ROSEMARY RUB BEER-BUTT / BEER CAN CHICKEN (W/ BOURBON)



Rosemary Rub Beer-Butt / Beer Can Chicken (W/ Bourbon) image

This recipe changes a little every time I prepare it, but the foundation has been well received so far. I use a "McCormick" rosemary / garlic rub and a small bottle of "Jim Beam" bourbon as the rub. I like to use 2 whole chickens, and cook them on a "Cabelas" brand dual beer butt chicken stand. Also important, I usually drink heavily when I am making this great outdoor dish, so ratios tend to vary according to my mood at the time of preparation. I would recommend you create this dish to your taste preferences. Enjoy.

24 ounces beer
2 whole chickens
750 ml Bourbon (or more if you would like)
3 cups seasoning (rosemary & garlic)
1/2 cup butter (1 stick butter)

Steps:

  • Preheat grill to 375°F preferably indirect heat (the oven works sorta-ok too).
  • Empty beer cans by 1/4 to 1/3, then set them into stand.
  • Place chickens over beer cans (try and keep them from touching).
  • Grind 1 cup rosemary & garlic seasoning into a powder. Melt 3/4 stick of butter. Mix in powdered seasoning. Pour concoction into a meat flavor injector. Inject chickens in the middle of the breasts, thighs, and legs.
  • Have a whiskey, or two.
  • Spritz the chickens with bourbon. Inside and out (I use a squirt bottle).
  • Rub entire bare skin of chickens with leftover 1/4 butter.
  • Rub the rest of the seasoning into entire skin of chickens (maybe grind some more of the seasoning down a little to help the rubbing action).
  • Maybe another shot of whiskey to clear the throat and mind?.
  • Place chickens onto covered, and preheated grill.
  • Cook for 2 hours, Every 10-15 minutes spritz chickens with bourbon. (leave lid shut when you do this. Go through the back and side vent on lid of grill).
  • Finish off with a nice glass of bourbon on the rocks.

This was our first attempt at beer butt chicken and it was awesome! You can change the flavor a bit by changing the beer you use.

4 -5 lbs chicken
1 tablespoon paprika
1 teaspoon mustard powder
1 tablespoon sea salt
1 tablespoon brown sugar
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon Chinese five spice powder
1 (12 ounce) can beer
2 cups orange juice
2 tablespoons olive oil
2 tablespoons balsamic vinegar

Steps:

  • Mix dry ingredients together and rub chicken inside and out.
  • Open can of beer, pour half into a spray bottle and add orange juice, olive oil and vinegar to spray bottle.
  • Insert the can into the cavity of the chicken.
  • With the chicken resting on the can, cook for about 2 hours over medium-hot grill with grill cover on spray chicken with the basting spray while cooking.
  • When done, carefully lift the chicken off the grill and remove the can-- be careful, liquid is HOT!

This chicken always turns out juicy and tender with robust flavor. Are you tired of the same old boring chicken? Try this one! It is so easy to prepare and cook. There are other versions that can be cooked on the grill but we prefer ours in the oven. It's a dinner our whole family loves.

¼ cup garlic powder
2 tablespoons seasoned salt
2 tablespoons onion powder
1 tablespoon dried oregano
1 tablespoon salt
1 ½ teaspoons ground black pepper
1 (12 fluid ounce) can light-flavored beer (such as Bud Light®)
1 (3 pound) whole chicken
4 green onions, sliced
4 green onions, cut in half crosswise
1 (12 fluid ounce) can light-flavored beer (such as Bud Light®)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix the garlic powder, seasoned salt, onion powder, dried oregano, salt, and ground black pepper in a small bowl; set aside. Pour 1/3 of one can of beer into the bottom of a 9x13-inch baking dish. Place the open beer can in the center of the baking dish.
  • Rinse chicken under cold running water. Discard giblets and neck from chicken; drain and pat dry. Fit whole chicken over the open beer can with the legs on the bottom. With the breast of the chicken facing you, use a paring knife to cut a small slit on each side and press the tip of each wing into the slit to encourage even cooking.
  • Rub the prepared seasoning mixture to taste over the entire chicken. Pat the sliced green onions around the whole chicken evenly. Some will fall into the beer, that's fine. Press the halved green onions into the top cavity of the chicken. Open the remaining beer and pour 1/2 of it into the pan under then chicken. Reserve the remaining beer.
  • Bake the chicken in the preheated oven. After 45 minutes, pour remaining beer into the pan under the chicken. Continue baking until no longer pink at the bone and the juices run clear, about 30 additional minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the chicken from the oven and discard the beer can. Cover the chicken with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.

1/2 cup brown sugar, packed tight
2 teaspoons fine sea salt
2 tablespoons black pepper
4 tablespoons paprika
2 teaspoons cayenne pepper
4 tablespoons ketchup
3 teaspoons Frank's red hot sauce
4 tablespoons Bud Light beer
4 tablespoons white vinegar
1 (12 ounce) can Bud Light beer
1 (3 1/2-4 lb) whole chickens

Steps:

  • Rinse chicken well inside an out.
  • Pat bird completely dry with paper towels.
  • To make the rub: mix 4 tbsp paprika, 2 tsp salt, 2 tbsp black pepper, 2 tsp cayenne pepper, and 1/4 cup brown sugar in a small bowl and set it aside.
  • To make glaze: mix together 1/4 cup brown sugar, 4 tbsp ketchup, 3 tsp frank's red hot sauce, 4 tbsp white vinegar, 4 tbsp beer (save remainder in can and set it aside), and 2 tbsp of the spice rub you just made in a separate bowl; set aside.
  • Pour beer can out (or drink it down) until it is just a bit over half way full and then add crushed bay leaves and 1 tsp of rub to the half full can.
  • Loosen the skin on the breasts, legs and thighs of your chicken.
  • Massage the rub into the meat under the skin and then all over the outside of the bird's skin as well as inside the cavity.
  • Place beer can in the "butt" of the bird making the bird stand upright.
  • Preheat grill with all burners on high until grill is heated and ready to cook.
  • You must cook indirectly; so if you have 2 burners on your grill, turn one off (for 3 burners turn 1 off, for 4 burners turn 2 off, etc.).
  • Place the standing bird on the cooler or "off" burner side of the grill with the breasts facing the hot or "on side of it (you grill should remain at about 375 degrees during the entire cooking process).
  • Close lid and cook for 30 minutes, then rotate bird so that the opposite side (the back) is not facing the heated side of the grill and then continue cooking with the lid closed for 30 more minutes.
  • Rotate bird back to original position with breasts facing the heat and glaze the entire bird thoroughly with the pre-made glaze; continue cooking 30 more minutes until cooked, brown and slightly crisped.
  • Transfer chicken carefully off of beer can and onto cutting board.
  • Let rest 5-10 minutes and then carve and enjoy!

This recipe was adapted from many that call for the chicken to be cooked on a grill. This one is done in the oven. It turns out moist and tender. Very easy to do.

1 tablespoon sweet basil
1 tablespoon parsley
1 tablespoon oregano
1 tablespoon granulated garlic
1 tablespoon seasoning salt
1/2 teaspoon pepper
1 1/2 tablespoons poultry seasoning
3 tablespoons mayonnaise
1 beer

Steps:

  • Pre heat oven to 375.
  • Wash and clean chicken inside and out.
  • Place all dry ingredients on a paper plate or in a bowl. Mix all together.
  • Rub dry 2/3's of the ingredients on the inside of the bird and 1/2 of the remaining on the outside.
  • Open beer and drink half or set asside. Put the rest of the dry seasoning in the half a can of beer.
  • Place the can right side up into the bird's butt.
  • Stand the bird in a baking pan.
  • Slather the bird's outside with the mayonaise.
  • Place the chicken in the pre heated oven and bake for 2 hours. Reduce heat to 325 for 1/2 hour.
  • Remove when nice and brown.
  • Let stand for 15 minutes before carving.
  • Use pan drippings to make gravy.

From my hero of the grill, Rob Rainford. This to me is the ultimate beer can chicken recipe and the ultimate treat for me! The leftovers make awesome sandwiches, especially grilled cheese sandwiches with monterey jack and some salsa.

2 teaspoons dried sage
2 teaspoons cayenne pepper
1 tablespoon celery salt
1 tablespoon black pepper
2 tablespoons brown sugar
1 tablespoon garlic powder
1 tablespoon thyme leaves
1 roasting chicken (6-7 lbs.)
1 (16 ounce) can beer
1/4 cup chicken stock
1 tablespoon brandy
2 teaspoons lemon juice, freshly squeezed
2 tablespoons butter
4 tablespoons butter, melted
2 cups mesquite wood chips

Steps:

  • Combine all the dry rub ingredients in a bowl and mix.
  • Prepare the marinade by placing the chicken stock, brandy, lemon juice, butter and 1 tablespoon of the dry rub into a small saucepan and warm gently until the butter melts then cool to room temperature.
  • Remove giblets from chicken along with any fat from inside the cavities, rinse then pat dry.
  • Season the inside cavity with 2 tablespoons of the dry rub, and rub in 3 tablespoons of the rub all over the outside of the chicken.
  • Using a syringe style flavor injector, inject the marinade sauce into the breast, thighs and drumsticks until plump. Brush the outside of the bird with some of the melted butter and let it sit in the fridge to marinade for 3 hours.
  • After the chicken has been marinading for 2½ hours, prepare the wood chips for smoking by pouring half of the beer over them in a bowl and let them soak for a half hour. Use a sharp can opener to punch a couple more holes in the top of the beer can and set aside.
  • Prepare the barbeque for indirect cooking by placing a drip pan underneath the grate on one side and removing the grate from the other side, then turn on only the burner opposite of the drip pan to high heat.
  • Squeeze the excess beer from the wood chips and make a smoking pouch with tinfoil (wrap in foil then poke holes with a fork), or smoking tray or tube.
  • Place wood chips directly over the burner that is on, close the lid and wait for smoke to appear. Once smoke appears, reduce to medium heat.
  • Hold chicken upright with body cavity down and lower onto the beer can then place onto the cool side of the grill over the drip pan and pull legs forward to form a stable tripod so it can stand upright on its own.
  • Brush with melted butter and continue to cook at 220°F with the lid down, basting every 45 minutes or so with the melted butter. If the chicken gets too brown on the outside before it is done, cover with tinfoil.
  • Remove chicken from the grill once it reaches an internal temperature of 180°F, about 2½ hours, cover with tinfoil and let rest for 10 minutes.
