Pretty, fruit tart that is nice as a dessert or to go with brunch. Prep time includes 1 hour chill time for dough.

1/2 cup butter
1/2 cup honey
1 egg
1/2 teaspoon vanilla
2 teaspoons lemon juice
2 cups whole wheat pastry flour
1 (8 ounce) package cream cheese
1/2 teaspoon honey
1/2 teaspoon vanilla
1 cup halved strawberry
1 cup halved green grape
1 cup halved red grapes
1 cup unsweetened mandarin orange segment
1/2 cup apricot preserves

Steps:

  • Beat together butter and 1/2 cup honey in a large bowl.
  • Beat in egg, 1/2 t. vanilla and lemon juice.
  • Sift flour into liquid ingredients, stir to mix.
  • Form dough into a ball and chill for 1 hour.
  • Pre-heat oven to 350 degrees.
  • Butter a 12 inch pizza pan.
  • Press cookie dough into pan, trimming edges; prick with fork.
  • Bake on middle shelf for 15 to 20 minutes or until lightly browned.
  • Cool Thoroughly in the pan.
  • Beat together cream cheese, honey and vanilla; spread on cooled cookie crust.
  • Arrange fruit in an attractive design.
  • Heat apricot preserves in a small pan; brush lightly on top of fruit.
  • Chill before serving.

Cutting up all the fruit takes a bit of time, but the rest is easy as pie. Use any fruit of your liking.

1 (9 inch) pie crust, baked
1 (4.6 ounce) package non-instant vanilla pudding mix
3 cups milk
½ cup fresh strawberries, sliced
½ cup fresh blueberries
1 cup fresh peaches, pitted and sliced
½ cup fresh raspberries
1 cup kiwi, sliced
¼ cup any flavor fruit jam

Steps:

  • Combine pudding mix and milk in a medium saucepan. Cook according to package directions. Pour pudding into pastry shell and refrigerate until cool and firm. Arrange fruit on top of pudding layer.
  • Place jam in a small saucepan over low heat, stirring occasionally until runny. Using a pastry brush, coat fruit with jam. Now hide in the closet and eat the whole thing yourself.

Pour the tempered egg mixture back into the saucepan with the hot milk mixture and reduce the heat to medium, continuing to cook while whisking constantly, until thickened and a few bubbled burst on the surface, about 30 seconds.
  • Remove the pastry cream from the heat and whisk in the butter and vanilla, then transfer to a bowl and cover with a sheet of plastic wrap placed directly onto the surface of the pastry cream so a skin doesn't form. Refrigerate until chilled and firm, about 3 hours.
