Steps:
- Segment the oranges and cut each segment in half. Squeeze the juice from the oranges' membranes into a bowl. Whisk in the lime juice, coriander, cumin, 1/2 teaspoon salt and olive oil.
- Gently toss the jicama, red onion and oranges with the lime vinaigrette and transfer to a serving bowl. Top with the avocado, cilantro and a sprinkle of salt.
SUMMER CUCUMBER JICAMA SALAD
This is a really great cucumber salad that's light and flavorful and makes a great starter! Tastes fine as it is, but can be salted and peppered to taste, if desired. Just remember to add all ingredients and mix before adding in the tomatoes, as they are extremely delicate and do not withstand stirring very well once they are cut.

Sweet, juicy watermelon and spicy chiles combine to create a surprising summer salsa with a kick. It goes especially well with grilled fish. Watermelon is a refreshing ingredient to use in a salsa. I've combined it with tomatoes and jicama here, and the result is a fruity/vegetal salsa with a kick from chiles, lime and cilantro. Like the other fruit-based salsas I'm featuring this week, I like this with rilled fish, especially light-fleshed fish like halibut or mahi-mahi.

- Wash the jicama to remove any unwanted dirt. Using a sharp knife such as a chef’s knife, remove the outer waxy layer. Slice the jicama as if you were slicing potatoes. First slice or cut into large slices and then in cubes. (remember all the ingredients should be cut about the same size.) Place in a bowl with water while you prepare the remaining ingredients. Drain before mixing with the other ingredients.
- Prepare the papaya. Peel off the skin of the papaya either with a sharp knife or vegetable peeler. Remove the seeds and cut into cubes. (almost the same size as the jicama) You will need about 1 - 2 cups depending on the serving size. Store remaining papaya for stew or beverage later.
- Wash the mini cucumbers, remove ends, cut in halves, and then cut the halves into halves as well, then into cubes.
