JIMMY DEAN LOW-FAT BREAKFAST BURRITO



Jimmy Dean Low-Fat Breakfast Burrito image

Filled with reduced fat sausage, eggs, and avocado, this breakfast burrito will keep you satisfied for hours.

Number Of Ingredients 12

¼ cup Jimmy Dean Reduced Fat Pork Sausage (browned, drained, and chopped)
1 (10 inch) whole-wheat flour tortilla
2 each egg whites
1 whole egg
⅛ cup low-fat cheddar or part-skim mozzarella, shredded
3 tablespoons pico de gallo
4 slices fresh avocado
2 tablespoons black bean puree
1 cup Shredded lettuce
1 pinch Salt
1 pinch Pepper
1 (6 ounce) can Nonstick cooking spray

Steps:

  • Warm tortilla in microwave for approximately 15 seconds.
  • Whisk together egg and egg whites in a small bowl.
  • In an 8-inch skillet that has been sprayed with nonstick cooking spray, pour egg mixture and scramble. Season with salt and pepper and put aside.
  • On first third of tortilla, spread a thick layer of black bean puree. Next, layer on the scrambled eggs. Place the sausage on top of the scrambled eggs. Then layer on the pico de gallo, lettuce, and avocado. Sprinkle with cheese. Fold together. Top with sour cream.

Low-Fat but Still Delicious Breakfast Burrito image

This recipe is for a low-fat breakfast burrito that I have come up with. Even though everything in it is low fat it does NOT taste low fat at all!! Bacon, egg beaters, and cheese make this is one delectable burrito that is much lower in fat than other breakfast burritos. I have fat free cheese listed in the ingredients, but I admit that sometimes I will use half of a Kraft American Cheese Single to satisfy my cheese cravings. The addition of the american cheese really gives this burrito great taste, but use whatever cheese you like. Also, you can use any low fat bacon you like but I personally enjoy Oscar Mayer's Turkey Bacon...it is soooo tasty, I actually prefer it over all other bacon. Serve this burrito with fruit and juice for a yummy breakfast!

2 slices turkey bacon
1/3 cup Egg Beaters egg substitute
1 low-fat tortilla
fat free cheese
fresh black pepper
salt

Steps:

  • Cook bacon and eggs according to package directions, add salt and black pepper to your eggs if desired.
  • Layer the bacon and eggs on top of your tortilla
  • Sprinkle desired amount of cheese over bacon and eggs.
  • Roll your burrito up and cook on high in the microwave approximately 15 seconds to warm the tortilla and melt the cheese.
  • Enjoy your burrito!
