SAUTéED GREEN BEANS WITH GARLIC
This is a wonderful,classic preparation for a green beans side dish - simmer beans until bright green then toss with garlic until golden and crispy. Serve as a side with everything, any cuisine, from Western to Italian, Middle Eastern to French!If serving with Asian food, I like to add the tiniest drizzle of sesame oil at the end and sometimes a sprinkle of sesame seeds. Steps:
- Blanch beans: Bring a large saucepan of water to the boil with 1 teaspoon of salt. Add beans, cook for 4 minutes (they will turn bright green), drain, then rinse under cold tap water to cool. (There's really no need to shock in ice water). Shake off excess water.
- Sauté: Heat oil in a large skillet over medium high heat. Add green beans and garlic. Toss (or stir!) for 2 minutes until the garlic is golden and crispy. Add salt and pepper, then toss.
- Serve: Transfer beans to serving dish. Serve warm!
- Prepare ahead: Blanch beans per step 1, cool and dry, store in fridge until required. When ready to serve, just toss with garlic. It's an instant on-demand side!

- Place green beans into a large skillet and cover with water; bring to a boil. Reduce heat to medium-low and simmer until beans start to soften, about 5 minutes. Drain water. Add butter to green beans; cook and stir until butter is melted, 2 to 3 minutes.
- Cook and stir garlic with green beans until garlic is tender and fragrant, 3 to 4 minutes. Season with lemon pepper and salt.

- Steam or boil green beans for 4-5 minutes until crisp-tender.
- In medium skillet over medium heat melt butter, add garlic, and saute for 3 minutes or until tender and fragant.
- Add green beans, stir well to coat with the butter/garlic mixture, sprinkle chicken bouillon over beans and stir to mix, then saute another 5 minutes to desired doneness.
- Turn heat up to medium high, then pour in the wine and let it sizzle and evaporate most of the alcohol. Lower heat, add salt and pepper to taste, and stir thoroughly. Serve immediately!
- NOTES : These have become a regular addition to our table! Frozen green beans work OK, garden fresh is much better! Enjoy.

- Heat a large rimmed skillet over medium heat. Once hot, add almonds and salt and toast for 4-5 minutes, stirring frequently, until toasted. Watch closely and be careful not to burn. Then remove from pan and set aside.
- Heat the same large rimmed skillet from earlier over medium-high heat. Once hot, add the oil. Wait 1 minute for the oil to get hot, then add green beans. Season generously with salt and pepper (as the recipe is written, we recommend starting with 1/2 tsp sea salt and 1/4 tsp black pepper and working your way up from there).
- Cover and cook for about 8 minutes, stirring / tossing occasionally. You want the heat to remain high and the cover tight so the green beans get browned but also tender. Turn down heat slightly if they’re close to burning.

- 1. Heat a large skillet with a tight fitting lid over high heat. Add in the olive oil, green beans, salt and pepper. Turn green beans constantly until they turn bright green and begin to get a few little brown spots on them from cooking. About 2-3 minutes.
- 2. Add in 1/4 cup of water, and cover pan immediately. Allow the green beans to steam for 2-3 minutes.
- 3. Remove the lid, and stir the green beans until the remainder of the water has cooked away and evaporated. Turn heat to low. Push the green beans to the edges of the pan to make a little circle opening in the middle. Add in the 1 tablespoon of butter and grate the garlic cloves on top of the butter.
