There are only two things you need for great lasagna: a thick, rich, super-meaty meat sauce and lots of it, and a ricotta filling where only the finest cheeses are welcomed. For the sauce, I love a combination of half Italian sausage and half lean ground beef. I also like lots of sauce.

1 pound bulk Italian sausage
1 ½ pounds lean ground beef
1 (8 ounce) package fresh mushrooms, coarsely chopped
1 teaspoon salt
½ teaspoon freshly ground black pepper
½ teaspoon dried Italian herb seasoning
¼ teaspoon red pepper flakes
6 cups prepared marinara sauce
2 tablespoons water, plus more as needed
2 eggs
2 pounds whole-milk ricotta cheese
1 (8 ounce) container fresh mozzarella cheese, diced
⅔ cup freshly shredded Parmigiano-Reggiano cheese
1 teaspoon salt
¼ teaspoon freshly ground black pepper
1 pinch cayenne pepper, or to taste
¼ cup chopped fresh parsley
1 (16 ounce) package lasagna noodles
1 (8 ounce) container fresh mozzarella cheese, diced
½ cup freshly shredded Parmigiano-Reggiano cheese

Steps:

  • Place sausage and ground beef into a large saucepan over medium heat; cook and stir until meat is browned and crumbly, about 10 minutes. Break the meat apart as it cooks. Stir in mushrooms, 1 teaspoon salt, 1/2 teaspoon black pepper, Italian herb seasoning, and red pepper flakes. Turn heat to medium-high and cook until mushrooms have given off their juices and bottom of pan is almost dry.
  • Pour prepared marinara sauce into meat mixture. Pour water into marinara sauce jar and shake to get all the sauce out of the jar; add to mixture. Reduce heat to low and simmer until meat is extremely tender, about 2 hours. Add a little more water if sauce becomes too thick. Skim excess fat from surface of the sauce and season with more salt and black pepper, if needed. Turn off heat.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat eggs in a large bowl and stir in ricotta cheese, 8 ounces diced mozzarella cheese, and 2/3 cup Parmigiano-Reggiano cheese. Season cheese mixture with 1 teaspoon salt, 1/4 teaspoon black pepper, and cayenne pepper; mix in parsley.
  • Bring a large pot of salted water to a boil. Cook lasagna in the boiling water, stirring occasionally, until cooked through but firm to the bite, about 8 minutes. Drain and rinse noodles and set aside in a bowl of cold water.
  • Spread 1/4 the sauce into the bottom of a 10x15-inch baking pan. Top with 1/3 the noodles and spread 1/2 the ricotta cheese mixture over noodles. Spread 1/4 the meat sauce over the cheese, top with 1/3 the noodles, and spread remaining 1/2 the ricotta mixture over the noodles. Spread 1/4 the meat sauce over the cheese filling. Tap the casserole dish lightly on a sturdy work surface to settle the layers. Arrange last 1/3 the noodles over sauce and spread remaining 1/4 the sauce over the noodles. Dot top of the casserole with 4 ounces diced fresh mozzarella cheese and sprinkle with 1/2 cup Parmigiano-Reggiano cheese.
  • Cover casserole with aluminum foil, being sure not to touch the top of the casserole with the foil. Place casserole onto a baking sheet to catch spills.
  • Bake in the preheated oven for 30 minutes. Remove foil and cook until lasagna is golden brown and bubbling, 30 to 35 more minutes. Let set for 20 minutes before cutting into squares.

1 pound sweet Italian sausage
1 pound lean ground beef
1 large white onion (diced)
5 cloves garlic (minced)
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
1 (15 ounce) can tomato sauce
1/2 cup white wine
2 tablespoons white sugar
1/2 cup chopped fresh basil
1 teaspoon fennel seeds
1 teaspoon ground oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/4 cup chopped fresh parsley
1 pound lasagna noodles
30 ounces ricotta cheese
2 tablespoons chopped fresh parsley
1 large egg
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
1 pound thinly sliced mozzarella cheese (about 24 slices)
1 cup freshly grated Parmesan cheese

Steps:

  • In a large pot over medium heat, add in ground sausage and ground beef. Use a spoon to break up the meat into small pieces. Add in onion and garlic and cook until meat is well browned, stirring constantly. Stir in sugar, fresh basil, fennel, oregano, 1/2 teaspoon salt, pepper, and 1/4 cup chopped parsley. Pour in crushed tomatoes, tomato paste, tomato sauce, and wine*. Stir well and bring to a simmer. Reduce heat to low and simmer 1-4 hours, stirring occasionally.
  • Meanwhile, place lasagna noodles into the bottom of a pan. Pour hot tap water directly over the noodles, making sure the pasta is completely immersed in the water. Let them soak for 30 minutes, then drain and discard water.
  • In a mixing bowl, combine ricotta cheese with egg, remaining 2 tablespoons parsley, 1/2 teaspoon salt, and nutmeg. Refrigerate until ready to assemble lasagna.
  • Preheat oven to 375 degrees. Lightly grease a deep 9x13 pan.
  • To assemble, spread about 1 cup of meat sauce in the bottom of the prepared pan. Place 4 noodles on top. Spread with 1/3 of the ricotta cheese mixture. Top with 1/4 of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, then sprinkle with 1/4 cup parmesan cheese. Repeat layering two more times to create three complete layers. To finish, place a final layer of pasta, topped with another 1 cup of meat sauce to cover the pasta. Top with remaining mozzarella and Parmesan cheese. Cover loosely with aluminum foil.
  • Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes to allow cheese to brown. Serve hot.

1 pound sweet Italian sausage
¾ pound lean ground beef
½ cup minced onion
2 cloves garlic, crushed
1 (28 ounce) can crushed tomatoes
2 (6 ounce) cans tomato paste
2 (6.5 ounce) cans canned tomato sauce
½ cup water
2 tablespoons white sugar
1 ½ teaspoons dried basil leaves
½ teaspoon fennel seeds
1 teaspoon Italian seasoning
1 ½ teaspoons salt, divided, or to taste
¼ teaspoon ground black pepper
4 tablespoons chopped fresh parsley
12 lasagna noodles
16 ounces ricotta cheese
1 egg
¾ pound mozzarella cheese, sliced
¾ cup grated Parmesan cheese

Steps:

  • In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned. Stir in crushed tomatoes, tomato paste, tomato sauce, and water. Season with sugar, basil, fennel seeds, Italian seasoning, 1 teaspoon salt, pepper, and 2 tablespoons parsley. Simmer, covered, for about 1 1/2 hours, stirring occasionally.
  • Bring a large pot of lightly salted water to a boil. Cook lasagna noodles in boiling water for 8 to 10 minutes. Drain noodles, and rinse with cold water. In a mixing bowl, combine ricotta cheese with egg, remaining parsley, and 1/2 teaspoon salt.
  • Preheat oven to 375 degrees F (190 degrees C).
  • To assemble, spread 1 1/2 cups of meat sauce in the bottom of a 9x13-inch baking dish. Arrange 6 noodles lengthwise over meat sauce. Spread with one half of the ricotta cheese mixture. Top with a third of mozzarella cheese slices. Spoon 1 1/2 cups meat sauce over mozzarella, and sprinkle with 1/4 cup Parmesan cheese. Repeat layers, and top with remaining mozzarella and Parmesan cheese. Cover with foil: to prevent sticking, either spray foil with cooking spray, or make sure the foil does not touch the cheese.
  • Bake in preheated oven for 25 minutes. Remove foil, and bake an additional 25 minutes. Cool for 15 minutes before serving.

2 tablespoons Extra Virgin Olive Oil
1 28 oz can Crushed Italian Tomatoes
1 6 oz can Tomato Paste
1 16 oz jar Marinara Sauce
1/4 cup Fresh Oregano
1/2 cup Fresh Basil (chopped)
2 teaspoons Sea Salt
3/4 teaspoons Pepper
1 lb Whole Milk Ricotta Cheese
1 cup Parmesan Cheese (freshly grated)
1 extra large Egg
1/4 cup Chopped Parsley,1 lb Whole Milk Mozzarella Cheese
1/4 cup Parmesan Cheese (freshly grated for garnish)

Steps:

  • Preheat the oven to 400 degrees F and position the oven rack in the middle. step 2 2 tablespoons Extra Virgin Olive Oil To make the meat sauce, heat the olive oil in a large saucepan. step 3 1 cup Chopped Onion Add the onion and cook over medium-low heat until translucent (about 5 minutes). step 4 2 Garlic Cloves Add the garlic and stir for one more minute. step 5 1/2 lbs Sweet Italian Sausage, removed from casings Then add the sausage and cook over medium-low heat, breaking it up with a wooden spoon, for 10 to 15 minutes, or until fully cooked and no longer pink. step 6 1 28 oz can Crushed Italian Tomatoes 1 6 oz can Tomato Paste 1 16 oz jar Marinara Sauce 1/4 cup Fresh Oregano 1/2 cup Fresh Basil, chopped Sea Salt Pepper Add the crushed tomatoes, marinara sauce, tomato paste, oregano, basil, sea salt, and freshly ground black pepper. Simmer uncovered over medium-low heat for 20 minutes. step 7 1/2 box Lasagna Noodles Soak lasagna noodles in hot tap water. step 8 1 lb Whole Milk Ricotta Cheese 1 cup Parmesan Cheese, freshly grated 1 extra large Egg 1/4 cup Chopped Parsley Sea Salt Pepper While the sauce is simmering, make the cheese filling. In a large bowl, combine the ricotta, 1 cup of Parmesan, the beaten egg, chopped parsley, sea salt, and freshly ground black pepper. Set aside. step 9 Ladle one third of the meat sauce into a 9"x 12"x 2" casserole or baking pan. Spread the sauce over the bottom of the dish. step 10 1 lb Whole Milk Mozzarella Cheese Then add approximately half the pasta (in one layer, cover the sauce with the noodles), half the sliced mozzarella, half the cheese mixture, and one third of the sauce. step 11 Add another single layer of noodles, mozzarella, ricotta, and the remaining sauce. step 12 1/4 cup Parmesan Cheese, freshly grated, for garnish Sprinkle with the remaining 1/2 cup of Parmesan. step 13 Bake uncovered for 35 minutes, or until the sauce is bubbling.

9 lasagna noodles, uncooked (try whole wheat if available)
2 (8 ounce) cans tomato sauce (no salt added preferred)
1 tablespoon garlic, minced
1/4 teaspoon dried oregano
1 (10 ounce) package frozen chopped broccoli, thawed and excess water squeezed out
1 cup fresh carrot, shredded
1 (16 ounce) container part-skim ricotta cheese
1/4 cup parmesan cheese, grated (Kraft Reduced Fat preferred)
1 cup part-skim mozzarella cheese, shredded

Steps:

  • Cook lasagna noodles per pkg; preheat oven to 350°F.; grease a 13 X 9 baking dish.
  • In a small bowl, combine the tomato sauce, garlic and oregano.
  • In a separate bowl, combine the broccoli, carrot, ricotta cheese and parmesan cheese, mixing well.
  • Drain the noodles.
  • Spread 1/2 cup of the tomato sauce mixture in the bottom of the baking dish; place 3 lasagna noodles on top.
  • Spread 1/2 of the broccoli mixture over the noodles; spread 1/2 cup of the tomato sauce mixture over the broccoli mixture; place 3 lasagna noodles on top.
  • Spread the remaining broccoli mixture on the noodles; top with 1/2 cup of the tomato sauce mixture.
  • Top with the remaining noodles; then the remaining tomato sauce; then all the mozzarella cheese.
  • Bake in the preheated 350°F oven for 45 minutes or until bubbling.
  • Remove from the oven and place on a wire cooling rack; let cool/settle for 15 min before you cut and serve.
