 minutes. Meanwhile, preheat oven to 400 degrees.
  • Dust loaves with remaining teaspoon all-purpose flour. Bake until golden, about 30 minutes. Let cool completely on a wire rack before slicing.

1 1/2 teaspoons active dry yeast
2 cups white bread flour
1/2 cup wheat flour
1/2 teaspoon salt
3 1/2 teaspoons sugar
1 1/2 tablespoons chopped fresh rosemary (for bread)
1 egg (for bread)
1 1/2 tablespoons olive oil
3/4 cup water
additional chopped fresh rosemary (for topping)
beaten egg (for topping)

Steps:

  • Place ingredients (except the rosemary and egg used for topping) in the bread machine in the order given.
  • Use manual cycle to knead bread only.
  • Turn dough out into an oiled loaf pan (be sure to remove hook), then punch down and spread dough to fill pan.
  • Allow dough to rise in a warm area until doubled in size, approx 1 hour.
  • Brush dough with beaten egg, sprinkle with chopped rosemary, and allow to rise again for about 10 more minutes.
  • Bake bread at 375 degrees F for 25-30 minutes, or until nicely browned.
  • Remove from oven and cool on a wire rack.

  • Add 1 tablespoon olive oil, the remaining 3/4 cup warm water, 1 1/2 cups flour, 3 tablespoons rosemary and fine salt - using the paddle attachment of your stand mixer, blend mixture until combined. I found that using the paddle attachment instead of the dough hook for this step was easier to combine the ingredients. Alternatively, you can mix it with a wooden spoon.
  • Switch the paddle attachment on stand mixer to a hook attachment and add in 1 cup flour and knead mixture on medium speed until smooth and elastic. Add additional flour as needed if dough is sticking to bowl.
  • Cover bowl and allow to rest in a warm place until more than doubled in size, about 1 1/2 - 2 hours.
