PINEAPPLE BOAT SHRIMP WITH FRUIT SALSA



Pineapple Boat Shrimp with Fruit Salsa image

Number Of Ingredients 20

2 pounds (21/25 count) shrimp, cleaned and deveined
1/3 cup soy sauce
1 tablespoon minced lemongrass
2 tablespoons minced ginger
2 tablespoons cornstarch
2 tablespoons peanut oil
2 cups diced red bell pepper
2 cups diced yellow onion
1 tablespoon minced jalapeno
1 tablespoon minced garlic
Fruit Salsa, recipe follows
1 tablespoon minced fresh mint leaves
1 teaspoon seeded and finely diced serrano pepper
1 tablespoon minced ginger
1/4 cup rice vinegar
1 pinch red pepper flakes
1 whole ripe pineapple, cut in 1/2 lengthwise and flesh removed (making 2 'boats'), core removed and fruit diced
3/4 cup small dice red onion
1 cup small dice red bell pepper
1 (15-ounce) can apricots, drained and diced

Steps:

  • In a resealable plastic bag, add the shrimp, 3 tablespoons soy sauce, the lemongrass, 1 tablespoon of ginger and the cornstarch and combine well. Refrigerate for 30 minutes.
  • In a large saute pan over high heat, heat the peanut oil and add half the shrimp mixture. Saute for 3 to 4 minutes and remove. Repeat for second batch of shrimp, adding additional oil, if necessary.
  • Add in the red bell peppers and the onions and saute for 3 minutes, then add the jalapeno, garlic, and the remaining 1 tablespoon of ginger. Stir in the remaining soy sauce and add the shrimp back into the saute pan. Heat until warmed through. Transfer to a serving platter and serve with the Fruit Salsa.
  • In a glass bowl, combine the mint, serrano pepper, ginger, rice vinegar and red pepper flakes. Stir in the pineapple, the onions, red bell pepper and apricots. Cover and refrigerate for at least 30 minutes before serving.

ROASTED PINEAPPLE AND PEPPER SALSA

1/2 pineapple, cored, peeled and cut into 1/4-inch slices
1 mango, deseeded and cut into 1/4-inch pieces
2 tablespoons honey
2 tablespoons lime juice
1 tablespoon chopped cilantro leaves
Salt
1/2 jalapeno, seeded, minced
1/2 red onion, diced
1/2 Anaheim chile, roasted, seeded and diced
1/2 red bell pepper, roasted, seeded and diced

Steps:

  • Heat grill or grill pan to high.
  • Place pineapple and mango on grill for 30 seconds to 1 minute or until desired grill marks are achieved. Let cool and dice.
  • In a medium mixing bowl combine honey, lime juice, cilantro and season, to taste, with salt. Add remaining ingredients and toss. Let sit for 1 hour before serving.

FISH WITH GRILLED FRUIT SALSA



Fish with Grilled Fruit Salsa image

1 to 2 pieces watermelon (1 if large. 2 if small, sliced 1 1/2-inches thick, leave rind intact
2 pieces honeydew melon, sliced 1 1/2-inches thick, leave rind intact
1 thick lengthwise slice pineapple, peeled and cored
2 kiwi fruit, peeled, cut in 1/2
1 ripe mango, peeled, sliced into 1-inch thick pieces
3 tablespoons canola oil
1 poblano pepper
1 serrano pepper, minced
3 tablespoons chopped cilantro leaves
1 lime, zested
1/8 cup lime juice (about 2)
1/8 cup agave syrup
2 tablespoons lemon juice
1/8 teaspoon cayenne pepper
1/8 teaspoon ground cinnamon
1/8 teaspoon sea salt
1/2 teaspoon sea salt
1/2 teaspoon freshly cracked black pepper
1 1/2 to 2 pounds firm white fish (ono, swordfish, mahi mahi, dorado)

Steps:

  • Preheat grill to medium-high heat. Rub each piece lightly with canola oil.
  • Rub grates of the grill with a canola oiled paper towel. Place poblano pepper on grill and grill until blackened. Remove from grill and place in a paper or resealable plastic bag to rest. When pepper is cool enough to handle, peel off blackened skin. Remove the stem and scoop out the seeds. Chop only half of the pepper and place in a large bowl. Reserve the other half for another use or discard.
  • Arrange fruit on grill and let cook 2 to 3 minutes, turn over, and cook an additional 2 to 3 minutes. Remove from grill to a cutting board and let cool. When fruit is cool, chop into 1/2-inch pieces and add to the bowl with chopped poblano pepper.
  • In a medium bowl, combine the minced serrano pepper, cilantro, lime zest and juice, agave syrup, lemon juice, cayenne, cinnamon and salt. Mix well and pour over the grilled fruit. Gently stir to combine, cover and refrigerate for 30 minutes. Serve on top of fish.
  • Fish: Preheat grill or steel drum to medium-high. Rub the grill with a canola oiled paper towel. Salt and pepper both sides of fish. Gently place fish on grill or steel drum, cook for 3 minutes, carefully turn over and cook for 2 minutes more. Remove from heat to a cutting board, cover and let rest for 2 minutes. Cut into serving size pieces, if desired, and serve immediately with fruit salsa.

HANGER STEAK WITH GRILLED SALSA



Hanger Steak with Grilled Salsa image

2 teaspoons ground mustard
2 teaspoons smoked paprika
1 teaspoon chili powder
Kosher salt and freshly ground black pepper
Two 8- to 10-ounce hanger steaks
4 ears corn on the cob, shucked
2 jalapenos, cut in half lengthwise
1 red onion, sliced into rounds but left intact
Olive oil, for drizzling
3 tomatoes, diced
1 clove garlic, minced
2/3 cup torn cilantro leaves
1 tablespoon white wine vinegar
Juice of 1 lime
Hot sauce, to taste
Canola oil, for drizzling

Steps:

  • Combine the mustard, paprika, chili powder, 2 teaspoons salt and 1/2 teaspoon pepper in a small bowl. Place steaks on a sheet tray and sprinkle all over with the spice mixture. Let sit at room temperature for 2 hours.
  • Preheat a grill to medium-high heat and place a cast-iron pan on one side of the grill.
  • Drizzle the corn, jalapenos and onion with olive oil and sprinkle with salt and pepper. Place on grill and grill, flipping frequently, until slightly caramelized and tender, about 12 to 15 minutes total. Let cool slightly, then roughly chop the onion and jalapeno and place in a large bowl. Cut the corn from the cob into the bowl. Add the tomatoes, garlic, cilantro, vinegar, lime juice and a drizzle of olive oil and toss well. Season to taste with salt, pepper and hot sauce. Let sit while the steaks grill.
  • Drizzle the preheated cast-iron pan with canola oil. Cook the steaks, flipping only once, for about 12 minutes total for medium-rare or until an instant read thermometer registers 120 degrees F. Allow the meat to rest for 5 to 10 minutes before slicing. Slice the meat against the grain to ensure tenderness, and garnish with the salsa.

1/2 cup fresh orange juice
2 tablespoons white vinegar
1 tablespoon chili powder
1 tablespoon granulated garlic
1 teaspoon kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
2 chipotle chiles in adobo, plus 1 teaspoon adobo sauce
1 white onion, half roughly chopped, half finely diced
1/2 pineapple, peeled and cored, half rough chopped, half cut into wedges
One 4-pound pork butt
3 sprigs fresh oregano
1 cup chicken stock
Vegetable oil, as needed
Corn tortillas, for serving
Fresh cilantro leaves, chopped, to garnish
Grilled lime wedges, to garnish
Roasted Tomatillo Avocado Salsa, recipe follows
6 medium tomatillos, husked (about 8 ounces each)
Extra-virgin olive oil
1 teaspoon ground cumin
1 teaspoon kosher salt
1 ripe avocado, peeled and diced
1 clove garlic, minced
1/2 jalapeno, seeds removed and coarsely chopped
1/2 sweet onion, roughly chopped
Juice of 2 limes
2 cups fresh cilantro leaves

Steps:

  • To a blender, add the orange juice, vinegar, chili powder, garlic, salt, cumin, paprika, chiles, adobo sauce, chopped onions and chopped pineapple. Blend until smooth. Pour the marinade into a large resealable bag, and add the pork butt and oregano. Refrigerate for at least 4 hours and up to 24 hours.
  • Preheat the oven to 325 degrees F.
  • Remove the pork butt from the marinade and set onto a rack set in a roasting pan. Pour the chicken stock into the bottom of the pan and cover the dish with foil. Roast until an internal thermometer reads 185 degrees F, about 4 hours.
  • Increase the oven temperature to 425 degrees F and cook for an additional 20 minutes to caramelize the pork. Remove from the oven and rest for 20 to 25 minutes.
  • Meanwhile, preheat a grill to medium-high heat. Brush the pineapple wedges with vegetable oil, grill 2 to 3 minutes per side, and once cool enough to handle chop into a small dice.
  • When ready to serve, carve the meat into 1/4- to 1/2-inch slices. Serve the pork in warmed corn tortillas; garnish with the remaining finely diced white onion, cilantro, lime wedges, diced grilled pineapple and Roasted Tomatillo Avocado Salsa.
  • Preheat the oven to 350 degrees F.
  • Toss the tomatillos with olive oil, season with salt and pepper, and place on a baking sheet. Roast until nicely charred, about 10 minutes. Remove from the oven and set aside to cool.
  • Combine the tomatillos, 1/4 cup water, cumin, salt, avocado, garlic, jalapenos, onions, lime juice and cilantro in a blender and puree until completely smooth. Place in the refrigerator and allow the sauce to settle before serving.
