BACON-WRAPPED MEATLOAF
Homemade meatloaf just like mom used to make has nothing on this bacon-wrapped meatloaf. With a brown sugar-ketchup glaze and whole strips of bacon, this mighty meatloaf is a flavorful meal that's far from the dry brick that haunts many childhood memories. So the next time you want a throwback dinner but with a delicious updated twist, try this bacon-wrapped meatloaf.

Steps:
- Preheat oven to 350° F. Line a 9 x 5-inch loaf pan with slightly overlapping pieces of bacon.
- In a medium-sized bowl, mash together beef, onions, bell pepper, garlic, Worcestershire sauce, eggs, oats, salt and pepper.
- Spread 2 tablespoons of glaze over the bacon in the loaf pan.
- Then press the meatloaf mixture into the pan.
- Fold any overhanging bacon over the top of the loaf pan. Flip the loaf pan onto a baking sheet lined with foil or parchment paper. Carefully wrap the ends of the meatloaf with bacon as well, tucking the strips into the other pieces of bacon so it's tight.
- Bake meatloaf at 350° F for 50 minutes. Remove meatloaf, brush with ketchup glaze and return to oven for another 15-20 minutes. Finished meatloaf should have crispy bacon edges and reach an internal temperature of 165° F in the center of the meatloaf.
- Let meatloaf rest for 10 minutes before slicing and serving.

- Preheat oven to 350 degrees Fahrenheit.
- In a large bowl mix ground beef, eggs, diced onions, ketchup, garlic powder, and onion powder. Mixing with your hands is best. Mix it real well.
- Crush the crackers. I always crush the crackers while still in their sleeve.
- Pour crushed crackers into beef. Mix the crackers into the beef mixture well.
- Form into a loaf shape and set to the side.
- Take the bacon and divide it into even amount.
- Take 1 half of the bacon and lay side by side long ways.
- Fold every other bacon strip in half.
- Lay 1 of the other half of the reserved bacon strips across.
- Unfold the half folded bacon strip.
- Fold the other every other bacon strips that were not folded in the previous step.
- Lay a slice of bacon across and then unfold.
- Repeat until you run out of room.
- Start on the other half of the bacon strip until you have made a weave.
- Pace the loaf shaped beef mixture into the center on your bacon weave.
- Wap the weave around the beef loaf shaped mixture.
- Flip the bacon wrapped meat loaf upside down,making the ends of the bacon tuck under the loaf.
- Place the loaf in the center of the oven on a cookie sheet.
- It takes about an hour to cook.
- To make sure it is cooked all the way through, I sometimes use a meat thermometer but that isn't really needed. Sometimes I leave it in for 15 more minutes if I am worried it isn't cooked all the way.
BACON-WRAPPED BUFFALO MEATLOAF
Most people who replace their ground beef with buffalo, in recipes like meatballs, burgers, and meatloaf, are usually disappointed. Ground buffalo is much leaner than ground beef, which is the biggest challenge. In case you're new, it's the fat that provides most of the flavor and moisture. Also, for whatever reason, pre-packaged buffalo is ground very fine, almost to a paste, which can lead to a rubbery meatloaf, unless you use a few tricks.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
- Melt butter in a large skillet over medium-heat. Cook and stir chopped bacon in hot butter until almost crisp, 5 to 10 minutes.
- Pulse onion, carrot, celery, red bell pepper, poblano pepper, mushrooms, and garlic in a food processor until finely chopped. Add vegetable mixture and rosemary to bacon in the skillet; cook and stir until vegetables soften and sweeten, about 5 minutes.
- Mix vegetable mixture, bread crumbs, and milk together in a bowl. Let cool to room temperature. Stir egg, salt, Worcestershire sauce, black pepper, and cayenne pepper into vegetable mixture. Add buffalo meat to vegetable mixture and mix with your hands until well-blended.
- Turn meat mixture out into prepared baking dish and shape into a 9x5x3-inch meatloaf. Lay bacon strips crosswise over the top of the meatloaf, tucking in ends of bacon under the loaf.
- Whisk rice vinegar, brown sugar, and mustard together in a bowl until glaze is smooth.
- Bake meatloaf in the preheated oven for 30 minutes. Brush glaze over loaf and continue baking until no longer pink in the center, about 30 minutes more. An instant-read thermometer inserted into the center should read at least 155 degrees F (68 degrees C). Cool for 10 minutes before slicing.

EASY MEATLOAF
This Easy Meatloaf is a favorite at my house. It's the recipe we always use when we want a meatloaf that's tender, super moist and utterly delicious!

- Preheat oven to 350 F degrees. Spray a loaf pan with cooking spray; set aside.
- Grate the onion (if not using chopped) in a large bowl. Add the breadcrumbs and the milk and stir it together. Add the rest of the ingredients but only add about 3/4 cup of the barbecue sauce to the meat mixture. Mix the entire meat mixture really well using your hands or a spoon.
- Add the meat mixture to the prepared loaf pan and shape it into a loaf. Brush with the remaining barbecue sauce over the top of the meatloaf.
- Bake for 60 to 80 minutes or until done. Best way to tell when a meatloaf is done is to use an instant-read thermometer. Insert the thermometer into the meatloaf and when it reaches 160 degrees F, it's done.
- Let it sit for 10 minutes before slicing into it.

- Turn the burners on one half of the grill & pre-heat to about 350 degrees In a large frying pan, saute the onion, garlic and bell peppers until soft and fragrant. Remove from the heat. In a large mixing bowl, combine the beef, panko, eggs, half cup of BBQ sauce, mustard, Worcestershire, hot sauce & dry rub. Add the onion mixture and gently combine with your hands. Create a basket weave with the bacon slices on a piece of tinfoil. Place the meat mixture in the middle and shape into a log. Roll the bacon weave all the way around the meatloaf and secure the ends with toothpicks. Carefully transfer the meatloaf to the grill and place it on the cool side. Close the lid and cook for about 50 minutes. Glaze with the remaining BBQ sauce. You will know it is cooked when you can read with a digital thermometer, an internal temperature of 160 degrees F. Remove from the grill and allow it to rest for about 10 minutes before slicing.
BACON-WRAPPED MEATLOAF WITH BROWN SUGAR-KETCHUP GLAZE

- For the glaze: Mix all ingredients in a small bowl; set aside.
- For the meatloaf: Preheat oven to 350 degrees. Heat oil in a medium skillet. Add onion and garlic, saute until softened, about 5 minutes; set aside to cool.
- Mix eggs with thyme, salt, pepper, mustard, Worchestershire, pepper sauce, and milk or yogurt. Add egg mixture to meat in a large bowl, along with crackers, oatmeal or bread crumbs, parsley and cook onions and garlic; mix with a fork until evenly blended and meat mixture does not stick to bowl. (If mixture does stick, add additional milk, a couple tablespoons at a time, and continue stirring until mixture stops sticking.)
- Turn meat mixture onto a work surface. With wet hands, pat mixture into a loaf approximately 9 by 5 inches.
- Cover a wire rack with foil; prick foil in several places with a fork. Place a rack on a shallow roasting pan lined with foil for easy cleanup.
- Set formed loaf on rack. Brush loaf with all of glaze, then arrange bacon slices, crosswise, over loaf, overlapping them slightly and tucking them under to prevent curling.
- Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool for at least 20 minutes. Slice and serve

JO'S BACON-WRAPPED MEATLOAF

- Preheat oven to 375 degrees F.
- Combine panko, milk, pecorino, Worcestershire sauce, pepper, salt, eggs, pasilla chiles and Italian parsley in a large mixing bowl and mix well. Add the ground beef and hand-mix until well blended. Set aside.
- To make the glaze, combine ketchup, brown sugar, dry mustard and hot sauce in a small mixing bowl. Stir well using a rubber spatula. Set aside.
- Lay bacon down slightly overlapping side-by-side in a half-sheet pan. Spray a 9-by-4-inch loaf pan that's 6 inches high with nonstick spray. Place the beef mixture in the pan and pat down to form a meatloaf. Turn pan over and tap out the meatloaf into your hand. Place the meatloaf over the center of the bacon slices. Working with one slice at a time, fold ends of each bacon slice over the top of the meatloaf. Turn loaf over and place on a rack set in a baking sheet to allow the fat to drain while baking.
- Using the rubber spatula, spread half the glaze over the meatloaf. Bake for 1 hour, then apply remaining glaze. Continue to bake until the internal temperature reaches 165 degrees F, about another 20 minutes.
MY FAVORITE MEATLOAF
Steps:
- Preheat oven to 350˚. Pour milk over the bread slices. Allow it to soak in for several minutes.
- Place the ground beef, milk-soaked bread, Parmesan, seasoned salt, salt, black pepper, and parsley in a large mixing bowl. Pour in beaten eggs.
- With clean hands, mix the ingredients until well combined. Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!)
- Lay bacon slices over the top, tucking them underneath the meatloaf.
- Make the sauce: add ketchup, brown sugar, mustard, and hot sauce in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon.
- Bake for 45 minutes, then pour another 1/3 of the sauce over the top. Bake for another 15 minutes. Slice and serve with remaining sauce.
- Serve with mashed potatoes. Yummy!
