1 pound butter, softened
2-1/2 cups sugar
3 eggs
5 cups all-purpose flour
1 teaspoon baking soda
1-1/2 cups raisins
1 cup coarsely chopped walnuts
1/2 cup each chopped red and green candied cherries
1/2 cup chopped candied pineapple

Steps:

  • In a bowl, cream butter and sugar. Add eggs, one at a time, beating well after each. Combine flour and baking soda; add to creamed mixture. Stir in raisins, nuts, cherries and pineapple; mix well. Shape into 2-in. rolls; wrap in waxed paper or foil. Freeze at least 2 hours. , Cut into 1/4-in. slices; place on greased baking sheets. Bake at 350° for 8-10 minutes or until lightly browned. Cool on wire racks.

3 cups butter, softened
1-1/2 cups confectioners' sugar, sifted
4-1/2 cups all-purpose flour
1-1/2 cups cornstarch
Nonpareils and/or halved candied cherries

Steps:

  • In a large bowl, cream butter and confectioners' sugar until light and fluffy, about 5 minutes. Gradually add flour and cornstarch, beating until well blended. , With hands lightly dusted with additional cornstarch, roll dough into 1-in. balls. Place 1 in. apart on ungreased baking sheets. Press lightly with a floured fork. Top with nonpareils or cherry halves. , Bake at 300° until bottoms are lightly browned, 20-22 minutes. Cool for 5 minutes before removing from pans to wire racks.

1 cup butter, softened
3/4 cup confectioners' sugar
1 tablespoon grated lime zest
2 teaspoons vanilla extract
1/2 teaspoon almond extract
2 cups all-purpose flour
1/4 teaspoon baking powder
1/8 teaspoon salt
1/2 cup chopped dried cherries

Steps:

  • In a large bowl, cream butter and confectioners' sugar until blended. Beat in lime zest and extracts. In another bowl, mix flour, baking powder and salt; gradually beat into creamed mixture. Stir in cherries., Divide dough in half; shape each into a 7-in.-long roll. Wrap in plastic; refrigerate 3-4 hours or until firm. , Preheat oven to 350°. Unwrap and cut dough crosswise into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake 9-11 minutes or until edges are golden brown. Remove from pans to wire racks to cool. Freeze option: Place wrapped logs in resealable plastic freezer bag; freeze. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand a few minutes at room temperature before cutting. Bake as directed.

From the Pittsburgh Post Gazette. These have earned a permanent spot on my Christmas Cookie Tray. I sometimes skip the glaze and just dust with confectioner's sugar when cookies have cooled. Prep time does not include chill time.

Number Of Ingredients 11

1 cup butter, softened (2 sticks)
1/2 cup sugar
1 egg
1 teaspoon lemon extract
1 tablespoon grated lemon rind
2 cups all-purpose flour
1/2 cup yellow cornmeal
1/4 teaspoon salt
2 tablespoons butter, softened
1 1/2 cups confectioners' sugar
2 -2 1/2 tablespoons lemon juice

Steps:

  • Beat butter until fluffy in a large bowl.
  • Beat in sugar, egg, lemon extract and lemon rind.
  • Combine flour, cornmeal and salt. Gradually add to butter mixture, mixing well.
  • Shape dough into a log about 2 inches in diameter. Wrap in plastic wrap and refrigerate until firm, about 3 hours. (Can also freeze at this point. Frozen dough keeps for 3 months).
  • Preheat oven to 350 degrees. Lightly grease cookie sheets.
  • Cut dough into 1/4 inch thick slices.
  • Bake on greased cookie sheets until cookie just begin to brown at the edges, about ten minutes.
  • Remove from pan and cool on wire racks.
  • For glaze, beat butter, confectioner's sugar and lemon juice to make a thin glaze. Drizzle over cooled cookies.

1-1/4 cups all-purpose flour
2/3 cup packed brown sugar, divided
3/4 cup cold butter, cubed
1 large egg
1/2 teaspoon salt
1-1/2 cups mixed nuts
1-1/2 cups green and red candied cherries, halved
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350°. In a large bowl, mix flour and 1/3 cup brown sugar; cut in butter until mixture resembles coarse crumbs. Press into a lightly greased 13x9-in. baking pan. Bake 15 minutes. , In a large bowl, whisk together egg and salt; stir in remaining brown sugar. Stir in nuts, cherries and chocolate chips. Spoon evenly over crust., Bake until topping is set, 20-25 minutes. Cool completely on a wire rack. Cut into bars.

Shortbread image

This is a compilation of several Shortbread recipes I have from British cookbooks. I have been to England three times and REAL shortbread is a favorite. It should use real butter and not be TOO sweet.

¼ cup white sugar
½ cup unsalted butter
1 cup all-purpose flour
⅓ cup white rice flour

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Line a baking sheet with greaseproof (parchment) paper. Sift the flour and rice flour into a medium mixing bowl. Add the sugar and mix.
  • Cut butter into pieces and rub into the flour with your fingertips until the mixture begins to bind together. Knead into soft dough.
  • Roll the dough into an 8 inch round (or for exact round, mold it in an 8 inch cake pan). Place on baking sheet. Using a fork, prick top and make tine marks along edge. Using a table knife, score top with wedge marks. (This is where it will break when cooled)
  • Bake 45 minutes or until pale golden in color. Sprinkle a little superfine sugar over top and cool on baking sheet. Cut into wedges. Keeps for weeks in airtight tin.

This makes a wonderful addition to the cookie tray. The colours are beautiful set against the white of the shortbread. Reminds me of coloured Christmas lights glowing through the snow. These also freeze well. Sprinkle with icing sugar after you take them from the freezer.

1/2 cup icing sugar
1 cup butter
1 3/4 cups flour
1/2 cup rice flour
1/3 cup mixed candied fruit
2 tablespoons icing sugar

Steps:

  • Cream icing sugar and butter until fluffy.
  • Combine flours and add to the butter mixture, in small portions.
  • Stir in mixed candied fruit.
  • Turn batter out into a 9 x 13 pan. Press to the sides and smooth with the back of a spoon.
  • Score into bars with a sharp knife and prick the surface with a fork.
  • Bake 10 minutes at 350*, then lower the oven to 300*. Bake for 35 - 45 minutes.
  • Remove from oven and immediately cut along the scored lines.
  • Cool, then store in an airtight container.
  • Dust with icing sugar before serving.
