1 cup flour
3/4 cup cornmeal
3/4 tsp. salt
1 egg, beaten
5 tsp. baking powder
1/3 cup sugar
2 tblsp. vegetable oil
1 cup milk

Steps:

  • 1. Preheat oven to 350F.
  • 2. Mix all dry ingredients together.
  • 3. Add egg, milk and oil to dry mixture and blend well.
  • 4. Pour into 8 inch square pan.
  • 5. Bake 30-35 minutes until slightly brown on top.
  • 6. Serve hot or cold with butter, honey or preserves.

1 cup cornmeal
½ cup milk
½ cup shortening
½ cup white sugar
1 ⅓ cups cake flour
2 ½ teaspoons baking powder
1 teaspoon salt
1 egg
1 cup milk

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease thoroughly an 8 inch square cake pan.
  • Combine cornmeal and milk. Sift flour, baking powder, and salt. Stir together the egg and milk.
  • Cream shortening, and blend in sugar. Stir flour mixture and egg mixture alternately into creamed mixture alternately. Blend in cornmeal mixture.
  • Bake for 40 to 45 minutes. Serve hot, with maple syrup.

After a trip to the Bahamas, my mom came home with a recipe for something call Johnny Cake which is completely unlike U.S. Johnny Cake (usually a version of cornbread). It is a great big baking powder biscuit traditionally cooked on the stove top in cast iron pan. It always takes us all back to Spanish Wells, Bahamas to make...

3 c flour
1 Tbsp baking powder
1 tsp salt
1/4 c white sugar
1/2 c butter
2/3 c milk

Steps:

  • 1. Combine dry ingredients and cut in the butter until pea sized. Add milk to make a soft dough and knead until smooth. Let dough rest for about 10 minutes.
  • 2. You can use either of these cooking methods: Heat a cast iron skillet on very low to medium low heat on the stove top and grease well. Roll out the dough into a disk that neatly fits in the pan. Grill on each side about 10-15 minutes being careful not to burn it. Flipping it is a challenge. I used 2 spatulas in tandem. Check for doneness and cut into wedges and eat. This is how they do it in the Bahamas.
  • 3. OR place the dough in a greased 8 or 9 inch round or square pan. Pierce the top with a fork and bake at 350 for 20-25 minutes. Remove from oven and brush with milk, return to oven and bake for 5 minutes more. Then EAT IT.

  • Cream the cornmeal, salt, and butter together. Add the milk and enough water to make a moist but firm batter.
  • Drop by large spoonfuls onto a hot greased griddle, and flatten slightly with the back of a spoon. When brown, turn and cook the other side.

This recipe Is from week 19 of my food blog, "Travel by Stove." I am attempting to cook one meal from every nation on Earth, and The Bahamas are my 19th stop. Johnny cakes are served all over the Caribbean, but they make them a little differently in the Bahamas (without cornmeal).

3 cups flour
1 tablespoon baking powder
1 teaspoon salt
1/4 cup sugar
1/2 cup shortening
2/3 cup whole milk

Steps:

  • Mix all the dry ingredients together, then cut in the shortening. Work the mixture with your hands until the grains are about the size of rice.
  • Add milk until you get a soft dough (I had to use a bit more than the recipe called for).
  • Turn out onto a floured surface and knead until smooth.
  • Let the dough rest for 10 minutes, then transfer it to a greased 9x9 inch pan. You will have to press it down so it fills in all the corners. Poke the top of the dough a few times with a fork.
  • Bake at 350 degrees for 20 to 25 minutes. You can tell the cake is done when it starts to turn a little golden around the edges.

1/2 cup butter, plus extra for greasing pan
3/4 cup sugar
4 cups flour
1/2 cup water
1/2 teaspoon salt
2 teaspoons baking powder
3/4 cup milk

Steps:

  • Preheat oven to 325 degrees.
  • With an electric mixer, mix the butter and sugar together until combined.
  • Add the flour, water, salt, and baking powder to the bowl. Combine.
  • Add the milk slowly until the batter is sticky.
  • Dust hands with flour. Transfer dough from bowl to greased 9x9 pan. Gently flatten the dough in the pan.
  • Bake for 1 hr or until the edges of the johnny cake are browned. The johnny cake will not rise much. (Every stove is different so while it's baking, keep an eye for the golden edges).

24 chicken wings, separated
3 tablespoons lime juice
1 teaspoon seasoned salt
1 teaspoon vegetable oil
1 large onion, diced
½ green pepper, diced
6 large potatoes, peeled and diced
3 carrots, diced
½ teaspoon crushed red pepper flakes
1 tablespoon ground allspice
2 bay leaves
¾ cup lime juice
3 cups water
salt and black pepper to taste

Steps:

  • Toss the chicken wings with 3 tablespoons lime juice and the seasoned salt. Set aside to marinate at room temperature for 1 hour.
  • Heat the vegetable oil in a large pot over medium heat. Add the onion and green pepper; cook and stir until the onion has softened and begun to brown, about 10 minutes. Add the potatoes, carrots, red pepper flakes, allspice, bay leaves, marinated chicken, lime juice, and water. Bring to a simmer, then reduce heat to medium-low, cover, and continue simmering until the chicken is no longer pink at the bone, and the vegetables are tender, about 40 minutes. Season to taste with salt and pepper before serving.

My children expect this at least once a month as a regular feature on our Saturday morning breakfast menu OR when we have breakfast-for-supper. Prepare the optional sausage and hard-boiled eggs ahead of time, and it goes together quicker-n-anything!

2 cups flour
1/2 cup sugar
2 tablespoons baking powder
1 teaspoon salt
2 cups cornmeal, yellow
4 eggs
2 cups milk
1 cup oil

Steps:

  • Preheat oven to 425; grease a 13x9 pan.
  • Add dry ingredients to a large mixing bowl, stir through, make a well in the center.
  • In another bowl, add eggs, milk, and oil all at once; blend well.
  • Add wet to dry ingredients, stir until moistened (don't over-mix or you'll be sorry!).
  • Fold in optional ingredients. Sausage should be in crumbles or bite-size pieces.
  • Pour into prepared pan; rap pan on counter-top several times to bounce out the air-bubbles.
  • Bake for 25-30 minutes--top will be golden-brown.
  • Serve with butter and maple syrup.
  • OPTION #1: Add 1 cup grated sharp Cheddar cheese.
  • OPTION #2: Add 1/2 - 1 cup of sweet corn (plain kernels); adds a neat "chewy" texture to the 'cake.'
  • OPTION #3: Add 6 hard-boiled, chopped eggs.
  • OPTION #4: Add 1 pound fried & drained pork sausage (crumbled) or links (bite-size).
  • TIME-SAVING HINT: Gather a handful of 1-quart zipper bags, fill with DRY ingredients, and store in your cupboard. At meal-time, add wet ingredients as described.

6 cups all-purpose flour
3/4 cup sugar
6 tablespoons baking powder
1 teaspoon salt
1/2 cup unsalted butter
2 cups low-fat milk

Steps:

  • Preheat oven to 350 degrees and grease an 11x15 baking pan and set aside.
  • In a mixing bowl, sift together the flour and baking powder and then add the sugar and salt. With your fingers, gently knead in the stick of butter until well incorporated in the mixture. 1 1/2 cups water
1 teaspoon salt

Steps:

  • Mix dry ingredients together well. Add wet ingredients and mix. Batter will be thick. Turn onto floured surface and knead several times or beat batter in bowl several times with a wooden spoon. Turn into a greased 8" round or square pan (can use an iron skillet). Dip fingers into flour and pat down dough. Prick top with a fork and brush with half of melted butter. Bake @450F for 25 minutes or until light golden brown. Brush with remaining melted butter. Cool slightly and serve warm or at room temp.

Steps:

  • Preheat oven to 325 degrees. Heat a cast iron skillet in the oven while it preheats and you prep the johnnycake.
  • *Use an electric mixer and beat the butter and sugar together until creamy and light yellow. *It is helpful to use a stand up mixer to prepare this recipe if you have one.
  • Add the flour, water, salt and baking powder *just* until combined.
