Creamy and spicy, this classic John Wayne casserole is the ultimate family meal or potluck dish.

2 pounds ground beef, browned, crumbled and drained
1 1-oz. packet taco seasoning
¾ cups water
1 small onion, sliced thin in about 1 inch pieces
1 red bell pepper, sliced thin in about 1 inch pieces
2 ¼ cups Bisquick mix
⅔ cup water
½ cup mayonnaise
½ cup sour cream
8 ounces sharp cheddar cheese, shredded and divided
2 Roma tomatoes, sliced thin
1 4-oz. can green chiles

Steps:

  • Preheat oven to 325 degrees F. Lightly spray a 9x13-inch baking dish with non-stick cooking spray.
  • In a 12-inch skillet brown the ground beef until thoroughly cooked, then drain and return to the skillet. Add ¾ cup water, the taco seasoning packet and bring to a boil. Add the onion and the peppers. Turn down the heat and simmer for three to five minutes, or until the onions and peppers begin to soften. Set aside
  • In a small bowl mix together the biscuit mix and ⅔ cup water to make a soft dough. Press the dough into the bottom and up the sides about ½ inch in the prepared baking dish. The dough was a little sticky so I used parchment paper to press it out on the bottom, and I used a spatula to bring it up the sides.
  • In a small bowl mix together the mayonnaise, the sour cream and half the cheese. Set aside.
  • Spread the ground beef mixture evenly over the biscuit layer. Evenly layer the sliced tomatoes over ground beef mixture. Evenly layer the green chilies over the tomatoes. Evenly spread the sour cream mixture over the green chilies. Top with remaining cheese.
  • Bake for 30 to 35 minutes or until edges are lightly browned.

A no-fuss version of Hoppin' John features just six ingredients and convenient slow-cooker preparation.

2 smoked pork hocks (about 1 1/4 lb)
1 3/4 cups Progresso™ reduced-sodium chicken broth (from 32-oz carton)
1 tablespoon dried chopped onion
2 cans (15.8 oz each) black-eyed peas, drained, rinsed
1/2 lb smoked sausage, cut in half lengthwise, then cut crosswise into 1-inch pieces
1/2 cup uncooked instant rice

Steps:

  • Spray 3 1/2- to 4-quart slow cooker with cooking spray. Place pork hocks in cooker. Add 1 cup of the broth (refrigerate remaining broth). Top pork with onion, peas and sausage.
  • Cover; cook on Low heat setting 8 to 10 hours.
  • Remove pork from cooker; place on cutting board. Pull meat from bones, using 2 forks; discard bones, skin and fat. Return pork to cooker. Add remaining broth and the rice. Increase heat setting to High. Cover; cook 10 minutes or until rice is tender.

Everyone has loved this recipe when I fix it. So easy and so delicious. I always double the recipe because my husband could eat it every night, and I can take a large dish to my son.

1 1/2 lb hamburger, do not use to lean it will be too dry
8 oz thin spaghetti, broken in half or noodles
small box peas
1 medium green bell pepper, diced
1 small onion, diced
1 can(s) cream of mushroom soup
1 can(s) tomato soup
2 Tbsp butter or margarine
sm box velvetta cheese

Steps:

  • 1. Fry hamburger, diced onions, and diced bell pepper together until hamburger is no longer pink. Prepare spaghetti or noodles as directed on box. I like it best with spaghetti which I break in half before boiling.
  • 2. In a large bowl mix cream of mushroom and tomato soups together. Prepare your frozen peas in the microwave as per package. Add 2 TBS of butter to your peas until melted.
  • 3. Add the hamburger mixture, peas, and spaghetti to the soups in your large bowl. Mix all together and pour into a 9 x 9 dish or you can use a 9 x 13. Bake at 350 for 40 minutes to an hour. You don't want it to be too dry. I usually pull it out when bubbling on edges. Cover top with slices of Velveta cheese and place back into the oven to melt.

2 pounds ground beef (browned and drained)
1 ounce packet taco seasoning plus water listed on the back or my homemade taco seasoning
16 ounce can large biscuits
1/2 cup sour cream
1/2 cup mayonnaise
8 ounces cheddar cheese (shredded and divided)
1 medium onion (halved and sliced)
2 medium tomatoes (sliced)
1 medium red bell pepper (halved and sliced)
4 ounces canned sliced Jalapeno peppers

Steps:

  • Preheat oven to 350 F and place your oven rack in the center. Spray a 13x9 glass baking dish.
  • Place biscuits in pan in a single layer and press into the pen, joining them together, pressing the dough halfway up the sides of the pan. Place pan on a baking sheet and bake dough in preheated oven for 15-25 minutes; checking every few minutes after 15. The dough should be very light brown where the edges are just starting to get color. Remove from oven and set aside, leave oven on.
  • While biscuits are baking, combine the browned ground beef with the taco seasoning and water, and cook according to packet instructions. Transfer cooked taco meat to a bowl and set aside. Wipe out pan.
  • In a separate bowl, combine sour cream, mayonnaise, half of the cheddar cheese, and half of onions. Stir well and set aside.
  • Saute remaining onions and bell peppers on the taco meat pan until slightly tender.
  • On top of baked biscuit crust, layer ingredients in the following order: taco meat, tomato slices, bell pepper and onion mixture, Jalapeno peppers, sour cream mixture and sprinkle with remaining shredded cheese. Bake uncovered for 30-40 minutes or until edges of dough are lightly browned and cheese is melted.

2 1/2 pounds hamburger
1 large onion
1 12 ounce package egg noodles
1 can peas
1 can mushroom soup
2 cans cream of chicken soup
1 pound Velveeta Cheese cut into chunks
crushed potato chips

Steps:

  • Brown hamburger and onion together and simmer 1/2 hour. Boil egg noodles until tender. Drain and run cold water over them. In a very large bowl, combine all ingredients stirring in cheese last. Divide into 2 casserole dishes. Cover with crushed potato chips. Bake at 350 degrees for 30-45 minutes until bubbly around sides.
