- 1. Preheat oven to 350F.
- 2. Mix all dry ingredients together.
- 3. Add egg, milk and oil to dry mixture and blend well.
- 4. Pour into 8 inch square pan.
- 5. Bake 30-35 minutes until slightly brown on top.
- 6. Serve hot or cold with butter, honey or preserves.
JOHNNY CAKE
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease thoroughly an 8 inch square cake pan.
- Combine cornmeal and milk. Sift flour, baking powder, and salt. Stir together the egg and milk.
- Cream shortening, and blend in sugar. Stir flour mixture and egg mixture alternately into creamed mixture alternately. Blend in cornmeal mixture.
- Bake for 40 to 45 minutes. Serve hot, with maple syrup.

- 1. Combine dry ingredients and cut in the butter until pea sized. Add milk to make a soft dough and knead until smooth. Let dough rest for about 10 minutes.
- 2. You can use either of these cooking methods: Heat a cast iron skillet on very low to medium low heat on the stove top and grease well. Roll out the dough into a disk that neatly fits in the pan. Grill on each side about 10-15 minutes being careful not to burn it. Flipping it is a challenge. I used 2 spatulas in tandem. Check for doneness and cut into wedges and eat. This is how they do it in the Bahamas.
- 3. OR place the dough in a greased 8 or 9 inch round or square pan. Pierce the top with a fork and bake at 350 for 20-25 minutes. Remove from oven and brush with milk, return to oven and bake for 5 minutes more. Then EAT IT.
JOHNNYCAKES
These are though to be the original pancake. Serve them hot with maple syrup. They are also known as hoecakes. Serve hot with honey and butter.

This recipe Is from week 19 of my food blog, "Travel by Stove." I am attempting to cook one meal from every nation on Earth, and The Bahamas are my 19th stop. Johnny cakes are served all over the Caribbean, but they make them a little differently in the Bahamas (without cornmeal).

Steps:
- Mix all the dry ingredients together, then cut in the shortening. Work the mixture with your hands until the grains are about the size of rice.
- Add milk until you get a soft dough (I had to use a bit more than the recipe called for).
- Turn out onto a floured surface and knead until smooth.
- Let the dough rest for 10 minutes, then transfer it to a greased 9x9 inch pan. You will have to press it down so it fills in all the corners. Poke the top of the dough a few times with a fork.
- Bake at 350 degrees for 20 to 25 minutes. You can tell the cake is done when it starts to turn a little golden around the edges.

- With an electric mixer, mix the butter and sugar together until combined.
- Add the flour, water, salt, and baking powder to the bowl. Combine.
- Add the milk slowly until the batter is sticky.
- Dust hands with flour. Transfer dough from bowl to greased 9x9 pan. Gently flatten the dough in the pan.
- Bake for 1 hr or until the edges of the johnny cake are browned. The johnny cake will not rise much. (Every stove is different so while it's baking, keep an eye for the golden edges).

- Preheat oven to 425; grease a 13x9 pan.
- Add dry ingredients to a large mixing bowl, stir through, make a well in the center.
- In another bowl, add eggs, milk, and oil all at once; blend well.
- Add wet to dry ingredients, stir until moistened (don't over-mix or you'll be sorry!).
- Fold in optional ingredients. Sausage should be in crumbles or bite-size pieces.
- Pour into prepared pan; rap pan on counter-top several times to bounce out the air-bubbles.
- Bake for 25-30 minutes--top will be golden-brown.
- Serve with butter and maple syrup.
- OPTION #1: Add 1 cup grated sharp Cheddar cheese.

BAHAMIAN JOHNNY BREAD
This recipe is a cultural staple in the Bahamas and throughout the Caribbean and is a family favorite(one which I have tweaked a bit over the years to suit various tastebuds) but its a wonderful bread/cake-like dish thats commonly served with soups and souses of all kinds (for breakfast, lunch or dinner)and can also be wonderful after dinner supper topped with jam and served with tea or cocoa. - Preheat oven to 350 degrees and grease an 11x15 baking pan and set aside.
- In a mixing bowl, sift together the flour and baking powder and then add the sugar and salt. With your fingers, gently knead in the stick of butter until well incorporated in the mixture. Add in the eggs, vegetable oil, milk and water and mix well with a spoon until the texture of your mixture is between that of a bread dough and the batter of a cake mix, adding more water if necessary.

- *Use an electric mixer and beat the butter and sugar together until creamy and light yellow. *It is helpful to use a stand up mixer to prepare this recipe if you have one.
- Add the flour, water, salt and baking powder *just* until combined.
- Pour in the milk slowly until the batter is sticky. DO NOT over-mix the batter!
- Carefully grease the cast iron skillet with butter and pour in the batter. Flatten the top.
- Bake 1 HOUR or until the edges of the johnnycake are browned. Note: the johnnycake will not rise very much.
