APPLE COBBLER
One of our classic recipes, refreshed! A little less sugar in both the filling and the topping highlights the tart apples. We prefer it with a scoop of vanilla ice cream.

Steps:
- Heat oven to 350°F.
- Place sliced apples into ungreased 13x9-inch baking dish.
- Combine 1/4 cup sugar and 1/2 teaspoon cinnamon in bowl; sprinkle over apples.
- Combine flour, 3/4 cup sugar, eggs, baking powder, 1 teaspoon cinnamon and salt in bowl; mix until mixture resembles coarse crumbs. Sprinkle over apples. Pour melted butter over topping. Bake 45-55 minutes or until lightly browned and apples are tender.
- Serve warm or at room temperature with vanilla ice cream, if desired.

- Heat oven to 375°F. Grease 8-inch square or round glass baking dish with shortening or cooking spray. In 12-inch skillet, melt 2 tablespoons butter over medium-high heat. Gently stir in remaining filling ingredients with wooden spoon. Cook about 5 minutes, stirring occasionally, until apples are tender. Pour into baking dish.
- In medium bowl, stir together cornbread topping ingredients. Spread over apples, covering them completely.

SIMPLY THE BEST APPLE COBBLER EVER
Here in New England, Jiffy muffin mixes have been used in family recipes for many, many years and that's because the tasty boxes are so versatile. This particular flavor makes the cobbler taste so awesome. Not doughy or dry but dense and juicy and just plain the best!!!

- 1. Heat oven to 375. Lightly spray a 9" x 13" baking pan w/ cooking spray. In a large bowl stir together apple slices, brown sugar, flour and cinnamon. Add diced, soft butter and mix together well.
- 2. Spread apple mix into bottom of baking pan. In another large bowl, mix both boxes of muffin mix, melted butter and vanilla. Dough will be sticky. Drop dough by heaping tablespoons onto apple mix.
- 3. Bake 30-45 mins depending on your oven, it took my oven 40 mins. Part way during baking I put a sheet of aluminum foil on top loosely so the top wouldn't brown too fast. I took it off the last 5 mins, Make sure the top is light golden brown and the apples are bubbly. This is best served warm.
APPLE PECAN COBBLER
This is an excellent cobbler to make in the fall when the weather starts to turn cooler.

- Preheat oven to 325 degrees F (165 degrees C). Generously grease a 2-quart baking dish.
- Arrange apple slices in an even layer in the baking dish. In a small bowl, mix together 1/2 cup sugar, cinnamon, and 1/2 cup pecans. Sprinkle mixture over apples.

- Put both cans of apple pie filling on the bottom of the dutch oven
- Spread both boxes of corn muffin mix evenly over the apple pie filling
- Mix the cinnamon into the brown sugar, and spread evenly over the muffin mix
- Slice the stick of butter into pats and spread them on top of the cobbler.
- Bake with 12 charcoal briquettes on the lid, and 15 under the oven for approximately 30 minutes.

- 1. Preheat oven to 350. Grease (I use butter) a round or square baking dish (cake pan). Pour pie filling into pan. Sprinkle with pumpkin pie spice. - Pour dry cake mix over filling.
- If using the butter, melt the butter first and pour on top of cake mix. If using sprite, pour sprite over cake mix until covered well.
- Bake at 350' for 45-60 minutes.
- Bake until golden brown!
