DATE BRAN MUFFINS



Date Bran Muffins image

Yield Serving Size: 12 muffins

Number Of Ingredients 14

Filling
1 cup chopped dates
1 cup hot water
¼ cup packed brown sugar
1 tsp lemon juice
Muffin
1 1/2 cups natural bran
3/4 cup Robin Hood® All Purpose Whole Wheat Flour
1 tsp baking soda
1 tsp salt
1 egg
¼ cup packed brown sugar
1 tbsp Vegetable or Canola oil
1 cup buttermilk or sour milk

Steps:

  • Preheat oven to 375°F (190°C). Grease or line 12 muffin cups with paper liners.
  • Filling: Place dates, hot water, brown sugar and lemon juice in a small saucepan. Stirring occasionally, simmer until thickened. Set aside to cool.
  • Muffin: Combine bran, flour, baking soda and salt in large mixing bowl.
  • Beat egg, brown sugar, oil and buttermilk together thoroughly in a separate large mixing bowl.
  • Add egg mixture all at once to bran mixture. Stir just until moistened.
  • Stir in date filling.
  • Fill prepared muffin cups 3/4 full.
  • Bake in preheated oven for 18 to 20 minutes or until a toothpick inserted in center of muffin comes out clean.

½ cup brown sugar
½ cup applesauce
¼ cup canola oil
1 egg
1 teaspoon vanilla extract
¾ teaspoon salt
1 cup whole wheat flour
1 cup natural wheat bran
3 tablespoons ground flax
1 teaspoon baking soda
½ teaspoon baking powder
1 cup milk

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin tin.
  • Mix together brown sugar, applesauce, canola oil, egg, vanilla extract, and salt in a large bowl.
  • Mix flour, bran, flax, baking soda, and baking powder in a separate bowl. Add bran mixture to applesauce mixture. Add milk and stir until thoroughly combined. Pour batter into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 11 to 13 minutes.

I looked and I can't believe no one has posted this recipe here yet!! This is different from all the other recipes here, is not very dense and is not too sweet, allowing the wonderful bran flavor through. This came off the back of a quaker oat bran hot cereal box. Only 120 calories per muffin!

2 cups oat bran hot cereal, uncooked (I use Quaker)
1/4 cup firmly packed brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
1 egg
1/4 cup honey (I haven't tried molasses yet) or 1/4 cup molasses (I haven't tried molasses yet)
2 tablespoons vegetable oil

Steps:

  • *Blueberry or banana variations are at bottom.
  • Pre-heat oven to 425 degrees F. Line 12 medium muffin cups with paper baking cups.
  • Combine dry ingredients. Add milk, egg, honey, and oil; mix just until ingredients are moistened.
  • Fill muffin cups 3/4 full. Bake 14-17 minutes or until golden brown.
  • *NOTE: You can stir in 1/2 cup frozen blueberries or 1 medium ripe mashed banana for a fruity variation.
  • These are also great the next day cold if you seal them in a baggy or stick em in a container to keep em fresh.

1 ½ cups oat bran
1 ½ cups all-purpose flour
2 teaspoons baking powder
2 teaspoons baking soda

1 cup chilled applesauce
4 tablespoons vegetable oil

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Line or grease 12 muffin cups.
  • Blend together brown sugar, oat bran, flour, baking powder, soda, and salt. Add eggs, chilled applesauce, and vegetable oil. Mix until well-blended. Spoon batter into muffin cups. Let stand 10 minutes.
  • Bake at 400 degrees F (205 degrees C) for 15 minutes or until golden brown.
  • VARIATIONS: Add 1 cup plumped raisins, with a little bit of raisin water (approximately 2 tablespoons). Or, before baking, sprinkle mixture of sugar and cinnamon over the tops of the muffins. Or, add 1 teaspoon cinnamon or nutmeg to flour mixture.

Steps:

  • Preheat the oven to 375ºF. Spray a 12-cup muffin tin with nonstick cooking spray.
  • In a medium bowl, combine the wheat bran and the buttermilk. Let it sit for 10 minutes.
  • In a large bowl, combine the oil, egg, brown sugar, and vanilla. Add the soaked wheat bran mixture and stir to combine. Add the flour, baking soda, baking powder and salt. Stir just until combined.

1 ½ cups All-Bran cereal
1 cup buttermilk
1 egg
1 egg white
1/3 cup oil
2/3 cup light brown sugar (, packed)
1 cup grated carrots (, grated on small/medium size holes)
1 cup chopped walnuts (, optional)
1 cup raisins
1 Tablespoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda

Steps:

  • Preheat oven 375 degrees F. Line a standard muffin tin with paper liners or grease with cooking spray.
  • Add raisins to a small bowl and soak them in hot water for 10 minutes, to allow them to plump. Meanwhile mix together bran and buttermilk, let stand 5 minutes.
  • Grate the carrots and chop walnuts (if using) and set aside.
  • Add egg, egg white, oil, sugar and vanilla to a mixing bowl and mix by hand until combined. Stir in bran mixture. Stir in carrots, nuts, raisins.
  • Stir together flour, salt, soda, and baking powder, then add to the batter, stirring just until combined (don't over mix!).
  • Divide batter among muffin tins, filling them full. Bake for 16-18 minutes or until a toothpick inserted in the center comes out clean.
  • Allow to cool for a few minutes in the pan before removing to a wire cooling rack to cool completely.

If you love a healthy muffin, you will love this delicious vintage recipe for wholesome, raisin-studded Knotty Pine Bran Muffins.

¾ cup brown sugar
2 eggs
½ cup vegetable oil (I use mild olive oil for health reasons but any mild vegetable oil (such as sunflower oil) will work.)
2 cups bran
2 teaspoons ground cinnamon
1 cup flour
1 teaspoon baking soda
½ teaspoon cream of tartar
¼ teaspoon salt
1 cup buttermilk (Buttermilk gives the best results, but you can use ordinary milk if you prefer. Pouring yogurt works as well. )
1 cup raisins or sultanas ( You can also use less if you prefer or leave them out entirely. I generally use a bit less than this. )

Steps:

  • Preheat the oven to 375°F (190°C or 180°C for a fan oven).
  • Grease or put paper liners in a 12 cup muffin pan.
  • Beat eggs in a large bowl.
  • Add brown sugar and oil. Mix well.
  • Sir in bran and cinnamon.
  • Let the mixture stand for ten minutes.
  • Meanwhile, sift together the flour, baking soda, cream of tartar and salt.
  • Add the flour mixture to the bran mixture alternately with the buttermilk. Do this in four additions - two of the flour mixture and two of the buttermilk, ending with the buttermilk.
  • Fold in the raisins.
  • Fill muffin cups half full with batter.
  • Bake for 18 to 20 minutes or until a skewer inserted in the centre comes out clean.

  • Preheat oven to 425 degrees. Lightly spray or line one muffin tin, set aside.
  • In a small glass measuring cup or bowl, whisk together the buttermilk, yogurt or sour cream, egg, oil, brown sugar, and vanilla.
  • In a separate mixing bowl whisk together the bran, flour, baking powder, baking soda, salt and cinnamon. Gradually pour n the wet ingredients into the bowl of dry ingredients, mixing just until combined. Gently fold in the berries, dried fruit or nuts (if desired).
  • Scoop the batter into the prepared pan, dividing evenly between the wells.
  • Place in the oven and bake for 14-16 minutes or until the tops are golden brown and spring back when touched. Remove from the oven and allow to cool in the pans for 5 minutes before transferring to a wire rack to cool completely.
