GRANDMA'S OYSTER DRESSING
A family favorite - passed down from my great-great grandma. Could definitely be slimmed down, but I'm entering it in the old-fashioned way just so I know how to count it on Thanksgiving. :)

Steps:
- preheat oven to 375
- chop celery and onion, then saute in butter
- break bread into pieces and put into large bowl
- to the bowl, add sauteed celery and onions, salt, pepper, sage and oysters.
- boil chicken broth and pour over the bread mixture
- cover and let steam for 3-5 minutes (or until the bread absorbs the liquid). note: don't worry - the mixture will be on the loose side before it bakes - not dry at all.
- beat egg and stir into mixture
- pour mixture into 13x9 baking dish
- bake at 375 for 30 minutes covered, 30 minutes uncovered.
- makes approximately 12, 1/2 cup-sized servings

This is a family recipe to stuff your turkey with. My dad used to ask me to make a Thanksgiving dinner in June so he could have the dressing!! If you like oysters this will be your new tradition! Mix everything in a large bowl, and stuff that bird!

- Spread the bread cubes out onto baking sheets or a work surface, and allow to dry for 24 to 48 hours (longer for a drier dressing).
- Melt the butter in a large skillet over medium heat, and cook and stir the onion, garlic, and celery until the onions become translucent, about 8 minutes. Pour the vegetables and butter into a large bowl. Lightly mix in the bread cubes, and stir in the oysters and their liquid until thoroughly combined.

MOM'S OLD-FASHIONED OYSTER DRESSING
Oh, so many memories of family gathered around Mom's large dining room table for special occasions and holiday come to mind when I make this delicious recipe! Everyone said Mom made the BEST oyster dressing, but she also remembered those who didn't eat oysters and made just plain dressing for them. Just be sure to check oysters...

Steps:
- 1. In large pot, melt butter over medium heat. Saute' onions and celery. Add chicken broth and liquid from oysters. Remove from heat.
- 2. Add chopped oysters, bread crumbs, and all seasonings. Stir to mix well. If too moist, add more bread pieces. Taste and adjust seasonings.
- 3. Grease casserole and add dressing, smoothing the top. Another option would be to make large balls of dressing and place in casserole.
- 4. Bake in preheated 350 degree oven for 30 minutes or until nicely browned.
- 5. Serve warm and enjoy!

- In large frying pan, sauté sausage until thoroughly cooked chopping up into nice sized pieces. (Don't over chop and crumble, keep it in small chunks.) Remove sausage with a slotted spoon to a paper towel-lined bowl to cool and fully drain. Drain grease from pan except for 2 Tbl.
- Add mushrooms, garlic and chopped celery leaves and continue sautéing for 5 more minutes. Melt in butter, and add onion powder, Creole seasoning and poultry seasoning.
- In pot or extra roaster (to use to mix), add toasted bread cubes. Pour sautéed mixture, broth and beaten eggs mixed with cold heavy cream over the top. Fold gently several times to lightly mix.

- The day before, trim the crusts from the bread and cut into 1" pieces. Transfer the bread to a large wide bowl and leave out overnight to get stale.
- Heat the olive oil in a large skillet over medium high heat and add the sausage. Break up the meat in the pan with the back of a wooden spoon and cook until most of the sausage has browned.
