Steps:
- Bring the vinegar to a boil in a small, non-reactive pot, and mix in sugar until dissolved. Reduce heat to low, simmer 5 minutes, and remove from heat. Mash the garlic and salt into a smooth paste, and mix into the pot. Stir in the red pepper flakes. Cool to room temperature before using, or store up to 2 days in the refrigerator.

HOT AND SWEET DIPPING SAUCE

Steps:
- Place the vinegar in a small non-reactive saucepan and heat to a boil. Add the sugar, stirring until it has completely dissolved, then lower the heat to medium-low and let simmer for 5 minutes.
- Meanwhile, using a mortar and pestle or a bowl and the back of a spoon, pound or mash the garlic and salt to a smooth paste. Stir in the pepper flakes and blend well. Remove the vinegar mixture from the heat and stir in the garlic paste. Let cool to room temperature. Store sealed in a glass jar in the refrigerator for up to 2 days.

- Each of the ingredients above is a dipping sauce, all by itself, other than the sichuan pepper and salt.
- Provide small bowls of each dip for each individual diner.
- ============= Sichuan Pepper Salt ============.
- Dry roast the Sichuan peppers until they are fragrant -- do NOT burn them.
- Using a coffee grinder or mortar and pestle, grind the peppers.
- You may either serve the pepper and salt in individual dipping bowls or you can mix the salt and pepper to create a single dipping ingredient.

- Make Sesame sauce:
- Toast sesame seeds. Purée in a blender with remaining ingredients until smooth.
- Make Garlic Sauce:
- Stir together all ingredients until sugar has dissolved.
- Make broth:
- Bring broth, water, garlic, and ginger to a boil in a small saucepan. Discard ginger. Keep at a brisk simmer.
- To cook:
- Simmer chicken, tofu, noodles, and vegetables in small batches (chicken will take 30 seconds to 1 minute; make sure not to contaminate other food with utensils for the raw chicken). Serve with dipping sauces in small bowls.
DIP AND FRIED GREEN BEANS
These are up there with fried pickles and I can.t leave out fried green tomato....Last spring my husband and I went to Red River here in NM and I ordered these off of the menu...As you can tell I fell in cooking and eating love with them. They are so simple and amazing.

- 1. Preheat oil to 375* Tip, wash and pat dry on paper towel (green beans) In a bowl mix all dry ingredients, add milk (stir), add beaten egg (stir) till smooth, no lumps.
- 2. Dip green beans in batter and place in hot oil for 2-3 minutes turning for and even crisp. I use a basket to fry mine in. Do it in batches. They will be golden crisp in color. Drain on a paper towel
