2 teaspoons ketchup
2 tablespoons prepared horseradish
¼ teaspoon paprika
¼ teaspoon salt
⅛ teaspoon dried oregano
1 dash ground black pepper
cayenne pepper to taste

Steps:

  • In a small bowl combine mayonnaise, ketchup, horseradish, paprika, salt, oregano, black pepper and cayenne pepper. Store, covered, in the refrigerator.

1 bottle french dressing (catalina sub) (reg)
1/2 c mayonnaise
1/4 c sour cream
1 tsp garlic
1 tsp mexican oregano
2 tsp mexican hot sauce
2 Tbsp creamy horseradish
1/4 tsp liquid smoke (mesquite)
1/4 tsp lemon juice
1 Tbsp honey
2 tsp onion flakes, dehydrated

Steps:

  • 1. In large bowl mix all ingredients, cover and refrigerate for 1 hour before using....

½ cup rice vinegar
½ cup white sugar
1 clove garlic, minced
¼ teaspoon salt
1 ½ teaspoons dried red pepper flakes

Steps:

  • Bring the vinegar to a boil in a small, non-reactive pot, and mix in sugar until dissolved. Reduce heat to low, simmer 5 minutes, and remove from heat. Mash the garlic and salt into a smooth paste, and mix into the pot. Stir in the red pepper flakes. Cool to room temperature before using, or store up to 2 days in the refrigerator.

1/2 cup rice or cider vinegar
1/2 cup sugar
1 to 2 cloves garlic, finely minced
1/4 teaspoon salt
1 1/2 teaspoons dried red pepper flakes

Steps:

  • Place the vinegar in a small non-reactive saucepan and heat to a boil. Add the sugar, stirring until it has completely dissolved, then lower the heat to medium-low and let simmer for 5 minutes.
  • Meanwhile, using a mortar and pestle or a bowl and the back of a spoon, pound or mash the garlic and salt to a smooth paste. Stir in the pepper flakes and blend well. Remove the vinegar mixture from the heat and stir in the garlic paste. Let cool to room temperature. Store sealed in a glass jar in the refrigerator for up to 2 days.

1 tablespoon roasted sichuan peppercorn (for Sichuan pepper salt)
1/2 tablespoon salt (for Sichuan pepper salt)

Steps:

  • Each of the ingredients above is a dipping sauce, all by itself, other than the sichuan pepper and salt.
  • Provide small bowls of each dip for each individual diner.
  • ============= Sichuan Pepper Salt ============.
  • Dry roast the Sichuan peppers until they are fragrant -- do NOT burn them.
  • Using a coffee grinder or mortar and pestle, grind the peppers.
  • You may either serve the pepper and salt in individual dipping bowls or you can mix the salt and pepper to create a single dipping ingredient.

1/4 cup sesame seeds
1/4 cup water
2 tablespoons low-sodium soy sauce
1 tablespoon rice vinegar (not seasoned)
1 1/2 teaspoons Asian sesame oil
1 teaspoon peanut butter
1/2 teaspoon minced peeled ginger
1/2 teaspoon sugar
1/8 teaspoon hot red-pepper flakes
For garlic dipping sauce:
2 tablespoons low-sodium soy sauce
2 tablespoons water
1 1/2 tablespoons finely grated garlic
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon sugar
For broth:
3 cups reduced-sodium chicken broth
2 cups water
1 garlic clove, sliced
3 thin slices peeled ginger
To cook and dip:
1/2 skinless boneless chicken breast (raw), thinly sliced
1/2 cup cubed firm tofu
1 ounce rice vermicelli (cooked according to package instructions and plunged into cold water to stop cooking)
1/2 cup sliced stemmed fresh shiitake mushrooms
1/2 cup fresh enoki mushrooms, cut into 3-inch lengths and spongy base discarded
2 scallions, sliced
1 cup snow peas, trimmed
2 Napa cabbage leaves, quartered
1 carrot, thinly sliced

Steps:

  • Make Sesame sauce:
  • Toast sesame seeds. Purée in a blender with remaining ingredients until smooth.
  • Make Garlic Sauce:
  • Stir together all ingredients until sugar has dissolved.
  • Make broth:
  • Bring broth, water, garlic, and ginger to a boil in a small saucepan. Discard ginger. Keep at a brisk simmer.
  • To cook:
  • Simmer chicken, tofu, noodles, and vegetables in small batches (chicken will take 30 seconds to 1 minute; make sure not to contaminate other food with utensils for the raw chicken). Serve with dipping sauces in small bowls.

1/2 c yellow cornmeal
1/2 c milk
1/2 tsp sea salt
1/4 tsp cayenne pepper
1/4 tsp garlic powder
1 large egg, beaten
1 tsp baking powder
1 lb green beans, fresh
1 qt cooking oil
JODIES HOT DIPPING SAUCE (LINK BELOW)

Steps:

  • 1. Preheat oil to 375* Tip, wash and pat dry on paper towel (green beans) In a bowl mix all dry ingredients, add milk (stir), add beaten egg (stir) till smooth, no lumps.
  • 2. Dip green beans in batter and place in hot oil for 2-3 minutes turning for and even crisp. I use a basket to fry mine in. Do it in batches. They will be golden crisp in color. Drain on a paper towel

1 tablespoon honey
1/2 cup sour cream
3 ounces softened cream cheese

1 tablespoon brown sugar

Steps:

  • Fry the potatoes in deep hot oil (375*F) until golden; drain excess grease.
  • Blend the spices and shake generously over the hot fries.

  • For the Honey Mustard Dip: In a small bowl, combine the mayonnaise, mustard, and honey. Serve at room temperature or warm slightly.
  • For the Creamy Blue Cheese Dip: In a small bowl, combine the sour cream, cream cheese, and salad dressing until smooth. Stir in the crumbled blue cheese. If mixture is too thick, thin it out with 1-2 tablespoons milk.
  • For the Range Dip: Combine 1 tablespoons brown sugar to each 1/2 cup of your favorite barbecue sauce.
