2 large yellow onions, roughly chopped
⅓ cup vegetable oil, plus 2 tablespoons, divided
14 oz diced tomato, 2 cans
6 oz tomato paste, 1 can
1 habanero pepper
2 teaspoons curry powder
1 teaspoon garlic powder
1 teaspoon ground ginger
½ teaspoon mixed dried herbs
3 chicken bouillon cubes, crushed
2 ½ cups long grain rice, rinsed
1 cup frozen mixed vegetable
1 ½ cups water

Steps:

  • Add onions and 2 tablespoons of oil to a blender and pulse until smooth. Transfer to a medium bowl.
  • Add the diced tomatoes, tomato paste, and habanero pepper to the blender, and pulse until smooth. Transfer to a separate medium bowl.
  • Heat the remaining ⅓ cup (80 ml) of oil in a large, heavy-bottomed pot over medium heat.
  • Once the oil is shimmering, add the onion puree and cook until the water has cooked out and the puree is starting to brown, about 10 minutes.
  • Stir in the tomato puree and add the curry powder, garlic powder, ginger, dried herbs, and crushed bouillon cubes. Cook for 20-30 minutes, stirring occasionally, until the stew has reduced by half and is deep red in color.
  • Add the rice, mixed vegetables, and water. Bring to a boil, then reduce the heat to low and cover the pot with foil and a lid. Simmer for another 30 minutes, until the rice is cooked through and the liquid is absorbed.

1 tablespoon olive oil
1 large onion, sliced
2 (14.5 ounce) cans stewed tomatoes
½ (6 ounce) can tomato paste
1 teaspoon salt
¼ teaspoon black pepper
¼ teaspoon cayenne pepper
½ teaspoon red pepper flakes
1 tablespoon Worcestershire sauce
1 teaspoon chopped fresh rosemary
2 cups water
1 (3 pound) whole chicken, cut into 8 pieces
1 cup uncooked white rice
1 cup diced carrots
½ pound fresh green beans, trimmed and snapped into 1 to 2 inch pieces
¼ teaspoon ground nutmeg

Steps:

  • Pour oil into large saucepan. Cook onion in oil over medium-low heat until translucent.
  • Stir in stewed tomatoes and tomato paste, and season with salt, black pepper, cayenne pepper, red pepper flakes, Worcestershire sauce and rosemary. Cover, and bring to a boil. Reduce heat, stir in water, and add chicken pieces. Simmer for 30 minutes.
  • Stir in rice, carrots, and green beans, and season with nutmeg. Bring to a boil, then reduce heat to low. Cover, and simmer until the chicken is fork-tender and the rice is cooked, 25 to 30 minutes.

This is an incredibly easy, but delicious recipe. The uniqueness of this jollof rice lies in the roasting of the bell peppers, tomatoes, onions, and garlic. This brings an additional depth of flavor to the meal. If you're looking for a Jollof Rice recipe that will be the star of the show, this is it!

3 Cups basmati rice
½ Cup cooking Oil
3 tablespoons Tomato paste
3 Cups beef stock
2 teaspoon Curry Powder
2 teaspoon Thyme
1 Onion Medium-sized (sliced)
2 teaspoon smoked paprika
1½ tablespoons chicken bouillon powder (or use 4 cubes)
Salt and black pepper to taste
2 Red Bell Pepper
2 Plum Tomatoes
1 to 3 Scotch bonnet
1 Onion
6 cloves garlic
2 inch ginger
1.5 lb beef
1 teaspoon curry
2 teaspoons rosemary
2 bay leaves
1 habanero (minced)
2 teaspoons chicken bouillon powder
1 small Onion (diced)
salt and black pepper to taste

Steps:

  • Drizzle some oil on the peppers and Roast the bell peppers, tomatoes, onions, habanero pepper, and garlic in the oven 400F for 15 to 20 minutes. Leave to cool a bit, blend with the ginger, and set aside.
  • Meanwhile, season beef with salt, black pepper, rosemary, curry powder, and seasoning powder. Set aside.
  • Add one tablespoon oil in a pan, add the seasoned beef and bay leaves. Mix well and leave to cook for ten minutes.
  • Add one cup of water to the boiling beef and leave to cook again for another 10 to 15 minutes or till the meat becomes tender. Remove the meat from pot and keep the stock separately.
  • In the same pot, add the remaining oil and fry the beef on both sides till browned-about 2 to 3 minutes on each side. Remove from oil and set aside.
  • Pour the sliced onions in the oil and cook till tender about 3 to 5 minutes.
  • Add the tomato paste and fry well. About 3 to 5 minutes
  • Add the blended sauce, curry powder, thyme, seasoning powder, salt, and black pepper. Cook for 5 minutes.
  • Wash the rice until the water comes out clear and drain. Stir the rice with the sauce and add the stock and water.
  • Cover the pot tightly with a foil paper and then with the lid. ook for 5 minutes on medium to high heat, then turn the heat down to low and cook for another 20 to 25 minutes.
  • Uncover the pot and add stir in the beef. Serve hot.

4 pieces chicken (4 to 6)
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup vegetable oil
1 medium onion, peeled and finely chopped
1/4 lb cubed salt pork or 1/4 lb ham
2 beef bouillon cubes
1/4 teaspoon ground red pepper
1/2 teaspoon dried thyme or 1 sprig fresh thyme, crushed
1/2 cup water
1 (6 ounce) can tomato paste
1/4 cup uncooked rice
2 cups tomatoes (or any combination of vegetables) or 2 cups string beans (or any combination of vegetables)

Steps:

  • Season chicken with salt and black pepper.
  • In a large frying pan, heat oil over medium-high heat for 4 to 5 minutes.
  • Add chicken pieces and brown on both sides.
  • Place chicken in a kettle and set aside.
  • Add onions and salt pork to oil in frying pan and saute until onions are trans- parent.
  • Add onions and pork to kettle.
  • Set frying pan aside. (Do not discard oil.).
  • Add bouillon cubes, red pepper, thyme, 1-1/2 cups water, and tomato paste to kettle and stir well.
  • Simmer over low heat for about 10 minutes.
  • Add rice to frying pan and stir to coat with oil.
  • Add rice and vegetables to kettle, stir well, and cover.
  • Cook over low heat 35 to 40 minutes or until vegetables and rice are tender.

1 (2 1/2-3 lb) roasting chickens, cut into serving pieces
1 lb boneless lean beef, preferably chuck, cut into 1/2 inch cubes
2 teaspoons salt
pepper
6 tablespoons oil
1 cup finely chopped onion
3 medium ripe tomatoes, peeled, seeded and finely chopped (can sub 1 cup chopped canned tomatoes)
1/4 cup tomato paste
1 1/2 tablespoons chopped garlic
1 hot chili pepper, seeded and finely chopped
1/2 teaspoon ground ginger
1 bay leaf
2 cups chicken broth or 2 cups beef broth
2 cups water
1/2 lb smoked ham, diced
1 1/2 cups uncooked white rice

Steps:

  • Dry the chicken and beef with paper towels and sprinkle with salt and pepper.
  • In a large heavy bottomed pan over moderate heat, heat 3 tbsp of the oil until a drop of water sizzles when dripped into it; brown the chicken in the oil a few pieces at a time until golden brown, turning as needed; when done transfer to a plate and set aside.
  • Add the last 3 tbsp of oil to the pan and brown the beef in it, turning them frequently until they are well browned; add them to the chicken and set aside.
  • Pour off all but a thin film of fat from the pan and add the onions; stirring up the browned bits from the meat, stir and cook the onions until soft and lightly browned; do NOT burn as it will add an acrid taste to the finished dish.
  • Add the tomatoes, tomato paste, garlic, chili pepper, ginger and bay leaf.
  • Raise the heat to high and still stirring cook for five minutes or until most of the liquid has evaporated and the mixture is thick enough to hold its shape almost solidly in a spoon.
  • Stir in the broth and water and return the beef to the pan; add the ham and turn the meats in the sauce until the pieces are evenly coated.
  • Bring to a boil again then reduce the heat to low and simmer partially covered for 30 minutes.
  • Add the chicken and any liquids around it, baste it with the sauce and let it simmer for ten minutes longer; then gently stir in the rice.
  • Return the mixture to a simmer, cover partially and cook for 20 to 30 minutes or until the beef is tender and almost all the liquid in the pan has been absorbed by the rice.
  • Remove the pan from the heat, cover tightly and let rest for 15 minutes before serving.
  • Jollof rice is traditionally served with hot boiled cabbage or spinach and slices of hard boiled egg.

  • In a large pot over medium-high heat, heat 1 tablespoon olive oil. Season the steak with ½ teaspoon salt and ¼ teaspoon black pepper. Cook until browned on the outside, about 5 minutes, stirring a couple times. Remove the steak and set aside.
