Number Of Ingredients 10

Filling:
5 to 6 apples peeled, cored, and sliced into thin slices.
1/2 cup sugar
1 tablespoon ground cinnamon
1/2 cup apple cider or apple juice
1 teaspoon vanilla extract
Toppings:
1 cup all purpose flour
1 cup sugar
1 stick cold butter leave in wrapper

Steps:

  • Preheat oven to 400 degrees F. Filling: In a small mixing bowl, Mix Cinnamon and Sugar together. In an 8x8 or 9x9 inch baking pan, add a single layer of the sugar and cinnamon mixture, do not grease pan. Begin layering sliced apples, sprinkling a cinnamon/sugar layer between each layer of apple slices. Once apple slices are at the top of the pan, cover with final layer of cinnamon/sugar mixture. Mix vanilla extract and apple cider/juice in a measuring cup. Pour over apple slices. Topping: Place flour and sugar into a small mixing bowl, blend well. Place Cold stick of butter with wrapper on bottom portion. Begin grating butter with a flat grater over bowl. Keep sliding wrapper down to grade butter into flour/sugar mixture until the grated stick of butter is all in mixture. Use a pastry cutter and blend ingredients together until crumbly. Cover the apples with the topping, sprinkling all over. Bake in preheated 400 degree F. oven 25 minutes or until golden brown and bubbly, check and don't burn. Cool & Serve. Add a scoop of vanilla ice cream if you wish.

6 c cubed apples
1/4 c butter
1/4 c brown sugar
1/4 c all purpose flour
graham cracker pie crust
vanilla ice cream and caramel syrup

Steps:

  • 1. Mix first four ingredients and pour into crust. Combine the last 3 ingredients and pour on top.
  • 2. Bake at 350 degrees for 40-50 minutes
  • 3. Top with vanilla ice cream and caramel syrup

I made this for my grandparent's 61st wedding anniversary recently. They lived in Florida in their youth, and loved Joe's Stone, and have lamented on occasion that they will never be able to go back (they now live in Virginia). The family rallied 'round and ordered the crab claws directly from Joe's, got a Joe's Stone Crab Cookbook, and prepared the rest of the meal directly from it. What a fantastic surprise it was... and this was a very sweet end to the night. NOTE: I was only able to find about 8 key limes, which wasn't enough juice. I supplemented with Nellie & Joe's Key Lime juice without a problem. Also, I thought the pie was so rich it didn't even need any whipped cream.

1/3 lb graham cracker (or 1 cup plus 2 1/2 Tablespoons graham cracker crumbs)
5 tablespoons melted unsalted butter
1/3 cup sugar
3 egg yolks
1 1/2 teaspoons grated key lime zest
1 (14 ounce) can sweetened condensed milk
2/3 cup freshly squeezed key lime juice
1 cup heavy whipping cream, chilled
3 tablespoons confectioners' sugar

Steps:

  • For the crust:.
  • Preheat oven to 350°F.
  • Butter a 9-inch pie plate.
  • Break up graham crackers, place in processor and process to crumbs (if you don't have a processor, place crackers in large plastic bag, seal, and crush using a rolling pin).
  • Add melted butter& sugar and pulse until combined.
  • Press mixture into bottom and up sides of pan, forming a neat border around th edges.
  • Bake until crust is set and golden, about 8 minutes.
  • Set aside on wire rack; leave oven on.
  • For the filling:.
  • Meanwhile, in an electric mixer with the wire whisk attachment, beat the egg yolks and lime zest at high speed until very fluffy, about 5 minutes.
  • Gradually add the condensed milk and continue to beat until thick, 3-4 minutes longer.
  • Lower the mixer speed and slowly add lime juice, mixing until just combined.
  • Pour mixture into crust and bake for 10 minutes, or until filling has just set.
  • Cool on wire rack, then refrigerate.
  • Freeze for 15-20 minutes before serving.
  • For the topping:.
  • Whip the cream and the confectioner's sugar until nearly stiff.
  • Cut pie in wedges and serve very cold, topping each wedge with a dollop of whipped cream.
  • Garnish with a slice of key lime if desired.

Crab Cakes with Spicy Remoulade Sauce Recipe - (4.5/5) image

Crab Cakes:
1/2 lb jumbo lump crab meat, pick it over but leave it in large chunks
3 tbs finely chopped red pepper
2 tbl finely chopped shallots
2 tbl finely chopped flat leaf parsley
1/4 mayonnaise
1 egg
1/4 tsp cayenne
Tabasco, several dashs (to taste)
2 - 4 tbls bread crumbs (to bind the cakes)
Panko for coating the crab cakes
Canola oil for sauteing
Remoulade Sauce:
1.5 c. mayonnaise
3 tbls capers, drained & chopped
3 tbls chopped cornichons
1 tbl chopped chived
1 tbl chopped chervil (can substitute flat leaf parsley if not available)
1 tbl chopped tarragon
1 tbl Dijon Mustard
Salt & Pepper to taste
1 tsp Worcehtershire sauce
3 - 4 dashes Tabasco sauce

Steps:

  • 1) Combine red pepper, shallots & parsley in a bowl, season with salt & pepper & then add the crab being careful not to break up the large pieces 2) In a small bowl, combine the mayonnaise & egg, season with cayenne & Tabasco, Gently stir into crab & mix just to blend. 3) Stir in 2 tbls of bread crumbs & see if the cakes hold together (you just want the cakes to barely hold together). If necessary add additional bread crumbs. Form 4 cakes & coat with panko. Refrigerate until ready to fry. 4) Preheat oven to 350 F 5) Heat a large saute pan and add about 1/4" of oil. Add in crab cakes & cook over medium high heat until the cake are lightly golden, about 2 minutes. Turn the cakes over & cooks the other side. 6) Transfer to parchment lined baking sheet & bake for 10 minutes, until cooked through. Remoulade sauce Combine all the ingredients, season to taste with salt & pepper. Refrigerate until ready to use, will keep in refrigerator for up to 3 days.
