MOM'S FRIED RED TOMATOES

My mom's simple recipe. Easy, great and tasty! Please remember the nutritional facts are not correct, because you are not eating all the coating ingredients. Also, these amounts are to my families tastes, adjust to your liking. REMEMBER: TO ADD MORE BUTTER AND OLIVE OIL TO THE PAN AS NEEDED. THERE SHOULD ALWAYS BE A LAYER OF LIQUID TO FRY IN.

Number Of Ingredients 7

3 large tomatoes (not to ripe because you want them to hold up during cooking)
1 1/2 cups flour
2 teaspoons salt
2 teaspoons pepper
2 teaspoons seasoning salt (I use Lowery's)
1 tablespoon butter (per frying batch- maybe 3 Tbsps. needed total)
1 tablespoon olive oil (per frying batch- maybe 3 Tbsps. needed total)

Steps:

  • Cut tomatoes into thick slices. Put aside.
  • Mix flour, salt and pepper in shallow dish for coating.
  • Heat butter and olive oil in pan, until it's hot enough to fry inches.
  • Pre-heat oven to warm setting. (Lowest setting).
  • Coat tomato slices in flour mixture.
  • Place in pan until gloden brown.
  • Place on baking sheet and place in warm oven until ready to serve. (I think they taste better if put in the oven for a little bit because it crisps them up a bit.).

4 medium tomatoes, half ripe
1/2 cup all-purpose flour
2 1/2 teaspoons salt
2 1/2 teaspoons sugar
1/4 teaspoon pepper
3/4 cup evaporated milk
oil, for frying

Steps:

  • Wash tomatoes, but do not peel.
  • Cut into 3/4-inch slices.
  • Place on paper towels to drain.
  • Combine flour, salt, sugar and pepper.
  • Dust tomatoes in flour mixture on both sides.
  • Add evaporated milk to rmaining flour mixture to make a thick batter.
  • Dip floured tomatoes in batter.
  • Fry in hot oil 1/2-inch deep until golden brown on both sides.

1 cup all-purpose flour
1 tablespoon onion powder
2 teaspoons granulated garlic
2 teaspoons salt
1/2 teaspoon black pepper, ground
1 cup parmesan cheese, grated
1 cup panko Japanese-style bread crumbs
12 slices tomatoes, sliced 1/2-inch thick (about 3 tomatoes)
2 eggs
3 tablespoons Dijon mustard
3 tablespoons olive oil

Steps:

  • Combine flour, onion powder, garlic, salt and pepper in a bowl; mix well.
  • In seperate bowl, combine panko and parmesan.
  • In a third bowl, combine eggs and mustard.
  • Take tomato slices and dip in flour mixture, dusting off excess.
  • Then dip in egg mixture, letting excess drip off.
  • Finally, dip in parmesan/panko mixture, pressing parmesan mixture onto slices for good coverage; repeat until all slices are breaded.
  • These should be stored in a single layer and dusted lightly with extra crumbs. DO NOT STACK.
  • Heat olive oil in a non-stick frying pan over medium to high heat.
  • Place 3 slices (one order) in pan and let cook about 1-1/2 to 2 minutes on each side, until golden brown. DON'T FLIP TOO SOON or parmesan mixture will fall off.
  • Continue with remaining slices and serve hot.

2 tablespoons dried basil
2 tablespoons dried thyme
½ teaspoon salt
¾ teaspoon white pepper
5 teaspoons olive oil
2 Roma (plum) tomatoes, halved lengthwise
2 tablespoons olive oil

Steps:

  • In a small bowl, mix together basil, thyme, salt, and white pepper. Mix in 5 teaspoons olive oil to make a spreadable paste. Spread paste on cut side of each tomato half.
  • Heat remaining 2 tablespoons olive oil in small skillet over medium-low heat. Place tomatoes herb-side down in skillet, and cover. Simmer for 5 minutes; tomatoes should be hot but not stewed. Serve immediately.

6 large tomatoes - peeled, cored, and chopped
¾ cup chopped green bell pepper
½ cup chopped sweet onion
½ cup chopped celery
1 teaspoon white sugar
½ teaspoon salt
¼ teaspoon dried oregano
¼ teaspoon dried basil
⅛ teaspoon black pepper
1 tablespoon water
1 ½ teaspoons cornstarch

Steps:

  • Combine tomatoes, green bell pepper, onion, and celery in a large skillet over medium heat; cook and stir until fragrant, about 10 minutes. Reduce heat and cook until green bell pepper and onion are soft, about 5 minutes more. Stir in sugar, salt, oregano, basil, and pepper.
  • Whisk water and cornstarch together in a small bowl. Stir into the skillet. Simmer tomato mixture until thickened, about 5 minutes.

This is a recipe that my mom has made every summer since she was little. My brothers and I anxiously wait for the New Jersey tomato crops because that is the only tomato my mom will use! The key to this recipe is the bacon grease if you don't use it then it won't get the proper flavor.

3 -4 lbs bacon (save the grease eat the bacon!)
1 1/2 tablespoons per 2-3 slices tomatoes
4 jersey tomatoes, sliced (when they aren't in season I use the ugly tomatoes)
1 egg
2 tablespoons milk
salt and pepper
2 cups breadcrumbs

Steps:

  • Mix egg, milk, salt, and pepper together.
  • Dip tomato slices in egg mixture and cover in bread crumbs.
  • In large skillet add enough bacon grease to cover pan.
  • In a large skillet fry tomato slices on each side until golden brown. (Make sure that when you flip them and during cooking that enough bacon grease is in the pan.).
  • Remove and place on paper towel.
  • Repeat until all tomato slices are cooked. Make sure to add more bacon grease to the pan between batches!
  • For a different taste my mom enjoys just dipping the tomato slices in flour and skipping the egg mixture and bread crumbs and frying the same way.
