JIM'S SECRET FAMILY RECIPE RIBS

For more than 30 years, my brother-in-law Jim kept his famous rib recipe a secret. When he finally shared it, we just had to pass it along because we loved it so much. This one's for you, Jim! -Vicki Young, Brighton, Colorado

Number Of Ingredients 15

2 racks pork baby back ribs (about 5 pounds)
1/4 cup soy sauce
1/4 cup dried oregano
2 tablespoons onion powder
2 teaspoons garlic powder
1 liter lemon-lime soda
1/2 cup unsweetened pineapple or orange juice, optional
BARBECUE SAUCE:
1/2 cup sugar or packed brown sugar
1/2 cup hot water
1 cup ketchup
1/4 cup honey mustard
1/4 cup barbecue sauce of choice
3 tablespoons lemon juice
1-1/2 teaspoons white vinegar

Steps:

  • Brush ribs with soy sauce. Combine oregano, onion powder and garlic powder; rub over both sides of ribs. Transfer to a large shallow roasting pan; refrigerate, covered, overnight., Preheat oven to 225°. Add lemon-lime soda and, if desired, juice to roasting pan (do not pour over ribs). Bake, covered, until tender, about 3 hours., Meanwhile, make barbecue sauce by dissolving sugar in hot water; combine with remaining ingredients, thinning with additional lemon-lime soda or juice if necessary. Reserve 1 cup for serving., Remove ribs from oven; discard juices. Brush both sides with barbecue sauce. Grill ribs, covered, on a greased grill rack over low direct heat, turning and brushing occasionally with remaining sauce, until heated through, about 10 minutes. Cut into serving-size pieces; serve with reserved sauce.

Smoky, tangy and sweet with a little heat. This easy BBQ sauce from Steve Raichlen's Barbecue Bible, uses a bit of bourbon (I use Jim Beam) to mellow and tie together the combination of punchy ingredients. This BBQ sauce mixes up in about 15 minutes, but it's better if you refrigerate overnight for the flavors to marry.

1 cup ketchup
1/4 cup brown sugar
1/4 cup bourbon (Jim Beam)
3 tablespoons apple cider vinegar
3 tablespoons molasses
2 tablespoons worcestershire sauce
1 tablespoon dijon mustard
1 1/2 teaspoons liquid smoke
1 teaspoon hot sauce (Steve recommends Tabasco -- I used Hank Sauce)
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon black pepper

Steps:

  • Combine all the ingredients in a small saucepan and whisk together. Heat over medium high heat until the mixture starts to boil, stirring regularly.
  • When the mixture boils reduce the heat to a simmer and continue to cook for about 6-8 minutes or until very fragrant and smooth.
  • Let the sauce cool to room temperature then transfer to a storage container and refrigerate overnight for the flavors to marry.
  • Sauce will keep for several weeks.

2 cups ketchup
4 tablespoons Worcestershire sauce
1 cup jim beam Bourbon
4 tablespoons soy sauce
2 teaspoons dry mustard
1 cup packed brown sugar
1/2 teaspoon cayenne pepper
4 tablespoons cider vinegar

Steps:

  • In medium sauce pan combine ingredients.
  • Bring to a boil over high heat stirring often.
  • Reduce heat to low simmer for 20 minutes.
  • Stirring occasionally until thickened.
  • Let cool down to room temperature before putting in a bottle and putting in refrigerator.

1/4 tsp Cayenne Pepper (Add more for extra heat!)

Steps:

  • Combine all ingredients in a medium saucepan and then whisk until well blended and the brown sugar has dissolved
  • Set heat to high and bring to a boil, stirring occasionally to avoid sticking or burning
  • Reduce heat to low and let simmer for 25 minutes until thickened, stirring occasionally

1/3 cup honey (also a good thermostat if you get it to hot)
3 tablespoons garlic powder

  • In a mixing bowl, whisk together until thoroughly incorporated. Serve immediately or refrigerate up to 5 days.

1-1/2 C. Catsup
1/2 C. Water
3-4 T. Molasses or Honey
1 t. Prepared Yellow Mustard
1/4 C. Apple Cider Vinegar
1 t. Worchestershire Sauce
3 T. Brown Sugar
1 t. Sugar
1 t. Lemon Juice
1/2 t. Garlic Powder
1 t. Paprika
1 t. Chili Powder
1/4-1/2 t. Red Pepper
1/2 t. Ground Ginger
1/2 to 1 t. Liquid Smoke

Steps:

  • Mix catsup and mustard together so the mustard doesn't separate then add the rest of the liquids followed by the dry spices. Bring to a low boil stirring so it doesn't burn. Reduce the heat and simmer for about 20 to 25 minutes. The mixture will reduce and thicken. Let it cool for a while then serve. Refrigerate after using.
