Time 25m

Yield 2 quarts, 8 serving(s)

Number Of Ingredients 13

1 (15 ounce) can fruit cocktail, drained well (I use Libby's cherry cherry cherry in light syrup)
1 -2 jalapeno, seeded and diced small
2 tablespoons tequila
1 1/2 cups heavy cream
1/2 cup Splenda sugar substitute (or sugar)
1 teaspoon vanilla extract
2 egg yolks (and classic ingredients)
ice cream (from this recipe)
cinnamon sugar
1 small flour tortilla
ice cream (from this recipe)
cinnamon sugar
frosted flakes, crushed well (or your favorite, crushed if needed)

Steps:

  • CLASSIC ICE CREAM: To the fruit cocktail, add jalapenos and tequila. Mix well, cover, and refrigerate.
  • Mix the half and half with the sugar and vanilla. Stir until sugar is dissolve. Place milk/sugar mixture into machine and churn for 15-20 minutes. Add fruit mixture and continue churning until ice cream is formed (about 5 minutes). Scoop into a freezer safe container with lid, cover and freeze for at least 2 hours.
  • CUSTARD ICE CREAM: Combine the heavy cream, tequila, and chopped jalapenos in a saucepan and place over medium heat. Bring to a simmer, and cook gently about 10-12 minutes, then remove from the heat. Watch carefully so it does not boil.
  • Meanwhile, in a bowl, whisk the sugar and vanilla into the egg yolks until slightly pale and lightened. Pour about 1/3 of the cream mixture into the yolks while whisking vigorously.
  • Add the yolk mixture back into the saucepan with the rest of the cream mixture and cook over medium heat stirring constantly until the mixture thickens sufficiently to coat the back of spoon. DO NOT allow the custard to boil.
  • Remove from the heat and place in the refrigerator to cool for at least 2 hours. When it has cooled, place in an ice cream maker and churn for 15-20 minutes. Add in the well drained fruit cocktail and churn an additional 5 minutes. Place into a freezer safe container, cover and chill at least 2 hours.
  • FRIED BURRITOS: Form 1/4 cup of ice cream into a 4" long log (or use a sharp knife dipped in hot water to slice). Roll the ice cream in the cinnamon sugar to coat. Wrap in tortilla burrito style tightly, then wrap in plastic wrap tightly. Repeat for remaining burritos. Place in the freezer to harden at least 2 hours.
  • Heat deep fryer to 350°F Unwrap burritos from plastic wrap and carefully place burritos into fry basket ONE at a time. Deep fry for 2-3 seconds. Flip over and fry the other side for 2-3 seconds. Serve with whipped cream and a cherry.
  • ICE CREAM BALLS: Scoop about 1/4 cup of ice cream and quickly form it into a ball. Roll in cinnamon sugar, then in crushed cereal, place on cookie sheet and keep frozen. When ready to serve, Serve as is, or deep fry for 2-3 seconds then drain on paper towels for a few seconds. Serve in a shallow bowl drizzled with chocolate and caramel toppings.

JOHNNY JALAPENO'S COWBOY CANDY

Johnny Jalapeno's Cowboy Candy image

Fresh jalapenos is needed for this recipe which easily doubles/triples to do in batches for canning. This is JJ's chutney that will give your mouth a funky little roller coaster ride of hot & sweet. Serve it with cream cheese on crackers, or as chutney on Tortilla chips. Great for gift baskets! Remove the seeds from the jalepenos for 'Cowgirl Candy'. I have sometimes made this with an assortment of hot peppers from our garden.

Time 30m

Yield 2 cup, 16 serving(s)

Number Of Ingredients 5

2 cups fresh jalapenos, sliced (must be fresh!)
1/2 onion, chopped

1 cup light corn syrup

  • Reduce temperature to low and simmer 20-25 minutes, stirring occasionally until liquid is reduced by about half.

  • TO JAR FOR LONG STORAGE OR GIFTS: Carefully pour hot candy/jelly into sterilized 4 or 8 oz jars, leaving a 1/4" headspace. Wipe jar rims, place warm lids and rings atop and tighten hand tight. Process in a boiling water canner for 10 minutes. Remove jars and cool on a wire rack.

LEMON AND BASIL ICE CREAM

Lemon and Basil Ice Cream image

From Diana Henry's Crazy Water, Pickled Lemons: Enchanting Dishes from the Middle East, Mediterranean and North Africa. This recipe uses an ice cream maker, freezing time not included. Use the general guide lines on your specific ice cream maker.

Categories     Frozen Desserts

Time 1h45m

Yield 4 serving(s)

Number Of Ingredients 7

10 ounces milk (300ml)
30 large basil leaves, roughly torn
1 lemon, rind of, cut into strips, white pith removed
5 1/2 ounces caster sugar (150g)
4 egg yolks
1 lemon, juice of
5 ounces whipping cream (150ml)

Steps:

  • Heat the milk just to the boiling point, then add the basil leaves and lemon rind. Take off the heat and leave to infuse for 1 hour.
  • Beat the sugar and yolks together until pale and fluffy. Strain the milk, pressing the basil and lemon rind to extract any last bits of flavour. Stir this into the egg and sugar mixture.
  • Put your bowl on top of a sauce pan of simmering water. Stir the liquid in the bowl constantly until it thickens slightly. If you scrape the back of a spoon through the mixture and it leaves a path, your custard is ready. Immediately pour it into another bowl and leave to cool.
  • When cool, add the lemon juice to the custard. In a separate bowl, beat the cream lightly. When the cream has thickened, add to the custard mixture.
  • Freeze in an ice cream maker, stopping three times during the freezing process to beat the mixture with an electric beater.

JOHNNY JALAPENO'S 'CANCUN VACATION' CITRUS SHRIMP MEDLY

Johnny Jalapeno's 'cancun Vacation' Citrus Shrimp Medly image

This is a fantastic one dish meal recipe that is super fast and easy to make. And here's how this recipe came about: JJ and the McDaniel gang went on a long needed vacation. They were enjoying the blue waters and sandy beaches of cancun, but that Johnny still had a hankerin for cookin! (it's in his blood, he can't help it). Well, with all those delicious tropical fruits and flavors around, he told the gang that "well, a man's gotta do what a man's gotta do". So the gang helped their buddy and stormed inta the hotel kitchen wavin their pistolas high up in the air shoutin' 'Stand back!" as Johnny started grabbin for the pans. Well that frightened little manager of the hotel had him a taste,.. It was so good, that when the sheriff arrived, the manager told him that is was just a case of 'good old island fever!" The sheriff was initially a bit upset by the false alarm , but he got over it just fine after a taste of this medly. Ah, love vacations, they'z always an adventure! said Johnny.

Time 20m

Yield 4 serving(s)

Number Of Ingredients 15

1 tablespoon extra virgin olive oil
2 tablespoons butter
2 garlic cloves, minced
1 jalapeno, diced small (optional)
1/2 red onion, thinly sliced
1 tablespoon fresh ginger, minced (or 1 tsp ground)
1 large carrot, ribboned (see instructions)
1 (8 ounce) can sliced water chestnuts, drained
1/3 cup pink grapefruit juice
1/4 cup orange juice
2 tablespoons lemon juice
2 tablespoons honey
1 1/2 lbs jumbo shrimp, peeled deveined
1 cup cooked white rice (or brown)
1/4 cup chopped parsley flakes

Steps:

  • CARROT RIBBONS: Peel the carrot and then continue peeling long strips, rotating the carrot so the strips don't get too wide.
  • Heat oil and butter in a large skillet on medium heat. Add the garlic, jalapeno, onion, and ginger. Cook 1 minute to soften onions. Add carrots, and water chestnuts and continue cooking until carrots are just tender, about 2-3 minutes. Spoon the vegetables to a dish and cover to keep warm.
  • In the same skillet increase the heat to med-high. Add the juices and honey. When the juice has simmered down some, add the shrimp and cook about 1 minute per side when shrimp is just about fully cooked.
  • Add the vegetables back in along with the cooked rice and stir until sauce coats everything and thickens. Plate up, garnish with the dried parsley, and serve.
