NANA'S OLD FASHIONED JELLY CAKE



Nana's Old Fashioned Jelly Cake image

This is a moist yellow cake with a jelly spread over the top while warm. It is so moist, it will melt in your mouth! Use your favorite flavor of jelly.

1 cup margarine, softened
2 cups white sugar
4 eggs
3 cups self-rising flour
1 cup whole milk
1 teaspoon vanilla extract
2 cups raspberry jelly

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch pan.
  • In a large bowl, cream together the margarine and sugar until light and fluffy. Beat in the eggs one at a time, mixing well after each. Stir in the flour and milk, alternating so the dough does not become too stiff or too runny. Mix in vanilla. Pour the batter into the prepared pan.
  • Bake for 35 to 40 minutes in the preheated oven, until the center springs back when pressed lightly. Spread the raspberry jelly over the cake while it is warm, but not hot, so it will soak into the cake.

This is a recipe that my great-grandmother gave me many years ago. It is made by most of my family.

1 c butter
2 c sugar
4 large eggs
2 1/2 c self rising flour
1 c milk
1 Tbsp vanilla extract
FOR JELLY FROSTING
1 small jar of apple jelly 8 oz
1/3 c sugar

Steps:

  • 1. Preheat oven to 350 degrees grease and flour cake pans
  • 2. Mix jelly and sugar and let stand for 10 minutes. Taste to see if jelly is sweet enough, add addition teaspoons of sugars until it meets your taste.
  • 3. Directions for cake Cream together butter and sugar then add eggs one at a time. Combine the milk and vanilla, add alternately with the flour. Mix for 1 minute.
  • 4. Pour into pans and bake for 20 minutes or until the cake is golden brown and a tooth pick comes out clean. Cool completely before frosting with apple jelly.

This recipe is luscious and gooey. Besides that its simple, inexpensive, and gets better with age. Grandma Campbell made it for the grandkids, and couldn't remember how long it had been in the family.

1 cup sugar
1/2 cup butter
3 eggs
2 cups flour
1/2 cup milk
1 teaspoon vanilla
1 (12 ounce) jar apple jelly

Steps:

  • Melt butter and sugar together.
  • Add eggs, flour and milk.
  • The recipes says 1/2 cup milk, but Grandma added"OR until of batter consistency" at the bottom.
  • Then add vanilla.
  • Bake in 4 greased and floured 9 inch pans at 400 degrees for 15-18 minutes, as the layers should be about 1/2 inch thick when done.
  • Melt the apple jelly.
  • Pour 3 ounces of jelly over each layer as they are stacked.
  • Sometimes I also frost the sides with Vanilla Buttercream Frosting, or serve the cake warm with whipped cream.

175 g butter
175 g brown sugar
1 lemon, grated zest
3 eggs, beaten
175 g self raising flour
1/3 cup Scotch whisky
50 g butter
175 g icing sugar
1 tablespoon lemon juice
2 tablespoons honey (thick)

Steps:

  • Preheat the oven to 350.
  • Cream butter, sugar, lemon zest, and eggs.
  • Fold in 1/2 the flour, then the whisky & lastly remaining flour.
  • Spoon into two greased 18 cm round tins.
  • Bake 25mins.
  • Allow to cool on a rack.
  • For Icing & Filling. Beat together all ingredients.
  • Sandwich cake together with 1/2 butter cream & swirl the rest over the top.

Homemade Jolly Rancher Candy is sweet, a bit tart, and easy to make. Choose your own flavours and colours to customize it as you like!

3 cups Granulated Sugar
1 1/2 cups Corn Syrup
3/4 cup Water
Several drops food coloring*
1 Tbsp LorAnn Flavour Oils (or 2 Tbsp flavour extract of choice))
2 tsp Citric Acid Powder

Steps:

  • Line a baking sheet with parchment paper, if you're not using a mold. Set aside.
  • In a heavy saucepan, combine sugar, corn syrup, and water. Stir well, bring to a boil on medium or medium-high heat. Affix candy thermometer to pan.
  • Boil mixture, stirring occasionally, until it reaches 310 degrees.
  • Remove from heat, quickly stir in food coloring, flavoring, and citric acid. Stir mixture until it stops boiling, and most of the "bubbles" disappear - this will minimize texture in your finished candies.
